Pesto Zucchini & Chicken

Hello all! I hope you are enjoying some leftovers from Thanksgiving.  I def enjoyed some extra dessert last night 🙂

I am a lover of kitchen appliances and contraptions!  I love to cook but most days I don’t have time to spend hours cooking one meal, so enter my favorite kitchen contraption!  My Cuisinart Food Processor! (Not an affiliate link, just the one I have)

I have to admit that for the longest time I was scared to make my own pesto!  I don’t know why I had it in my head that it was super complicated or hard to make!  A few weeks ago my nanny twins were asking me to make pesto, so I bit the bullet and made some.  And of course it took less than 10 min to make, and it was amazing!

Pesto Zucchini & Chicken
Ingredients

  • 1.5 lb chicken breasts, flattened
  • 2 zucchinis, sliced length wise
  • 1-2 roma tomatoes (optional)
  • 2 bunches of fresh basil leaves
  • 2 peeled garlic cloves
  • 1/4 to 1/2 cup extra virgin olive oil
  • 1/2 cup pine nuts
  • 1/2 to 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Pre-heat oven to 375*
  2. Place basil, garlic, pine nuts and cheese in the food processor.  Pulse till mixed well.
  3. Add the olive oil till it reaches a nice thick consistency.
  4. Add salt and pepper to taste.
  5. Place chicken on a baking sheet.
  6. Cover each piece of chicken with a generous spoonful of pesto.
  7. Bake for 20-25 min or until the chicken is fully cooked with no pink on the inside.
  8. Place the zucchini in a baking dish.  Cover with pesto and tomatoes.
  9. Bake for 20 min or until zucchini is soft.  (longer for thicker pieces)
  10. Serve and enjoy!

THANKSgiving 2015

Happy Thanksgiving friends!  It is my hope and prayer that you were able to celebrate today with the ones you love!  I know this time of year is not always one that brings good memories for everyone.  I have had my share of Thanksgiving days over the years that I do not care to remember.
This year I am choosing to focus on the good times.  As the Hubs and I drove to meet up with some of his family today, I drove passed the hospital where he spent over 2 weeks in 2013 with major heart surgery.  I busted him out on Thanksgiving eve that year.  It was a tough time, but I am OH so thankful we were driving BY the hospital and not TO the hospital today.  I said a prayer for all those who are in the hospital or not with their loved ones today.

You may have noticed I have been a little more absent on the blog the past few weeks.  Part of me wants to apologize, but I know that I taking some time to refocus and make some shifts in my life.  The Hubs and I are embarking on some new journeys (more coming when the time is right), and as that happens I feel I need to scale back in some areas of life and refocus my time and energy to others.  I am still going to be here as I work out the ever changing balance in this life that I am living!

So I will leave you with some of the memories that I/we have been making!

Energy Balls Revisited

Hey friends!
Welcome to the most wonderful (and busiest) time of year!  If you are reading this Friday morning I am currently on a plane to GA and AL!  I get the privilege of seeing one of my dearest friends get married this weekend!  I also get to see one of my besties and some other friends too! I am so thankful for such wonderful friends and the ability to travel and spend quality time with each of them!
I met my sweet friend Kim a little over 15 years ago on a mission trip to Costa Rica and an instant friendship was born! Kim has been such a encouragement and support in my life over the years, and she is probably one of the kindest individuals I have ever met!  Her life shines for Jesus and she shares love with everyone she comes in contact with!  I can not wait to see her marry her love!  It is an honor to be there for her this weekend!  Love you Kim!!!!

This past week was a super packed week again.  I took a week off from blogging to refocus on some other areas of my life.  This past week the Hubs and I celebrated 2 years since his major heart surgery!  It so happened that one of my FAVORITE artists, Natalie Grant, was in town this week.  Her music really encouraged me through his surgery and recovery and it was the perfect time to do a lot of celebrating!

As this season of year is packed full of so many activities (and traveling for me), I revisited an old recipe for a fab snack that is packed with energy and fiber!
I am linking up once again with Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit!! Our theme this week is dried fruit! One of my favorite ways to eat dried fruit is in a homemade trail mix.  My other fav way is in my homemade energy balls!

