Foodie Friday: No Bake Energy Balls

Hello and happy friend friends!  It has been yet another crazy busy, but fun week here in Texas! After a lot of crazy rain, we are enjoying the sunshine!  The sun makes me think of energy, and I decided to make some energy balls for our No Bake theme this week!

These energy balls are one of my favorite things to make!  They are super simple and so versatile! You can mix and match ingredients so they can be tailored to fit any foodie pallet!

No Bake Energy Balls
Ingredients
1 1/2-2 cups quick oats
1 c unsweetened cocoa nibs
1 c dried cranberries
1/2 c chopped banana chips
2 cups chopped trail mix
1ish cup almond butter (or any nut butter)
1/4  cup maple syrup

Directions
1. Throw everything into a large bowl and mix well. (Feel free to pick and choose what you put in.  Add your own flare to it.  Depending on the thickness of the nut butter you might need more or less.  Just make sure all the ingredients stick together).

2. Chill in the fridge for about 20 min.
3. Scoop mixture out into ball shapes.  Place in a storage container or on a tray of wax paper.
4. Store in the fridge.

Foodie Friday: Grilled Cheese!

Happy Friday y’all! It has definitely been a spring week here in Texas!  Pollen counts up the wazoo, and lots of rain in the forecast.  Massive thunderstorms made it a perfect time to make some grilled cheese!  So grilled cheese we made!

Gluten-Free Grilled Cheese Bagel
Ingredients
Udi’s Gluten Free Bagel
Avocado
Goat cheese
Grilled red pepper
Spinach
Ghee (or butter)

Directions
1. Spread ghee on bagel and grill for 3-5 min on indoor grillIMG_0902
2. Spread avocado thinly on each half of the bagel

3. Place cheese slices, peppers and spinach on avocado

4. Add another slice of cheese and top bagel slice.

5. Grill on a panini maker

This grilled cheese had amazing flavor.  It was a little on the rich side, so the Hubs and I split it!  It was very filling and delicious!!!

Foodie Friday: Recipe Makeover! Mini Turkey Meat Loaf

Hello all! Spring is here in full swing, although I have some IG friends who keep showing pictures of snow!  If that is you, then COME down to visit!  Sunscreen, the pool and picnics are what’s happening here!
It is Friday again, and I realized I have been a little quiet the past 2 weeks other than foodie posts!  I have been having MAJOR issues with sleep once again, and they have been taking a toll.  I am working extra hard on making sure that I am doing what I can to get that under control.  As I am sure most, if not all of you have suffered from sleep deprivation for a variety of reasons, and it stinks!  So, the blog has taken to the back burner for the time being.  I will still be doing my Friday Foodie posts, and hopefully as my sleep increases I will be back to more posts!  Thank you for your understanding and patience!

This week our theme was to do a recipe makeover!
Growing up, one of our common family meals was meatloaf.  Think beef, breadcrumbs and lots of ketchup.  As I grew and learned more about healthier options for cooking (plus I am not really a fan of red meat), I made some changes to make a bit of a healthier meat loaf!

Mini Turkey Meat Loaf
Ingredients
I lb ground turkey
1 egg
2 slices chopped turkey bacon
1/2 cup shredded cheese
1/2 c coconut or almond flour
1/4 cup honey bbq sauce
A mix of spices- I used about 1/4-1/2 tsp of Himalayan salt, pepper, paprika, garlic, thyme, & Italian seasoning.
Spoonful of coconut oil

Directions
1. Pre-heat the oven to 350*
2. Add all ingredients except the coconut oil to a large mixing bowl.  Mix well with hands.

3. Grease a muffin tin with coconut oil.
4. Place about 1/3 c turkey mixture into each muffin tin.
5. Cook for 20-25 min.
6. Enjoy!

Foodie Friday: Spring Sweet and Spicy Chicken Lettuce Wraps

Hello and Happy Friday AND April!  This year is just flying by!  I know I keep saying that, but I can not help it!  Ha.  It is already month 4, and so much more to do this year!
Anywhoo, onto today’s fun recipe!  This week we had the challenge of making something that reminds us of Spring!!  I have to say that I am really glad we had this theme, and it worked out pretty well!  As always, I am linking up with Farrah from Fairyburger, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!

When I think spring, I think of something light.  I have been a fan of chicken lettuce wraps for a while now.  I have attempted a few different recipes over the last few months but have yet to make one that I really liked tons and that the Hubs also gave thumbs up on.

Sweet and Spicy Chicken
Ingredients
1 lb organic chicken, cut into small pieces
1 tsp chopped garlic
2 TBS teriyaki sauce
2 TBS peach harvest hatch pepper sauce (You can also use a sweet chili sauce)
1 TBS honey
1 cup peppers chopped up
1 TBS coconut oil
Large lettuce leaves, washed and dried

Directions
1. Mix everything except chicken and peppers.

2. Place chicken in the mixture and marinate for 20 min.  (Can marinate longer, but that was all the time I had.)

3. Warm coconut oil.  Saute peppers.  Add chicken mixture.  Cook thoroughly.

4. Scoop chicken into lettuce leaves, wrap and enjoy!
