Fiberfull BLT

Happy Friday friends!  It has been a BUSY week!  Returning full force to my training, celebrating the Hubs birthday and zeroing in my on Feb goals has kept me on my toes.

Today I am linking up with Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit for a fiber focused theme this week!

Fiber.  What exactly is it? Where can we find it? How much do we really need a day?  Those are some questions that have floated through my mind before, and I am sure I am not alone in this.  I did a little research and found some interesting information!
According to Medical News Today, “Fiber is also known as roughage. It is the indigestible part of plant foods that pushes through our digestive system, absorbing water along the way and easing bowel movements.”
Fiber comes in a variety of different foods.  Vegetables, fruits, grains, beans, & nuts/seeds.  Fibrous foods have different amounts of fiber in them.  I found a really awesome list of fibrous foods at The Full Plate!  I was happy to see some of my favorite foods with many grams of fiber in them. (Apples, avocado, berries, broccoli, sweet potato, quinoa, and black beans)
Getting the recommended amount of fiber each day, about 25-30 g, can be easier than you think.  According to USC Health the average American only gets 15g/day.  Getting enough fiber helps to keep the digestive system moving and can also help prevent some yucky illnesses and diseases (constipation, colitis, colon cancer, and hemorrhoids). It can also help those with diabetes keep blood sugar in check.

Fiberfull BLT {gluten free}

Ingredients (for 2 servings)

  • 2-4 slices of gluten free bread
  • 2-4 slices of turkey bacon
  • 1-1.5 avocado
  • 1-2 roma tomatoes, sliced
  • 3-4 pieces of red leaf lettuce
  • spices (garlic, salt, pepper, paprika)


  1. Toast bread
  2. Cook bacon (I used our George Foreman)
  3. Make avocado spread with spices to taste
  4. Spread avocado on toast
  5. Place bacon on top of avocado
  6. Place tomatoes on top of bacon
  7. Place lettuce on the bacon
  8. Enjoy!

This BLT has roughly 11g of fiber, so well on the way to a daily intake amount.  Add in an apple or some mixed berries and you are more than half way there!