Ingredients

  • 1 1/2 cup rolled oats
  • 1/2 -3/4 cup peanut butter or almond butter
  • 1/2 cup honey
  • 1/2 cup dried cranberries
  • 1/4 cup shredded coconut
  • 1/2 cup flax seeds
  • 3/4 cup mini-chocolate chips
  • 1/2 cup chia seeds

Directions

  1. Mix all the ingredients together in a large bowl.  Place in the refrigerator for 30-60 min.
  2. Remove from refrigerator & form mixture into balls. Place in a storage container with a lid.
  3. Store them in the refrigerator. If you are anything like me, they will not last long!

Foodie Friday: Veggie & chicken pad thai

Hello lovely friends, it is Friday again!  And it is officially my last weekend at home till January!  Talk about a fun but crazy end to the year!  I am super excited to have some fabulous company this weekend!  And I just might be making some of this sweet recipe for us to eat!
It is that time of the week where I link up with a few of my favorite foodies! Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit!! Our theme this week is veggie surplus!
I don’t think I even have an issue running out of veggies!  But having too many that start to go bad is something I have had happen way to many times.  I need to find a better balance with my produce purchases! I don’t think the strange weather has been helping my purchasing issues.  Ha

Since I had SO many extra veggies this week, I wanted to make something that used up as many as possible at one time! Enter the good old standby of pad thai!

Pad Thai with chicken and veggies
Ingredients

  • 1 lb chicken, cubed
  • 1 large red pepper
  • 1 large orange pepper
  • 2 cups broccoli, chopped into small peices
  • 1 cup raw broccoli slaw
  • 2-4 TBS coconut oil
  • Tamari to taste
  • Brown rice noodes

Directions

  1. Put 1-2 TBS oil in a large pan, add the chicken and cook till it is no longer pink in the middle.  Add Tamari to taste.
  2. In a seperate pan, cook all the veggies the same as the chicken.
  3. Cook the noodles as directed on the box.  Add some coconut oil and tamari when they are finished.
  4. Once everything is cooked, mix it all together and enjoy!

Another Wild Workout Wednesday!

Is it just me or do the weeks seem to fly by even faster at the end of the year?  I can not believe it is already creeping into the middle of November!  I was just telling a friend today that this weekend is my last full weekend at my house till January!  (Hmmm…I might need to break out the Christmas tree!!)
Between work, pet sitting, travel for weddings, seeing friends and Costa Rica, and the holidays, it is going to be a packed end of the year!  Even still, I am determined to keep up on my workouts! I am feeling pretty strong overall and have seen improvements in my flexibility!  I am working on pinpointing the next half marathon training plan I am going to go with since that will begin on Dec 1! Eek!  I normally go into races just aiming to finish and have fun, but I feel that 2016 will be a year of PRs! Even if I can cut a few seconds off my times I will know the effort was worth it.  Between now and Jan 1 I need to find all my previous PRs and get some goals in place!

So last week this is what I planned to work on:
Thursday- Zumba & boot camp
Friday- Either piyo or elliptical
Saturday- Body pump & piyo
Sunday- Bike
Monday- Body pump & Grit then volleyball if the sand is dry enough
Tuesday- Walk or elliptical then zumba
Wednesday- Body pump and yoga

Here is what happened:
Thursday- Walking, elliptical and body pump.
Friday- Walking due to last min work changes
Saturday- Ended up with pretty much a rest day
Sunday- Walking plus moving LOTS of furniture!
Monday- Body Pump and 2 hours of volleyball
Tuesday- Bike 4 miles and zumba
Wednesday- Body pump and walking

As you can probably tell by now, my weekly schedule does shift around some.  I have learned to be much more flexible with my workouts the past few years.  Before I was in recovery, I would FREAK if I could not work out exactly as I planned and it was usually for 4-6 hours of a 24-hour period!
I still love to workout, but finding a way for it to enhance my life and not see it as a punishment has been so freeing!

What is on the docket for this next week:
Thursday- Zumba (and a massage!!)
Friday- Piyo and walk/run to test out the hip and my knee
Saturday- Up in the air
Sunday- Kickball and hopefully a walk/run
Monday- Body pump & Grit (if time allows) then volleyball
Tuesday- Walk/run or elliptical then Zumba
Wednesday- Body pump and yoga

Weekend Recap!

