Foodie Friday: Strawberry, banana, chocolate chunk muffins {gluten free}

Whoa, that title is long!  Packed with information like my little muffins were packed with flavor!  Packed must be my theme for the week since it was a super packed week here in Texas!
Welcome back to another addition of Foodie Friday!  This week we had a fun theme of strawberries!  What a great time of year it is to embrace fruit!  Love it all year round, but fruit in the spring always seems to taste so fresh to me!  YUM!

foodiefridayAs I thought about what I was going to make with strawberries, I did some research on Pinterest.  Most of the recipes were strawberry shortcake of some kind.  I knew I wanted to branch out a little and do something different.  These muffins were my inspiration for what I came up with.  I wanted to make some yummy muffins that were gluten free and this is what I came up with.

{Gluten free} Strawberry, banana, chocolate chunk muffins
4-5 ripe bananas, peeled and mashed
1/2 cup melted butter
1 tsp baking soda
3/4 cup light brown sugar
1 egg, beaten
1 1/2 tsp vanilla extract
1 1/2 cups gluten free flour
1 lb strawberries washed and sliced (my food processor sliced them beautifully once I removed the stem)
1 cup chocolate chunks

{A few of my favorite brands}
1. Pre-heat oven to 350*
2. Mix bananas and butter together
3. Sprinkle on the baking soda, mix
4. Add the sugar, egg and vanilla, mix well
5. Add in the flour and gently mix just till everything is moist.
6. Add the strawberries and chocolate, mix gently.

7. Scoop 1/4 cup of muffin mix into a greased muffin tin
8. Cook for 25-30 min.

[The recipe seemed to make a little more than 12, so I made a small loaf of bread with the remaining mixture!]

    Great combo, can’t go wrong with strawberries and chocolate! We recently made chocolate strawberry cookies but haven’t made any chocolate strawberry muffins. I love the kids helping in the kitchen!!

    I love all the ingredients in here! I just ran out of strawberries (darnit), but I have everything else!! I wonder if frozen would work… 😡

      Sorry for the late reply…I think that frozen would work! Might make them even more moist. I found that frozen blueberries make the muffins I make even better! Worth a shot 🙂
