Flash Back to Costa Rica Pt. 1

Hello friends!
Happy New Year!!
I am back, sort of.
December was a roller coaster of a month.  It was a mix of work, traveling and grieving the loss of a dear friend.  I have to admit that I have been running away from my feelings a bit.  I have never really been that good at dealing with loss.  Externally I seem to do ok, hold things together and support others who are also dealing with the same loss, but on the inside I am a bit of a mess.
So our trip to Costa Rica came at the perfect time for me to escape a little and process what has happened this month a little better.
I don’t want to make this post all down and depressing even though those feelings have haunted me the past month.  Our trip was also really fun and relaxing.
Costa Rica has always been a place where I have always felt utter peace.  No matter what my life was throwing at me, my trips down there were always wonderful.  I am so happy that I was finally able to share Costa Rica with the Hubs.  This was my 10th trip and his first!  It did not disappoint one bit. Well only that we wish it was a longer trip!  I took over 1000 pics on the trip, and while I want to share many of them with you, my computer has decided it wants to be cranky so I only have some of them.  I will share our first 2 days with you and the rest ASAP!

We left Houston in a nasty thunderstorm.  Thankfully we had zero issues with our flight out!  We even landed early in San Jose.  My BFF picked us up at the airport and took us to our hotel in the city.  Boy it felt good to be back!

We both were super hungry when we finally were settled in our room and room service was available 24/7 and it was yummy!
We got a little sleep and woke up to the birds chirping and a delicious breakfast!

My BFF Jeffrey came and picked us up and we headed out to the La Paz Waterfall Gardens. I have been to the main waterfall several times before, but I had NO idea there was a huge wildlife park there also!  It was so peaceful and beautiful.  The animals were simply amazing! The weather was a little cloudy and misty, but it felt great!
We did a lot of walking and hiking up and down the trails, but the views were so worth it!

Seeing amazing animals in their natural habitat was so beautiful!  Many different types of snakes (in glass enclosures!!!), butteries, insects, humming birds, frogs, monkeys, and jaguars.  All the plants and flowers were also so stunning! The pictures really don’t do justice of the beauty!

 

There was a gorgeous aviary filled with toucans, wild turkeys, scarlet macaws, grosbeaks, tanagers.  Both the Hubs and I were able to have a toucan land on us.  They were really gentle…and then one pooped on my head.  That gave everyone a good laugh!

It was an amazing way to start off the trip!

Sweet and Salty

Hello y’all.  It has been a rough week, well actually a rough few weeks.  But I have to keep pushing along.  I have not done the best job of really taking care of myself the past few weeks.  Our vacation has come at the perfect time.  After today I am unplugging for the next week or so to take care of my heart.  I also want to say thank you to everyone who has been sending kind messages and prayers!  They are appreciated more than you know!

For as long as I can remember, I have loved popcorn.  I normally am plane Jane when it comes to popcorn though. A little butter or coconut oil and some Himalayan salt and I am good to go!  I sometimes branch out and add a little parmesan or cinnamon.  I know, living on the wild side 😉
Over Thanksgiving break when I was visiting a sweet friend in Austin, we picked up some popcorn at the store that had chocolate with it.  Oh my goodness it was awesome!  So of course I had to try and make some of my own.

Sweet and Salty Popcorn
Ingredients

  • 3 TBS organic popcorn
  • 1 TBS organic coconut oil
  • 2/3-1 cup Enjoy Life dark chocolate chips
  • Cinnamon
  • Himalayan salt

Directions

  1. Pop corn according to directions on bottle. (I used a popcorn maker, but you can also make it on the stove.)
  2. Spread popped corn on a baking sheet
  3. Melt chocolate chips.  Mix in the oil.
  4. Sprinkle cinnamon on the popcorn.
  5. Drizzle the melted chocolate on the popcorn.
  6. Sprinkle Himalayan salt on the popcorn.
  7. Chill in the fridge or freezer.
  8. Enjoy!
    (Note: Since there are no preservatives in this recipe, it is best to store it in the fridge.  It is a bit messy when you eat it, but so yummy!)

Totally swamped! 

Hello y’all! 

I think I am sitting down (except for driving) for the first time all day! 

Between work, the gym, random errands, getting groceries, Christmas story time, cooking dinner and doing laundry, it has been a busy day! 

  
Can we all agree these are the most adorable snowmen??  
We leave for Costa Rica on Saturday and I have about a million things to get done. 

So my goal for the week is to really decide what absolutely needs to be done before we leave and what can wait! And of course, sleep!

A Little Recipe Recap!

What a week it has been!  December! How is it the last month of 2015?
It has been another super packed week!  I {slowly} began my training for my next half marathon.  After taking some days off around Thanksgiving last week, it was a bit of a rude awakening! Oh my muscles are more sore than they have been a while!  I guess that is not always a bad thing though!

Before I share a few of my favorite recipes from the past year, I first have a confession.  I somewhat dislike recipes!  Since I started cooking as a child, I have never really been fond of them.  I like gathering ideas and just going for it! I like to keep things really simple, and rarely make anything that has more than a few directions.  I am better about using recipes if I am baking, but that is about it. Being a part of Foodie Friday has really forced me to shift a little bit with my cooking with actually making recipes and being able to share them!  In the past I would post a fun meal I had made, but when someone would ask for the recipe I was usually lost with what to tell them.  I know that not everyone likes to cook without exact recipes.  So thank you Foodie Friday ladies for helping me to grow more in this area!
