Honey Balsamic Grilled Chicken

Happy Friday friends!
It has been another busy week of summer! The hubs and I had a nightmare of a time coming home from our vacation, and I have been spending the week with some friends and helping out with their kiddos 🙂

As I have recovered from all the drama of last weekend and grieving the loss of a sweet friend I have spent a lot of time outside enjoying the sunshine and peace in this beautiful paradise.

There is something about sunshine that is really therapeutic for me.  Cooking outside is also really therapeutic for me.  It worked really well for me this week to celebrate national cookout week.  But really, I love to grill all year round.

I love to grill but I also really like simple recipes!  This recipe was SO easy and took no time at all! It was then devoured by myself and several kiddos (and the dog even snuck a piece too).

Ingredients

  • 2 lb organic boneless/skinless chicken breast sliced into chicken tenders
  • 1 cup balsamic vinegar
  • 4 Tbsp honey
  • 4 Tbsp avocado oil

Directions

  1. Wisk together the vinegar, honey and oil
  2. Place the chicken strips in a large zip-closed bag or a large bowl
  3. Add the liquid mixture to the chicken and let marinate at least 30 min
  4. Pre-heat grill to med heat
  5. Place marinated chicken on the grill and cook 3-5 min both sides or until the inside is no longer pink
  6. Enjoy outside on a beautiful summer night

Side note- Leftovers can be made into an awesome chicken salad the next day 🙂

Summer Treats- Food Blogger Love Style

Happy Friday friends! Greetings from Minnesota!

It has been a beautiful week full of wonderful activities, time with family and friends and some much needed rest.  Recap on our activities coming soon 🙂  You can see a few pics on Instagram, but I will leave you with this big change that happened this week!

Since I have been traveling all week I have not been cooking or recipe creating.  Although it has been nice to have a little break, I miss making my own food.

Since we are celebrating food blogger love today and this week was the summer solstice, I gathered some awesome summer treat recipes to share with you all!

I also made my watermelon, strawberry & lime smoothie into popsicles, and they did NOT disappoint! {Sadly I don’t have a pic of them yet}

Chocolate Protein Fudge Bites

Happy Friday Friends!

I am so thrown off this week due to some changes in my schedule and every day I really did not know what day it was! I was convinced that Tuesday was really Saturday! Haha
Mostly I think I am really tired from all the yard work we have done in the sun this week!
When we bought our house last year the yard was in pretty bad shape.  We managed to perk some of it up, but the front yard under a large pine tree never really got the hang of the grass seed.  So While I have some time off work and a few days with not a ton of other things going on, we decided to get some sod and get this project done!

My husband used to have his own lawn company, so he is def more in the know with all this grass stuff, but I feel like I did a pretty good job.  From measuring to ordering to laying the topsoil, I was a rock star! We were supposed to picked up our sod yesterday, but fortunately the order arrived too late in the day for us to get it then. So this morning bright and early we went and picked it up!
Laying it down was like a big puzzle, and I love puzzles! It was fun for me to see how to get it all laid out in a nice pattern and covering all the spaces.  I think it came out pretty well!  Now to water and pray it all latches on and grows!

In the middle of all that drama, I managed to put together a yummy recipe to celebrate national fudge day! I am linking up today with Annmarie from the Fit Foodie Mama and Farrah from Fairyburger for our fudge themed week!

Bites collageIngredients

  • 1 cup sunbutter
  • 16 pitted medjiool dates
  • 2 scoops vital proteins
  • 3/8 cup + 1 Tbsp cacao powder
  • 2/3 cup enjoy life
  • 3 Tbsp coconut oil

Directions

  1. Place all ingredients (minus 1 Tbsp cacao) in a food processor, blend till well mixed.
  2. Place 1 Tbsp cacao powder in a small bowl
  3. Scoop 1/8 cup into your hands and roll in a ball.
  4. Lightly roll the ball in the cacao powder till covered.
  5. Store in an airtight container in the fridge
  6. Enjoy

Watermelon, strawberry & lime smoothie! 

