Chocolate avocado pudding

Well I am on the road again today! It has certainly been the summer of travel and house sitting! I think I have only slept in my own bed for 4-5 days all summer!   I am still working through all the amazing information and fun I had a blog fest & Idea world convention last week, and there will be a few posts about all that coming at you next week 🙂

While I have been traveling so much, I have not been cooking that much in my own kitchen.  One thing that has not changed though is my consumption of avocados!  I eat one (or more sometimes) just about every day!  Simply in the last week I went through 2 bags! I should probably invest in some avocado stock! Haha

But really, I do love me some avocado!  On salads, in smoothies, on toast, as guac, on eggs, and even just all by itself!  I mean, what is not to love? Unless you are allergic, then by all means, do not eat them!  Avocados are chalk full of vitamin E, fiber & omega-3 fatty acids.  The benefits of avocados are pretty awesome! A few include lowering cholesterol, reduce inflammation, help eye health, help keep blood pressure in the right range.
Waaaaay back when I was in college, my bff and I were craving dessert one night and she had found a recipe for chocolate avocado mousse! I wasn’t sure if I would like it, but it ended up being so good!  Sadly I we never made it again.  As I was thinking about what to crate this week I looked at my stash of avocados and that memory came up and I wanted to see if I could make something equally as good! So this creamy, dreamy treat was even better than when we made it back in college!  Maybe cause I changed a few things up (hello dates) and Enjoy life was not even a company back then! Hehe

Ingredients

  • 2 large avocados, pitted and skin removed
  • 6 dates, pitted
  • 1 c organic almond milk- unsweetened vanilla
  • 4 Tbsp Cacao powder
  • 4 Tbsp Sunbutter
  • 1/4 c + some to garnish -Enjoy life mini chips

Directions

  1. Add dates and milk to blender, pulse till it forms a smooth paste.
  2. Add in cacao powder and sun butter, blend till smooth.
  3. Add in chocolate chips, pulse till chips are blended- only about 5-10 seconds.
  4. Scoop into bowls and garnish with more chips if desired.
  5. Store remaining pudding in a air tight container in the fridge

Get your snack on

Happy Friday friends!
Spending a Friday in town and in my own house/bed for the first time in almost 2 months! Thanks to traveling, house sitting and dog sitting things have been a little nutty! In the midst of everything that has been working on sticking to my eating plan and training schedule! It has not gone 100% according to plan, but that is ok! 🙂
Since I was a kid I have always been a fan of snacks! Some of my favorite snacks are popcorn, apples and almond butter, berries, green smoothies and pretty much anything with a little chocolate 😉
As I have gotten older I have turned to more adult-like snacks and I try to make my snacks have a bit more nutritional punch to them.  Making snacks that taste great and also fuel my body has become really fun! I love knowing that I am able to enjoy what I am eating and that it is also good for my body and soul!

Banana choc chia bites

Ingredients

  • 1 banana
  • 1/8 c dark enjoy life chocolate chips
  • 1/8 c mini enjoy life chocolate chips
  • 1/2 Tbsp sunbutter
  • 1/4 tsp coconut oil
  • Chia seeds- to garnish

Directions

  1. Place a piece of freezer paper on a baking sheet.
  2. Slice banana into 1/8-1/4in pieces and place on the freezer paper.
  3. Melt chocolate over a double broiler.  Add in the coconut oil and sunbutter, mix well.
  4. Drizzle over the banana pieces.
  5. Sprinkle the chia seeds over the chocolate mixture.
  6. Place baking sheet in the freezer for at least 10 minutes.
  7. Enjoy.
  8. Store remaining bites in a air tight container in the freezer.

Welcome to the Hive #ad

Hello friends! I hope you had a lovely 4th of July!  I spent my time with some dear friends and also thinking about so many in our history who made the celebration of freedom possible!

The Hive Hub is like the brain that helps everything to work together.  All the different products connect to this hub and the hub connects to the app.   Then when you are on the go, the app can control lights, temperature and appliances in your home!

Once the Hub and app are both set up, you can use it to connect to the different products to make your home just the way you want it.  This door/window alert is perfect for several reasons.  You can find out when a door is opened in your home and even have a light turn on when a door opens up.

The Hive plug is fantastic for when you want to operate anything you plug in- coffee maker, hair tools, other appliances!

One of the products I am most excited about is the Hive thermostat!  I have often wanted to change the temperature of my home before I got there (i.e. turning the a/c back on after vacation) and have never had the products to do so!
