Foodie Friday: Gluten Free Berry Banana Pancakes!

Hello friends and happy Friday!  Let’s just say that I am berry happy it is Friday!  Tough week on this end and I am ready for the weekend!

Growing up one of my favorite breakfast food were chocolate chip pancakes from a local place up in PA!  I can still remember what they look, taste and smell like now, 20+ years later!  As the years have gone by I have found some other pancakes that I like to eat!  The new recipe that I am using is a wee bit healthier than the chocolate chippers I used to love!

Blueberry & Banana {gluten free} Pancakes
Ingredients
1  cup gluten free all purpose rice flour
2 tsp baking poweder
1 pinch salt
1 tsp cinnamon
1/2 tsp nutmeg
1-1 1/4 almond milk
1 egg, beaten
1 tsp vanilla
2 tsp coconut oil, melted (plus a few extra TBS for using on the pan or griddle)
1 mashed banana
1 c fresh blueberries

Directions
1. Mix all dry ingredients together
2. Add the milk, oil and vanilla to the dry ingredients.  Mix gently.
3. Add the mashed banana & egg, mix well.

4. Add the blueberries and gently fold into the mix.
5. Lightly grease a hot pan/griddle.  Pour 1/3-1/4 cup mix for each pancake.  Cook for 2-3 min then flip.
