Fajita Salad

Happy Friday y’all!  I hope you had a lovely St Patties day as well as a great week!
Today is another beautiful Texas day!  I am not native to Texas, but I did live here as an infant and moved back here in 2009! I really never thought I would live in the south after spending pretty much my entire life up north, but I have to say it is one of the best decisions I ever made.  One of the wonderful things about Texas is the food!  And since we are talking regional foods today for Foodie Friday, I want to share with y’all a recipe I adapted!

Before I moved to Texas, I had never really heard the phrase “Tex-Mex” before. Tex-Mex food comes from Spanish settlers who were here before Texas became a state.  Now a days, most Tex-Mex food is a mix of traditional Mexican food with slightly different meats, cheeses and spices.  One food that was made this way was the fajita!  A traditional fajita is beef and/or chicken cooked on a hot skillet normally with onions and peppers.  Then served on a warm tortilla.  Over my time living in Texas, I have had fajitas many times (sans onions and beef).  Over the past few years as I have worked to improve my health and stay away from gluten as much as I can, I don’t really eat the tortillas any longer. At least not in the restaurant.  {I am still on the search for a good gluten free tortilla that doesn’t fall apart in my hands!} So I created my oven version of fajitas!

Fajita Salad

  • 1 lb of chicken breast cut into strips
  • 1-2 TBS coconut oil
  • 2-3 sweet bell peppers, I prefer red, orange & yellow, cut into strips
  • spices- Equal parts: black pepper, Himalayan salt, paprika, garlic, chili powder, cayenne pepper, cumin, a pinch of sugar.
  • Lettuce
  • Toppings of choice (tomatoes, avocado, cheese, sour cream and all popular options)



  1. Heat skillet with coconut oil and cook chicken till about half way cooked.  Add in peppers and spices. Cook till chicken is browned and peppers are limp.
  2. Place lettuce in a bowl.  Add in the meat/pepper mix.
  3. Add on toppings
  4. Enjoy
