Cheesy Cauliflower ‘Bread’

Happy Friday friends!
Thank you all for your kind words regarding my health last week.  Questions are still being answered and new doctors will be seen soon to pin down what exactly is going on, and I will share soon 🙂  Nothing life threatening is happening, just some issues being worked out.

In the kitchen the past week or so, I have been really into cauliflower.  I did a little post last year about the benefits of cauliflower that I did not even realize.
A few benefits include:

  • Fights against cancer
  • Helps heart health
  • It is anti-inflammatory
  • Has many vitamins and minerals
  • Helps brain health
  • Great source of fiber
  • Full of antioxidants and phytonutrients

I am back with another fun cauliflower recipe!

foodiefridayI found this recipe on Pinterest this week, and decided to give it a try.  I made a few modifications to cater to my liking 🙂

Ingredients

  • 1 head organic raw cauliflower, riced
  • 1/2 cup shredded Mozzarella Cheese
  • 1/2 cup shaved Parmesan Cheese
  • 1 large egg
  • 1 teaspoon freshly minced garlic
  • 1 tablespoon freshly chopped basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3/4 cup shredded Mozzarella Cheese
  • parchment paper
  • marinara sauce (optional)

Directions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Rice the cauliflower in a food processor or blender, make sure all the pieces are chopped into a very fine texture.
  3. In a large bowl, mix all the ingredients (except 3/4 c cheese) together.  Place the mixture onto the parchment paper lined baking sheet and spread out till it is evenly spaced and about 1/4″ thick.
  4. Bake in the oven for 10-12 minutes. Remove from oven and top with the remaining  Mozzarella cheese and return to oven to continue baking for about 10 min, or until the cheese is melted and starting to brown.
  5. Cool about 10 minutes and cut into ‘breadsticks’.
  6. Enjoy

A little dessert flashback

Happy Friday Friends!
Another week has flown by.  Things have been a little quiet over here in my corner.  Been working through some details with my health, and that has taken top priority next to my wonderful husband and job.  I feel pretty out of the loop and I hope to catch up more with all my lovely friends soon!

I have been on a pretty restrictive eating plan for a few weeks to eliminate some health issues I have been dealing with. Until things are resolved a bit more, I am not really able to eat any sweets.  Since we have a dessert theme this week I thought I would bring you some of my favorite desserts from 2016!

Sometimes a little dessert pick me up in the middle of the day is needed.  That is when I turn to my energizer smoothie or my baked apple smoothie!

At other times I am craving a warm fruity dessert and I pull out some ingredients to make a crisp.  Most commonly I make apple, but lately, my pear crisp has been my go-to!

Another dessert I love is a recipe that I used from the lovely Annmarie at Fit Foodie Mama! I actually have some sweet potatoes in the fridge right now I need to use this weekend and I bet this amazing sweet potato blondie recipe will be made for my friends & hubs!

You may remember the amazing Sweets in the Raw cookbook I posted about over the summer that was written by my lovely sweatpink sister, Laura Marquis!
I am still in love with everything in this cookbook, and love experimenting with the recipes!


When I am able to eat grains again I will be making this delicious cranberry quinoa cake! So easy and makes a yummy dessert, especially in the cooler winter months!

Parmesan roasted veggies

2016 faded out with a LOT going on! Traveling, seeing lots of family, all the holiday parties and dealing with some health issues. This little space in the blog sphere got pushed to the back burner over the past 3 weeks. I don’t think I’ve had as many draft posts for a long time. They will be coming along and posted soon 😉

This week I have been slowly getting back in the kitchen. I still have yet to use my new beautiful cast iron dutch oven & skillet! That needs to be remedied ASAP!

I have been doing some experimenting with roasting veggies a bit differently this week and I have to say they turned out pretty tasty!

Parmesan garlic roasted veggies 

Ingredients

  • 1-2 bunches of veggies (I used broccolini and asparagus
  • 4 + 1 Tbsp avocado oil
  • 2 cloves garlic, minced into tiny pieces
  • 1/4 tsp Himalayan salt
  • 1/4 tsp black pepper
  • 1/2 Tbsp rosemary
  • 1/2 Tbsp basil
  • 1/2 Tbsp oregano
  • 1/2 Tbsp paprika
  • 1-2 Tbsp shredded Parmesan
  • Parchment paper

Directions

  1. Pre-heat oven to 400*F.
  2. Add minced garlic and 4 Tbsp of oil to a small bowl.
  3. Wash and prep veggies- cutting off ends and making them into appropriate size pieces.
  4. Mix all dry spices in a small bowl.
  5. Line baking sheet with parchment paper and cover with remaining oil.
  6. Lay veggies in single layer on the parchment paper.
  7. Drizzle the garlic oil over the veggies and lightly toss.
  8. Add the spices and toss again till fully coated.
  9. Roast for 15-20 min in the pre-heated oven.
  10. Enjoy!
