Happy birthday little man! 

On this day 11 years ago I became a proud auntie!  It has been a joy-filled ride!
From the day I got to meet this little man, my heart was swept away! You have grown into such a caring, loving, intelligent, humorous, and talented young man!  Auntie E and Uncle W love you very much!

Shenanigans 

Hello friends!
Whew, the past 2ish weeks have been a bit of a whirlwind!  It seems like the few times I have been sitting down has been to drive (and there has been plenty of that going on). My computer and/or WordPress have also been giving me issues, so this is my 4th time attempting this post!  So here goes!

I really can not believe it is the end of March!  This year is literally FLYING by!
Life has been busy of course, but with many fun things mixed with the ups and downs.

The kids and I had a fun spring break and Easter break!

We celebrated St Patties day with lots of green and even my zumba class celebrated with lots of green 🙂

The kids were so proud of their recent race that we made bling holders!  They did awesome with their decorating 🙂

I got to practice some more *pinterest* hairstyles!

We dyed some Easter eggs and then I did some at my house too 🙂

We met some friends at the zoo and had a blast!

I had some good workouts and I got to see a little photo action of how I end a race full steam ahead!

I had some fun making delicious foods, and even broke in my ice cream maker this past weekend!

I had some nice naps which has helped me make it through the day even with my sleep issues.

I have been working hard to continue working on improving my health (mostly thyroid and sleep issues) with more natural products!  So far so good, so we shall see!

I was honored to be a part of my sweet friend’s adorable baby shower and I even won a cute manicure kit prize 🙂

I don’t normally post a lot of pics of myself, but I actually wore my hair down for the baby shower, and here is the proof!  LOL

With all the fun times came a kind of cruddy weekend.  The Hubs got injured so we ended up spending most of Saturday here and then he has had several other appts this week to figure out what is going on with his arm.  So far they were able to rule out a fracture.  Hope the MRI he had today was able to see the issue and we find resolution STAT!  Poor guy has been in a lot of pain and can’t so much since he is currently in a splint brace with his dominant right hand!

That is pretty much a wrap up of the last 2ish weeks!

Breakfast Waffle Quesadilla 

Happy Friday friends!  Whew, It has been a super busy week.  Recovering from a packed spring break and getting ready for Easter has kept me going full steam ahead!  My daily small naps have kept me going.  Haha!  The past week dinner has been a combo of smoothies and raw fruits and veggies 😉  When I saw what the theme was for this week, I got so excited!  I love all breakfast foods, and this idea came to mind and I was so stoked to try it!

Basically this recipe mixes 3 of my favorite foods together!  Eggs, waffles and quesadillas!  It might sound a little strange, but I am telling you, it was FANTASTIC!  So is it a waffledilla or a quesewaffle??

Breakfast Waffle Quesadilla!
Ingredients

  • 4- spinach gluten free tortillas
  • 6-7 eggs scrambled mixed with choice of filling
  • Choice of other fillings (bacon, sausage, spinach, etc)
  • 1/4-1/2 cup shredded goat (or your choice) cheese
  • Avocado, sliced and/or salsa (optional)
  • coconut oil

Directions

  1. Heat waffle iron.
  2. Coat waffle iron with coconut oil.
  3. Place 1 tortilla in the waffle iron, add a layer of filling/cheese and place a second tortilla on top.  Close waffle iron and cooked till tortillas are browned and a little crispy.
  4. Slice into 4 even pieces.
  5. Repeat steps 3-4.
  6. Enjoy with some avocado or salsa (if desired)

Fajita Salad

Happy Friday y’all!  I hope you had a lovely St Patties day as well as a great week!
Today is another beautiful Texas day!  I am not native to Texas, but I did live here as an infant and moved back here in 2009! I really never thought I would live in the south after spending pretty much my entire life up north, but I have to say it is one of the best decisions I ever made.  One of the wonderful things about Texas is the food!  And since we are talking regional foods today for Foodie Friday, I want to share with y’all a recipe I adapted!

Before I moved to Texas, I had never really heard the phrase “Tex-Mex” before. Tex-Mex food comes from Spanish settlers who were here before Texas became a state.  Now a days, most Tex-Mex food is a mix of traditional Mexican food with slightly different meats, cheeses and spices.  One food that was made this way was the fajita!  A traditional fajita is beef and/or chicken cooked on a hot skillet normally with onions and peppers.  Then served on a warm tortilla.  Over my time living in Texas, I have had fajitas many times (sans onions and beef).  Over the past few years as I have worked to improve my health and stay away from gluten as much as I can, I don’t really eat the tortillas any longer. At least not in the restaurant.  {I am still on the search for a good gluten free tortilla that doesn’t fall apart in my hands!} So I created my oven version of fajitas!