Hello friends!

It is already Friday again! Whew! What a week it has been. I forgot how exhaustingly fun summer can be! It has been filled to the brim already and we are just 2 weeks into summer break! Lots and lots of swimming happens in the summer here in Texas. We pretty much live at the pool!

On normal days it is hot, sunny and after 4-5 hours of swimming I am in need of something more refreshing than water. The one thing that helps to quench my thirst is fruit! And watermelon is usually the fruit of choice!!  This week I received a gorgeous watermelon from my CSA and I also picked up some nice organic frozen strawberries from my first trip to Aldi.

Chilled in the fridge, made into popsicles, and smoothies are just a few ways I enjoy watermelon.

Ingredients

  • 4 cups organic watermelon
  • 2.5 cups organic frozen strawberries
  • Juice of 3 organic limes

Directions

  1. Place all ingredients in a blender.
  2. Blend on high till fully mixed.
  3. Enjoy poolside, or anywhere on a hot summer day.

Cauliflower Cakes

Happy Friday friends!
Anyone else feel like it was a weird week?  Monday holidays always seem to throw my whole week off.  I didn’t know what day it was several times this week! Haha

And I got hit with a summer cold, which, if you ask me, always seem worse during summer months than in the winter! Boo.

Despite my little cold, I did have some fun working with one of my favorite veggies!

I have seen some recipes floating around for cauliflower tots, a much healthier form of a childhood food, tater tots.  So I got to working and played around with making my own version.

Ingredients

  • 1 head organic cauliflower
  • 1 egg + 1 egg white
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/3 cup gluten free breadcrumbs
  • 1/2 tsp pink salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 Tbsp fresh parsley finely chopped

Directions

  1. Pre-heat oven to 400*, cover a baking sheet with parchment paper
  2. Remove the stem from the cauliflower then chop head into chunks and then into small pieces using a blender or food processor
  3. Steam cauliflower for about 10 min
  4. Place cauliflower in a large bowl and let cool (I placed mine in the fridge to speed up the process)
  5. Add remaining ingredients to cauliflower and mix well.
  6. Scoop about 1/8 cup cauliflower and form into a patty, place on parchment paper. Repeat till all mixture is used.
  7. Bake for 25-30 min, or until bottom of cake is browning and crispy.
  8. Enjoy!

Body Pump Training

Hello friends!
My promised post about my body pump training.  I planned to post a few days ago but got hit with a summer cold! Something about a cold in summer seems so much worse than a cold in the winter time!

For those who may not know what Body Pump is, it is a 55 min barbell workout that works all the main muscle groups from head to toe.  Each class has a warm up, squats, chest, back, triceps, biceps, lunges, shoulders, abs, and a cool down.

I have been taking Body Pump classes for a little over 5 years.  Since I got in the groove of the class I have been telling myself I should get certified.  Several years, later I finally took the plunge.

In mid-April I was talking to one of my instructors of how I wanted to get certified but I was not up for driving several hours away for the training.  It so happened a training had just opened up down the road from where I workout!  So a few days later I officially signed up!

I am so fortunate to have amazing instructors who really encouraged me along the way and gave me helpful information to be the most prepared I could be for training!

2 weeks ago I showed up for training and I am SO glad I did!
It was a super busy 2 days filled with going through the release we were training on (the release a few set every quarter, so I was very familiar with this release!)

On Saturday we all did the workout together, did a technique workshop, taught our assigned track (I had biceps), learned about layering cues, worked on improving our teaching approach and we got out a little early!

Sunday we all came back ready to rock it.  We taught our tracks again, did the Body Pump challenge, learned about the next steps we would as an instructor, practiced then did our final track teaching to see if we passed training!

I am happy to say I passed! I still have to film myself teaching and pass that and I will be certified to teach!

 

That is the most simple rundown…cause summer cold brain!