Happy Monday y’all!   I am linking up today with HoHo Runs and MissSippiPiddin for Weekly Wrap!

Well, fall weather has finally settled in.  This morning it was in the 50s! The humidity was gone and it was gorgeous out!  I love this kind of weather.  Cool mornings warming up to a pleasant mid-70 degree day!  I really can’t say I miss the northern weather.

Friday night I had a *tough* babysitting job.  It is rough when the kids are already in bed and I have to do it chill 😉  It was a nice end to a bit of a nutty week!

I woke up early Sat morning to news that my nephew had arrived!! Yahoo!  I got to meet him over FaceTime. He is so sweet!

Saturday I had big plans to going to the gym for a class or so, but I slept really cruddy Friday night so I ended up resting some before doing housework and my own home workout.
The hubs went out of town for a memorial service for one of his nephews.  Not the best reason to see family, but he had a nice time with his sister and some other relatives.
I was able to get some work done at our house and rearranged some furniture in anticipation of some new items!!

Later in the day I had the privilege of taking care of 2 of my favorites overnight!  We of course had a blast!  Made tacos, had movie night and a huge cuddle fest!
IMG_2217Sunday we all woke up and the kids wanted biscuits, so biscuits I made, along with some eggs, fruit and some gravy with ground bison!

Mid afternoon the Hubs came back into town and we got our new to us couch loaded into his truck.  Plodded back to our house and got the couch in the house.  Then headed off to pick up our new-to-us TVs.  It was a bit of a production getting them home.  For some reason, the 3 main roads that head south were all backed up!  Instead of it taking 10-15 min to get home it took almost an hour.  It was an annoyance but I kept reminding myself that we were safe, not in an accident and a-ok.  We sat in traffic and belted out Natalie Grant’s new single!
When we got home the Hubs warmed up some dinner while I got things ready to move furniture!  It was a bit messy but ended up turning out pretty well!

The new set up is homey and we have tons of space for anyone who wants to come over 🙂

That is about it for the weekend!  I still have lots of work to do on the rest of the house, and especially my office….for being an organizing queen, the disarray is driving me batty!  My goal is to have it mostly finished by tomorrow night! I would like the housekeepers to actually be able to clean when they come!  😉

To end the weekend on a fabulous note, I finally booked our last trip of the year!  I am taking the Hubs to Costa Rica!  He has never been and I have not been down for 7 years!!!  This will be my 10th time and I can not wait!  I was able to find an awesome deal.  It is like Christmas came early!

Foodie Friday: Pumpkin Nachos

Hello y’all and happy Friday!  Is it really November? Because I think Houston missed the memo!  It has been warm and muggy here all week!  Yesterday it was 88* F! It is supposed to be a smidge cooler over the next 10 days…and by that I mean in the 70s, and possibly the upper 60s!  Not that I am complaining, I am a warm weather girl…but I would like to wear some of my new long sleeved workout gear and not be a sweaty hot mess!
Since the weather wants to pretend it isn’t fall, I have been making up for that in the kitchen! I know many people go CRAZY over the pumpkin spice lattes and other fall-like drinks, but I would rather eat my pumpkin products!  (Although, if you offer me a pumpkin chai latte I won’t say no 😉 )
So I have been doing some experimenting and trying to be better about using up leftovers and all the produce I seem to bring home from the grocery store lately.  I happened upon some cool pumpkin chips and I was totally inspired by our theme this week to make them into a yummy meal!

I have to admit when I think of nachos (I am imagining the round chips and cheese sauce that you find at the movies or a sporting event) I am not thinking healthy at all!  But this recipe changed my mind!

Pumpkin Veggie Nachos
Ingredients

  • Handful of Pumpkin chips
  • Roasted veggies (red peppers, eggplant, zucchini, squash are a few I used, but get creative)
  • Goat cheese, shredded
  • Guacamole or plain avocado
  • Plain yogurt

Directions

  1. Place handful of chips on a plate.
  2. Scoop roasted veggies onto the chips.
  3. Sprinkle shredded cheese on top.
  4. Add guacamole and/or plain yogurt.
  5. Enjoy!

I loved them so much I had them for a few different meals!
