Foodie Friday: Sweet Potato Stuffed Red Peppers!

Happy Friday y’all!  It has been another busy week here.  Add in some sick kiddos, a bit of rough news from sweet friends, and lack of sleep, and I am ready for the weekend!  But first I must share with you the dinner I made the other night.  I am still drooling about when I think about how yummy it was!

Sweet Potato Stuffed Red Peppers

Ingredients
1 lb ground turkey
1 sweet potato chopped/cubed
4 large red peppers
1/4 c chopped chilies
1/4 c chopped jalapeños
1/3 cup shredded cheese (optional)
Pinch of Himalayan salt, pepper, paprika, garlic, cinnamon
1-2 TBS organic Coconut oil

Directions
1. Pre-heat oven to 350*F
2. Wash red peppers, de-core them.
3. Sauté chopped sweet potato in coconut oil with spices for 10 min it until tender.
4. Brown the ground turkey. Add in the spices, chilies and jalapeños.
5. Mix the cooked meat & potatoes (and cheese) together and fill each red pepper with the mixture.
6. Place stuffed red pepper into an oven safe cooking dish. Place in oven and cook for 35-40 min till bubbly.
7. Enjoy!!

#TBT, Ethiopia

I know I have mentioned it before, but this past July the Hubs and I were honored to go on a trip to Ethiopia!  It was a huge blessing for us to be able to go! We were fortunate enough to have so much love and support that made it all possible!  We were graciously given financial donations, lots of love, items for the children, luggage to use, and most importantly prayers!

I want to share with y’all today about the organization we spent the most time with, and the amazing things they are doing in the Kore’ slum of Addis Ababa.
The main focus of our trip was to spend time at Embracing Hope Ethiopia, encourage the teachers, missionaries and teach & play with the children.
Jerry and Christy Shannon first went to Ethiopia to adopt one of their daughters in 2008.  That was just the beginning!  Since then they moved to Ethiopia and began Embracing hope, reaching and loving the poorest of the poor.  It was a blessing and honor to see them interact with the mothers and children whom they serve.  The ministry has grown since they opened their doors in 2011!  They now have a daycare center, a nursery school and just opened a 1st grade school!  So amazing to see how the children are cared for so the mothers can work and provide for their families!

While our team was there we did a VBS.  We broke our team down and had story time, music, crafts and game time. The Hubs and I were in charge of the games and it was a hoot!  The kids had a blast.

The daycare center was full of lively kiddos! We had a blast playing games, eating lunch and loving on them!

Game time was awesome!  We were so thankful that the weather was beautiful each day and we were able to play outside!  The parachute was the best! The kids loved it SO much!  IMG_6762IMG_6757

I am so thankful we got to to Ethiopia and spend time at Embracing Hope!
The Shannons were so hospitable and we loved getting to meet them and hang out with them!  It was hard to leave for sure!  I can’t wait till I can go back!!

Workout Wednesday!

For weeks…errr…months now, I have meant to have 1 day a week where I discuss my workouts and training plans.  Since December 2014 I have been recovering from a hip injury.  I toyed around with running again on and off during the spring, but each time my hip felt like it was going to fall out of the socket.  I decided to just take it easy with running and participate in other workouts that didn’t bother my hip.  That meant a lot of swimming, some weight lifting, walking, volleyball, biking and light Zumba dancing!  Plus stretching and foam rolling to keep my hip feeling ok.
A few weeks ago I decided to try to start running again and I was surprised that it felt ok!  It was SLOW, but no pain! After all my years of running (wow, just over 10 now since I decided I wanted to run vs it being forced on me), I feel like I am starting over from scratch.  And of course there is the random heel pain that I have been having that has hindered things a little bit.
Thankfully a great friend recommended me these little toe stretchers and they have been really helping tons! Just a few min a day and I have had less heel pain! Yay! (Thanks Sharon!)

It feels good to be able to get out a few times a week, even if it just a few miles.  It has felt even better to get back out on the bike!

