It has been a beautiful week here in my neck of the woods. My sincere apologies to those of you who have had to deal with the return of winter weather! I will try to send some sun and warmth your way! 🙂
So when I moved to Texas in 2009, I encountered a food I had never had before. At first I was not really sure how I felt about it, but after some convincing, I tried some, and I was sold! The longer I have lived here, the more I see this yummy breakfast food! They have restaurants that sell them and food trucks. They are def a very popular item for most Texans! The only bummer for me is that I have yet to find one with a gluten free tortilla, so of course, I started to make my own! Here is my own version of the Breakfast Taco!

Breakfast Taco with avocado & cucumber salsa
Ingredients
Taco
- Gluten free tortilla (1-2 per person)
- 1/2 lb turkey sausage, browned and broken into small pieces
- 1 red pepper, washed, cored, and chopped
- Eggs (1-2 per person)
- Goat cheese crumbles
- Avocado oil
Salsa
- 1 English cucumber
- 1 Avocado
- Spices (salt, pepper, garlic, paprika) to taste
- Lime juice
Directions
Taco {omit the meat for vegetarian option}
- Saute red pepper in 1 tsp of avocado oil, then add in the turkey sausage.
- Add eggs to the mixture and scramble everything together. (While that cooked I made the salsa)
- Heat tortillas with 1/2 tsp or so of avocado oil. Cook about 1-2 min each side.
- Build taco with egg mixture, cheese and salsa
- Enjoy!
Salsa
- Peel cucumber.
- Remove avocado flesh from the skin & remove the pit.
- Place cucumber & avocado in a food processor. Blend till smooth.
- Add in spices/lime juice to taste.
- Enjoy on your taco.

A TX company makes a similar one (where I got the idea), but it’s $7 a jar…so I decided just to make my own version for $2! Haha
I finally just photographed our breakfast tacos, well one version which is a little odd but still… they hit the spot! I am really intrigued by the salads and the cucumber in it! I will have to give it a try. I went to Whole Foods 4 times in the last two days along with many other stores so I’m hoping not to head back but I do have to run out tomorrow for one thing so maybe I can pick up some cucumber.
