Foodie Friday: Chocolate Peanut Butter Smoothie

It was a super crazy week involving tornados, no power, the hubs car getting broken into, our anniversary and kiddos with hand, foot, mouth. Needless to say I needed some extra energy. When those kind of days and weeks happen I love to make smoothies to keep me going!
I love using our key ingredient of the week: peanut butter!!

1,461 days

1,461 days ago I woke for the last time as a Miss. It was wedding day! We didn’t have the most traditional wedding, and many of our friends and family weren’t able to make it on such short notice. Planning a wedding in a little over 2 weeks (in the midst of me finishing up grad school classes in Chicago, ending the school year teaching and finding a new home) seemed crazy, but we made it work!

It has been a journey for sure! So thankful for this man of mine and how he loves me despite all my flaws!

Love you always and forever WSM!!

Foodie Friday: Frozen Mint Hot Chocolate Pops

Hello and happy Friday!  For those who were asking, we DID survive tropical storm Bill!  We got a bit of rain, but it did not seem as bad as it was predicted.  I am thankful for that!  🙂

As the weather has gotten warmer, frozen treats have been on the brain (and the tummy).  I was reminded of a funny story from a few years ago.  One of my sweet friends had a layover here and it was long enough for us to hang out a little!  Pretty much the only place to hang out in the airport without going though security is Starbucks!  Ha  So we met there!  It was winter and we both ordered hot drinks!  For some reason the barista made my friend a FROZEN hot chocolate!  We were both so confused!  Neither of us had heard of that before, and she had clearly ordered a HOT chocolate!
Well, that funny story inspired me this week to make a frozen hot chocolate popsicle!  So thank you Katie and random barista!!

Ingredients
2 1/2 cups plain yogurt
2 packets of hot chocolate mix
1 tsp vanilla extract
2-3 drops peppermint essential oil or 1/4 tsp peppermint extract
Popsicle molds
Handful of small marshmallows if desired

Directions
1. Mix all ingredients in a food processor

2. Pour into popsicle molds

3. Freeze for at least 3 hours

Foodie Friday: Fizzy Nectarine

Happy Friday!!  I just realized that I have not posted in a week!  Talk about things being a little crazy!  Between my very full schedule, sick nanny babies and getting a little sick myself, I have been very off all week.
Despite everything, I made an awesome drink that I want to share with y’all!  It is SO simple!! I am so into easy peasy recipes these days!
It is summertime.  Well, for the most part.  I know it is technically still the spring in terms of seasons, but it has been getting HOT here already!  Thankfully we have dried out a bit after all the rain we had.  The pools are open and we have been taking advantage of that (when everyone is feeling well).
The other day I picked up a large pallet of nectarines at Trader Joes!  They have been devoured with almost each meal this week!  So fresh and plump and full of juice!  It got me thinking about how to make them into a drink to match our theme this week of chilled drinks!
I have been craving sparkling water lately, but the plain ones are too plain, and some of the flavored ones have things in them that give me headaches.  Soooo, I decided to make my own flavor!

Foodie Friday: 2 ingredient raspberry ‘sorbet’

Hello all!  Welcome to another Friday!  Thank you for all the kind words, thoughts and prayers for Houston this past week as we dealt with all the flooding.  Keep them coming!  It was thankfully a really beautiful week and a lot of the water has gone down, but many people are mourning the loss of loved ones, there are still several people missing, homes have been damaged and repairs need to be made.

On a happy note, school is out!  Many kids had their last day yesterday, and some today!  The sun has been out strong and it has been a tad bit hotter this week!  Cue kids saying they want ice cream or another cool treat!  Don’t get me wrong, I love me some ice cream, but I also can’t have too much of it or it makes me a little sick.  So this week I wanted to create a cool summer treat that fit our non-dairy theme!

Fitness Update

As National Running Day is coming to a close, I freely admit that I did not go running!  Not because I don’t like to run, or that I didn’t want to run, but because I am in a weird place with running right now.
Even though it has been well over 5 months since my hip injury/DNF half marathon, I am still somewhat questioning my ability to run.  Despite the fact I ran the marathon relay in March and crushed (waddled) 7.5 miles.
So I am turned my workouts to other things.  And it has been good!  My weeks have been full of piyo, zumba, body pump and other random cardio!  Lots of walking, and now swimming with the kiddos as well!
My typical week now looks a little like this
Monday- Piyo or fun workout with my workout buddies (WOB) {Really want to start adding some weights here}
Tuesday- 30 min cardio (usually walking) then Zumba
Wednesday- Body pump at one gym then Zumba at another location 😉
Thursday- Body pump if I miss Wed and a little cardio
Friday- Walk
Saturday- Grit/body pump. Walk at Farmer’s Market
Sunday- Volleyball

Every week I usually end up with a rest day, but I am enjoying the new activities I am doing.  I am especially enjoying the zumba classes!  One day if I am brave I might even share a video of me dancing….HAHAH 🙂

QOTD: What do you do when you need to change your fitness goals or activities?