Lifting weights has always been a passion of mine! I have been on the weight floor on and off since I was in high school! I love doing things on my own, but once I discovered Body Pump classes, I have only lifted weights on my own a handful of times!  I mean, for me, it is great! In 60 min I can get a full body workout and I have loads of fun with my friends!  Plus it is motivating to me to show up for my classes! 🙂

Over the summer I was only able to attend 1-2 times a week due to my schedule and the class schedules!  But now I am able to make it 3-4 times a week!  I have already seen changes in my muscles and in the amount of weight I can lift! It makes me happy to have at least one area of fitness/body changing!

And then there is the Bosu Challenge!  I have been working on getting in the daily challenges and bonuses when I can also!  Not something I normally do, so it has been kicking my booty for real!

I have a duathlon in 11 days, so I have been trying to motivate myself to get myself out there and run/bike/run! So far it has not happened.  This weekend I am getting some aero bars for my bike (thanks to a gift cert I won from my MRTT group!!), and I know that will motivate me even more to get out there!  I was really hoping to be in better shape for this race, but alas, life has gotten in the way and thrown be for a loop a lot the last few weeks.  So my new goal is to finish and have fun 🙂

For my birthday I received an ithlete finger sensor.  It has been helping me to evaluate how my body is doing and how hard I should train each day!
Some days are better than others!  My main issue is needing more quality sleep!  So I am also working on that along with my regular training!

Goals for the next week:
Thursday- Body Pump + 2-3 mile walk/run
Friday- Probably a run depending on how long my tire replacement goes…If not a run, then elliptical for 45-60 min.
Saturday- Practice duathlon
Sunday- Speed drills on bike and running
Monday- Body Pump & 3 miles + 90 min beach volleyball
Tuesday- 10 miles on bike & Zumba
Wednesday- Body Pump + 3 miles running
Plus the Bosu Challenge each day!

BosuStrong Challenge, week 2!

Hey y’all!  Well, I dropped the ball a bit on the Bosu Strong challenge last week!  So I am going to shoot again for this week!  I was so inspired by so many of the posts that I saw on instagram and twitter!  I can’t wait to jump in this week and get back to the challenge!  I decided to shift some of my training to different days to incorporate the challenges into my workouts!  Last week I did the challenge moves, but on different days then they were posted for and felt silly always playing catch up, so here is to a fresh start for the week!

Stay balanced with week 2 of the #BOSUStrong challenge with BOSU

6 ways I stay balanced
If you forgot to join me last week for the #BOSUStrong challenge or just weren’t up for the cardio, make sure you join me this week as it’s all about the balance! We’re standing on one leg, lunging, and BOSU squatting our way through the week.

But balance means more than just being able to stand on one leg, it also means being able to do what you love while making healthy choices at the same time. It means putting in the work and still finding time for a little Netflix. Or eating the chocolate (of course) but balancing it out with loads of roasted veggies. Or 30 Day Shred (workout) and foam rolling/stretching (workout) at home when I can’t make it to the gym.

Here are the 6 ways I stay balanced – what are yours?

I make time for myself by carving out time before bed to reflect on the day.
My favorite me time is getting a massage.
My rule when it comes to a balanced diet is not forcing myself to eat foods I don’t like.
I make fitness a priority by planning it in my daily routine!
When I get stressed or overwhelmed, my go to is Zumba.
I do meal planning, prep and gym dates to help my family stay balanced.

Bonus:
Here are my fave 6 moves to help improve your balance (these are great on the Bosu but you can do them on the floor also!)

1. Stand with one leg on the Bosu, lift the other several inches off the ground- close eyes for 10-20 seconds.  Use your arms to help keep you balanced.
2. Side plank- Rest 1 forearm on the bosu.  Stack your feet and legs together, and lift your hips off the ground.  Your body should make a straight line.
3. Warrior III pose- stand on one leg.  Your other leg goes behind you in a straight line and your arms go in front of you.  Your body should be making the letter ‘T’ in this pose!
4. Push-up- Flip the bosu onto the dome.  Place hands on the outside of the flat area and do push-ups!  Start on your knees if you need and build up from there. Keep your back straight at all times.
5. One legged bridge- Lay on the floor with one foot on the dome of the Bosu.  Point your other leg towards the ceiling.  Push your foot into the dome and lift your hips towards the ceiling till your body makes a straight line. Hold for several seconds.  Repeat 10-15 times for each leg.
6. Pistol squat- (Advanced move that I am still working on)- Stand on the bosu on 1 leg.  Stick the other leg out in front of you.  Squat down and up.

