Calling all GARLIC lovers…

Happy Friday friends!  What a week it has been!  I think this is the first time I have actually had time to sit down and even open my computer! There is a LOT going on, and more updates will be coming about what is in the works!  Until then, I have some yummy recipes to share with you 🙂

I have to admit that I used to HATE garlic!  Thankfully I came to realize that I not only like garlic, I actually LOVE garlic!  I use it pretty much every day in my cooking!  I even bought a cute little garlic holder a few years ago that gets a lot of good use!
img_9704I have even been known to swallow a clove here and there to ward off a nasty cold!

Sun dried tomato pesto smothered chicken and spaghetti squash

  • 1 spaghetti squash
  • 1 lb chicken breasts, cleaned and cut into serving size pieces
  • Avocado oil (2 TBS & 2/3 cup)
  • 3 cloves of garlic (2 chopped into quarters and 1 minced)
  • 2 cups basil
  • 1/2 cup sun dried tomatoes
  • 1/2 cup naked goat cheese, grated
  • Spices (pepper, Himalayan salt, paprika, garlic powder)
  • Handful of cherry tomatoes, sliced in half



  1. Pre-heat oven to 375*
  2. Line a baking sheet foil
  3. Slice open the spaghetti squash and remove seeds
  4. Drizzle oil on the inside of the squash and sprinkle with the spices and the minced garlic
  5. Place the spaghetti squash halves face down on the baking sheet and bake for 30-40 min
  6. While the squash cooks, prep the pesto & chicken
  7. Add basil, 2/3 c oil, 2 cloves garlic, sun dried tomatoes, cheese and spices to a food processor and blend well
  8. Drizzle the bottom of a baking dish with oil and place chicken breasts on the oil.  Place a scoop of the pesto on each piece of chicken.
  9. Bake for 20-25 min
  10. Once the squash is cooked & cooled, scrape it and place it in a bowl.  Add the remaining pesto and cherry tomatoes
  11. Enjoy with some chicken!