Fajita Salad
Ingredients

  • 1 lb of chicken breast cut into strips
  • 1-2 TBS coconut oil
  • 2-3 sweet bell peppers, I prefer red, orange & yellow, cut into strips
  • spices- Equal parts: black pepper, Himalayan salt, paprika, garlic, chili powder, cayenne pepper, cumin, a pinch of sugar.
  • Lettuce
  • Toppings of choice (tomatoes, avocado, cheese, sour cream and all popular options)

Directions

  1. Heat skillet with coconut oil and cook chicken till about half way cooked.  Add in peppers and spices. Cook till chicken is browned and peppers are limp.
  2. Place lettuce in a bowl.  Add in the meat/pepper mix.
  3. Add on toppings
  4. Enjoy

Workout update

So, apparently today is Thursday!  Haha…I was thinking all day yesterday that it was Tuesday!  It is spring break week so my schedule has been different and has me all thrown off!
So here I am sneaking in a bit of a training update from the past week!
When I posted my workout goals last week I totally forgot this was spring break so I had some changed to my schedule! It all worked out a-ok though!  I am happy to have been able to try some new classes and I signed up for another race!

Monday- Body pump, then switched gyms and caught the last 20 min of a piyo class before Zumba.  I have been working on improving my chest weight and I am happy to say I did the past few classes with a heavier weight!

Tuesday- I finally got to try the BootyBarr class, and it was TOUGH!  Then I shook things out with a body combat class
Wednesday- Did a piyo class and then a St Patties Zumba party! It was SO much fun!

Thursday- Body pump and yoga
Friday- Walk/run
Saturday- Body pump & possibly piyo
Sunday- Run 3 miles
Monday- Attempt my 3 classes again- Body pump, piyo and zumba
Tuesday- Zumba & bike
Wednesday- Body pump and yoga

I really can not believe that March is already half over! This year is FLYING by.  I need to reevaluate my goals and see if I am on track with them.  🙂

Rain, rain, went away!

Whew, this past week was a little nutty, mixed with a lot of rain!  I know that spring is just around the corner, but man, that was a LOT of rain!  It was not all bad since it did help clear away a lot of the pollen that my body was not happy about, but I was sad to see many friends and strangers dealing with flooding 😦

It was raining so much that I even did the school car line…and I am NOT a fan of car line.  It always seems to take so long, and I just don’t really have time for that…but on Wednesday, I really just didn’t feel like getting pelted with rain while helping the littles get to the car. I am pretty sure the entire school was in car line vs the normal 50/50 split!  I even arrived early and it was so backed up!

Other than the rain it was a pretty fun week.  Made some yummy stuffed peppers.

One of my bosses had a birthday, so we had fun making some treats and a healthy birthday meal!

I got in a few great workouts, and even tried my yoga & piyo classes with some yoga socks.  I sweat a lot and I was hoping these would help me not slip…they had a good grip on the bottom, but they slipped on my feet…so back to the drawing board with finding ways to not slip while doing my mat classes.

The rest of the weekend included no rain, essential oil blend making, a nice walk with the baby I was watching and some more roasted veggies!

So good reminders I need to keep in the front of my thoughts and deep in my heart!

Gefüllte Paprika

Happy Friday friends!
I am happy to report that my allergies are MUCH better! I am so very thankful! It was getting pretty frustrating that I was having such issues.
I am not always a fun of tons of rain (and I am sending prayers for all those who have been affected by flooding), but I am thankful the rain washed away the pollen!

Due to all the rain, I decided to pull out an old family recipe that comes from my German side.  I am linking up with Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit for an heirloom recipe themed week!

I was never a fan of peppers as a kid, and actually I did not even knew I like them (red, orange & yellow) till a few years ago.  And since I discovered that, I can never get enough peppers in my life!  I have tweaked the recipe my family used to make to a really simple version!

Gefüllte Paprika- Stuffed Peppers
Ingredients

  • 4 large organic peppers (best with more of a flat bottom), top cut off and cored
  • 1 lb organic ground turkey
  • 2 8oz cans of organic plain tomato sauce
  • Spices- Equal parts to taste- basil, rosemary, marjoram, thyme, himalayan salt, sage, oregano, black pepper
  • 1/4 cup parmesan cheese

Directions

  1. Preheat the oven to 350*
  2. Brown ground turkey with spices (and extra chopped red pepper if desired)
  3. Add sauce to the meat and simmer for 10 min
  4. Add in parmesan cheese
  5. Place peppers in a glass oven safe dish
  6. Scoop meat/sauce mixture into each pepper
  7. Bake for 30-40 min until bubbly and browning
  8. Enjoy!
