Zucchini turkey meatballs 

Hi there friends. It has been a doozy of a week. I am still processing all that has happened this week, and I will post more when I feel I can talk about it more freely. Also my computer crashed again, so I’m posting from my phone which is not always the best. So please excuse any issues or mistakes! 

Today the hubs and I are traveling again. He is in a wedding this weekend, so for once, I am not on wedding detail! Not exactly the way I wanted to spend my 35th birthday weekend, but planning to make the most of it. I am thankful I will at least get to see one of my best friends since childhood and have lunch with her 🙂 

For today I have a recipe that was inspired by some pictures I saw as I scrolling though Pinterest. I saw a pic of a meatless zucchini ‘meatballs’ from Skinnytaste and decided to change some things up and make my own version with ground turkey.

I have to say that I wasn’t sure how they would turn out. I first tried to pan sauté them, but that seemed to make meatball mush. Haha 

Baking them turned out really well. A few days ago I wanted to heat up some leftover and I ended up warming them in a frying pan with a dab of avocado oil and they tasted even better! 

Zucchini turkey meatballs

Ingredients

  • 1 lb ground turkey
  • 2 zuccchinis, washed, dried, and shredded
  • 2 organic eggs
  • 2 cups almond flour
  • 1- 1 1/2 tsp of each spice {garlic, paprika, Himalayan salt, pepper, basil, rosemary, parsley, thyme, & oregano}


Directions

  1. Pre-heat oven to 350*F. Line a muffin pan with silicon cups. 
  2. Place all ingredients into a large bowl and mix well with hands. 
  3. Form meatballs the size of golf balls and place one in each silicon cup. 
  4. Bake for 20-25 min or until juice runs clear and there is no pink color inside the meatballs. 
  5. Enjoy with your favorite Italian meal. {I served it with spaghetti squash and it was delicious!}

    I haven’t made meatballs in the longest time, but I really need to! :O They’re such an awesome portable-ish + filling form of protein! 😛 I love that you used silicone cups to bake em’ in! 😛

      I hadn’t made them in a while either! I am glad I remembered to use my silicon cups (and that I could find them after the move!!)
      I even snagged a few for breakfast on the run 1 morning. So good 🙂
