Foodie Friday: Banana & Blueberry Pancakes

Another week has passed us by.  It has been a challenging week here in Houston with all the rain, flooding, and sadly the missing people.  My heart has just been breaking for a few families who have lost multiple members.  😦  It has just been a reminder to keep telling the ones you love that you love them.

Onto a bit of a happier note.  It is Foodie Friday again, and this week our theme was bananas!  Well bananas are on of my most favorite foods!  I could eat them all day and be a happy girl!  As a nanny I strive to provide nutritious meals to the kids I am watching.  The kids LOVE to cook/bake with me.  The other morning they wanted some blueberry pancakes!  Well, we happened to have the ingredients and so we went to town!  I have to say that these are some of the BEST pancakes I have ever made!  They were fluffy on the inside and a little crispy on the outside.  Add in fresh blueberries and they were AMAZING!

Banana & Blueberry Pancakes
Ingredients
1 mashed banana
1 cup almond milk
1 egg, beaten
1/4 tsp vanilla
2 TBS coconut oil
1 cup gluten free all purpose flour
2 TBS coconut sugar
2 tsp baking powder
1 container fresh blueberries, washed and dried
Cinnamon to sprinkle on top if desired

Directions
1. Mix wet ingredients together into the mashed banana

2. Mix dry ingredients together

3. Slowly mix wet ingredients into the dry ingredients then add blueberries
4. Heat frying pan, place a pat of butter on it
5. Pour about 1/8-1/4 c of batter onto the pan (most likely more than one will fit at a time.) Sprinkle on cinnamon if desired

6. When pancakes are bubbly and a little firm on the edges, flip them.  Cook another 1-3 min until firm.

Foodie Friday: Spicy Roasted Veggies

It has been another crazy week here. Filled with lots and lots of rain! I’m about ready to build an ark in case it rains more! Oh wait, it’s raining yet again!!

With all this rain I have been craving roasted foods!! Roasted chicken and veggies have been a staple the last few days for sure! I don’t know why I haven’t been roasting more veggies before this week. I have done it on and off, but not much more than butternut squash. I think my attempts at making kale chips threw me for a loop. They never seemed to workout right so I didn’t even try other veggies.

After this week I may never eat veggies any other way again! For our theme this week of Spicing it Up, I experimented with different spices to add a kick to the veggies.

Spicy Roasted Veggies
Ingredients
Any raw veggies chopped into bite size pieces.
I used butternut squash, broccoli, cauliflower, red peppers, brussels sprouts.
Coconut oil- enough to lightly cover all veggies
Spices- red pepper flakes, pepper, garlic, thyme, rosemary, Himalayan salt, paprika. (Any other spicy spices that you enjoy)

Directions
1. Line a cookie sheet with foil.
2. Place all veggies on sheet and coat with oil.

3. Sprinkle spices on veggies and mix. (I mixed with my hands for an even coat).
4. Bake for 18-20 min on 475*

5. Feel free to turn them halfway through to have them crispy all over 🙂

Foodie Friday: Flourless Chocolate Blossoms

Happy Friday friends!  I have been a little MIA on here…planning a massive update soon 🙂
Last week I ran into all sorts of technical issues and some power outages due to the crazy weather here in Houston.  By the time it was all sorted out it was Monday night.  So sorry for missing last week.
This week the kiddos and I have been experimenting with cookies!  Perfect because that is the theme this week!  And cookies are just so fun to make 🙂  We had a blast!
I was looking for a super simple recipe with gluten free ingredients.  I found this on Pinterest, and it inspired me.  I tweaked it a little and made some pretty awesome cookies.

Flourless Chocolate Blossoms
Ingredients
1 cup favorite nut butter (I uses sunbutter)
1 cup sugar plus a little extra to roll cookies
1 egg
1/2-3/4 cup chocolate chips (I used Enjoy Life chocolate chunks)
1/2 TBS coco poweder
Parchment or baking paper

Directions
1. Pre-heat oven to 350*
2. Mix all ingredients together in a large bowl.

3. Roll dough into 1 inch balls then in the sugar if desired.
4. Place balls 1 inch apart on cookie sheet lined with paper.

5. Press down on each cookie till it is a little more flat.

6. Bake 10-12 min

Foodie Friday: Strawberry, banana, chocolate chunk muffins {gluten free}

Whoa, that title is long!  Packed with information like my little muffins were packed with flavor!  Packed must be my theme for the week since it was a super packed week here in Texas!
Welcome back to another addition of Foodie Friday!  This week we had a fun theme of strawberries!  What a great time of year it is to embrace fruit!  Love it all year round, but fruit in the spring always seems to taste so fresh to me!  YUM!

foodiefridayAs I thought about what I was going to make with strawberries, I did some research on Pinterest.  Most of the recipes were strawberry shortcake of some kind.  I knew I wanted to branch out a little and do something different.  These muffins were my inspiration for what I came up with.  I wanted to make some yummy muffins that were gluten free and this is what I came up with.

{Gluten free} Strawberry, banana, chocolate chunk muffins
Ingredients 
4-5 ripe bananas, peeled and mashed
1/2 cup melted butter
1 tsp baking soda
3/4 cup light brown sugar
1 egg, beaten
1 1/2 tsp vanilla extract
1 1/2 cups gluten free flour
1 lb strawberries washed and sliced (my food processor sliced them beautifully once I removed the stem)
1 cup chocolate chunks

Directions
1. Pre-heat oven to 350*
2. Mix bananas and butter together

3. Sprinkle on the baking soda, mix

4. Add the sugar, egg and vanilla, mix well

5. Add in the flour and gently mix just till everything is moist.
6. Add the strawberries and chocolate, mix gently.

7. Scoop 1/4 cup of muffin mix into a greased muffin tin

8. Cook for 25-30 min.

[The recipe seemed to make a little more than 12, so I made a small loaf of bread with the remaining mixture!]
