Where did April go??

This month has been flying by!  I feel like it should still be mid-February, yet May is almost here!! I guess my Great Aunt Doris was right when she told me so many years ago that time just keeps getting faster the older you get!  I am way behind on posting about my races, and other life happenings.  I am working on those posts and will hopefully have them up in the next day or so.  Today I want to share with you a little treat I made this weekend.   If you follow me in instagram or are my facebook friend, then you have probably already seen it.
Anyways, it has already been in the 80s here in Texas.  The high today is in the 90s!  So it is starting to feel like summer.  I love to have little treats in the summer to help cool me off when it is REALLY hot, but I also like to keep them as healthy as possible.
Last summer I ordered 2 set of these ice pop molds from Crate and Barrel! It looks like they don’t have them anymore, but I am sure any type of ice pop mold will work!  These molds are pretty close to the ones I purchased from Crate and Barrel.

I picked 4 different fruits I wanted to use.  Choose however many you want! I picked strawberries (they were on the verge of going bad), mango, pineapple, & raspberries.
I places a few pieces of each fruit into the molds.

Then I poured in some coconut water till it was almost at the top.  You can also use regular purified water too if you are not a fan of coconut water.

I placed the lids on each mold.  Since I used a lot of fruit, I had to wiggle some of the lids around to get them to fit properly.

Once finished place in the freezer for 3-4 hours.

This concept also works well with left-over smoothies for smoothie pops!

Foodie Pen Pals March

I guess my brain is still stuck in March even though it is already April 3rd!  I woke up in the middle of the night and realized I never posted about my amazing Foodie Pen Pal package from March!  (So sorry Melissa!)
Anyways…

For the March edition of Foodie Pen Pals I was paired up with Melissa from My {Simply} Delicious Life. She is a gem and I was so happy to paired up with her!  This was her first Foodie Pen Pal exchange and she did so great!

Everything Melissa sent from the note to the awesome food choices were just perfect!

This preserve has already been used on toast, waffles and pancakes!! It has a lovely flavor combination and it simply wonderful!

This honey came right at the perfect time as I was out and needed some for my morning tea! It is pretty cool to actually have some of the bee comb inside the jar!

I am not sure who had more, the hubs or myself!  It was a yummy little treat to snack on while prepping dinner for a few nights!

I have never had pecan butter before, but this was awesome!  I used it in one of my smoothies in place of almond butter and it added amazing flavor!

If you want to get involved with the Foodie Pen Pals here’s a detailed explanation of the program:

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
– Foodie Penpals is open to US, Canadian residents & European residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!