Foodie Friday: Burgers!!

Hello friends!  What a week it has been!  Seems like the world was against me this week in a lot of little ways.  Then last night I had a slight melt down while waiting for 4(!!!) hours for AAA to come and tow my car after my tire blew out during my drive home from work! It was a very frustrating situation, but I am so thankful the Hubs was able to get me a new tire and come wait with me and that I was not on a super busy road!  Also that I had leftovers from earlier this week from the recipe inspired by this weeks Foodie Friday theme!

Spicy Turkey Burgers
Ingredients

  • 1 lb ground turkey
  • 1/4 c. chopped chilies
  • 1/4 c. chopped jalapenos
  • 1/3 c. chopped roasted red pepper
  • 1/3 c. shredded goat cheese (optional)
  • Pinch of Himalayan salt, ground pepper, paprika and garlic

Directions

  1. Pre-heat grill
  2. Mix all ingredients together in a large bowl.
  3. Form into patties (makes about 6)
  4. Place on grill and cook 4-5 min each side, till they are fully cooked.
  5. Enjoy

#BOSU Strong Challenge!

It is a beautiful day for the start of a super fun challenge that Fit Approach is hosting!! I missed the summer challenges they did due to my schedule and preparing and going to Ethiopia!  So I am so excited to get back into a challenge!!

5 THINGS THAT MAKE ME #BOSUStrong


Today I am embarking on a 4 week challenge with BOSU and Sweat Pink to prove to the world that I am #BOSUSTRONG. Being #BOSUSTRONG means I make fitness part of my everyday life, at home, out and about, and with my friends and family.I will squat, mountain climb, plank, push-up, lunge, run  and bike my way to a stronger and healthier body.  And I will encourage the Hubs and my friend Stacie to join me on this fun journey because we are one big, happy #FitFamily.

Being #BOSUStrong is not just about movement, sweat, or even owning a BOSU, its about being a leader, an inspiration to others, and sharing my own fitness journey with others. It’s about not letting fear and thyroid issues stand in my way of sweating and getting strong! The 5 things that make me #BOSUStrong are:

My strong determination.
My ability to lift heavy weights.
My love for my nanny kids.
My healthy marriage!
And my desire to be the best me!!

Foodie Friday: Savory Breakfast!

Happy Friday y’all!  I am thankful it was a bit of a short week although it really threw me off a little on Tuesday and Wednesday!
But I am excited it is Friday!  And a Foodie Friday with a new co-host!  I am thrilled that Jess from Hello to Fit is joining the link-up!  Welcome Jess! We are so glad you are here!

As I thought about this theme an idea I saw a few weeks ago on Pinterest came to mind.  Tater-tot waffles.  I was a little nervous to try it, but you will see, then ended up turning out pretty well – WIN!

Tater-tot Veggie Hash!

Ingredients

  • 1 cup chopped butternut squash
  • 1 cup chopped spinach (I used frozen, but fresh would work also)
  • 1 cup semi thawed tator-tots
  • 2 links chicken sausage
  • 1 TBS coconut oil
  • pinch of shredded cheese if desired (I used Horizon organic mozzarella

Directions

  • Place 1/2 TBS coconut oil in a pan and saute the veggies and chicken sausage together.
  • Heat waffle iron
  • Mix remaining coconut oil with the tater-tots, place in the waffle iron.
  • Cook tater-tots 3-5 min till they are golden brown
  • Place waffle on a plate.  Sprinkle cheese on if desired
  • Add veggies and chicken on top of the waffle (this can def feed 2 people!!)
