Chicken, Veggie & Rice Soup

Hello & happy Friday!
Welcome back to Foodie Friday with  Annmarie and Farrah for our kitchen cleanse themed week!
Houston as recovered from our snow days last week, but it has still been rather chilly in the mornings.  The hubs came home from work not feeling so great the other day, so I looked to see what ingredients I had on hand to make some soup for him.
I love how a simple broth combined with some protein, veggies and spices can really boost the immune system and help the healing process speed up!
It seems like people all around me are getting sick left and right!  I spent the first week of Jan in bed and I don’t have time for that these days!  That week I fortunately had off work, so it wasn’t that big of a deal, but that is not always the case!

This soup hits the spot and just makes you feel better.  The spices add a nice kick of flavor while adding health benefits.  I love how simple it is to put together!

Ingredients

  • 3 cups cooked & shredded chicken
  • 3 cups veggies (I used carrots, peas, & celery)
  • 4 cups of organic chicken broth
  • 2 cups cooked brown rice
  • 1 Tbsp avocado oil
  • 2 gloves minced garlic
  • 1 Tbsp turmeric
  • 1tsp cayanne
  • 2 Tbsp oregano
  • 1 Tbsp cumin
  • 1/2 tsp pink salt
  • 1/2 tsp black pepper
  • 1 tsp ground ginger

Directions

  1. Heat avocado oil and add in the garlic.  Sauté for about 2 min.
  2. Add in the veggies and chicken and sauté till veggies are soft.
  3. Add in the rice.
  4. Gently mix in all the spices.
  5. Slowly pour in the chicken broth.
  6. Let simmer for 10-15 min.
  7. Enjoy a bowl while recovering from an illness, to warm up or just because!

Eggplant pizza to warm the soul

Happy Friday friends!  I am crawling out from under the ice that took Houston down this week! I literally have not felt this cold since I moved away from Chicago 10 years ago!

With the ice covering everything, I got to work in my kitchen to make some yummy food to keep us warmed up!  I did manage to get a lot done in the 1.5 days where I did not leave my house! I am SO thankful that even though it was cold and nasty out, it will be back to normal temps this weekend!

I have seen a few eggplant recipes bouncing around pinterest, but when I saw a few for a healthier version of pizza, I knew I had to try it out.

Ingredients

  • 1 Medium eggplant sliced into approx 1/4 in slices
  • Pink salt
  • 1ish cups tomato sauce
  • Choice of toppings (I did sauteed red pepper & spinach)
  • Choice of cheese (I used almond cheese)

Direcions

  1. Preheat oven to 375*F
  2. Place eggplant slices on a lined baking sheet
  3. Sprinkle a dab of salt on each slice (this helps reduce the moisture in the eggplant)
  4. Pre-bake the eggplant about 15 min, flipping halfway through
  5. Remove pan from oven and add about 1 Tbs tomato sauce on top of each slice
  6. Add on toppings of choice and then sprinkle on the cheese
  7. Bake for 10-15 min or until cheese is golden brown
  8. Enjoy 🙂

Zucchini Taco Bowl!

Happy Friday friends!
It is another chilly day here for Houston! We got a cold front and the temps dropped from 68 to 30! Then when I woke up it was real feel of 19! Too cold for my liking! One of the main reasons I moved away from Chicago was the cold winter weather!  My body does not do well!
Anyways, being so chilly on and off, I have been experimenting with different warm me up meals! Soup is always our go-to, but even that gets old after so many weeks, haha.

I received the Kitchen-Aid spiralizer attachment for Christmas and it has been fun playing around with it.  I was craving some taco styled food the other day, but didn’t have all the ingredients for taco soup, and I was not in the mood for a taco salad.  I looked to see what I had that might make for a good base, and I had a ton of zucchini just begging to be eaten!

Mine is 5 main ingredients plus spices 😉  I may have a few more than 5 ingredients, but there are only 5 steps to putting this yummy taco creation together!

Ingredients

  • 1 lb ground turkey
  • 2 zucchinis, spiralized (or sliced and chopped if you don’t have a spiralizer)
  • 1 red pepper, chopped
  • 1 roma tomato, chopped
  • 1 avocado, cubed
  • Spices to taste (pink salt, pepper, garlic, cumin, red pepper flakes)
  • 1 tbs avocado oil

Directions

  1. Saute zucchini and red pepper in half of the avocado oil.
  2. In a separate pan brown the ground turkey with the remaining oil. Add spices to taste.
  3. Toss the veggies and meat together in large bowl.
  4. Add tomato and avocado (and cheese if you desire) on top.
  5. Enjoy

Smoothie Packs + healthy habits

Happy New Year friends!  I am happy to be back to the blog! I took some time off over the holidays to spend time with my family and friends who are like family! It has been refreshing and we made some wonderful memories!  As we swing into a new year I have been focusing on my self and my health.  I was under the weather for a few days but am thankfully feeling better!

There are SO many posts out there right now about the new year and resolutions or goal setting.  I have done both of those things in years past but most of the time they ended up not happening or causing me stress.  I am not a fan of stress and I don’t want goals or plans to add stress to my life which goes against focusing ON health.  Health to each person is slightly different and that is OK!  As I shift my focus to health for me, I have areas I do want to improve on, but I know they are not going to happen overnight or all in the month of January.

I have made my own private list of healthy habits I want to focus on and I am taking on one or two at a time.  Once they become more of my natural routine, I will add in another one.  Over the course of the year I hope these different healthy habits impact my life in a positive way.   As I shift my focus around I will share some of them with y’all for accountability as well as hopefully helping someone else add a healthy habit to their life.

My first one is getting breakfast in.  I hate to admit that I am TERRIBLE at eating breakfast.  I am more of a brunch, snack, then dinner kind of girl.  I feel better when I have some breakfast and my brain is more alert as well, but as some of you may know, I am NOT a morning person.  I have tried to be a morning person, but it has never gone well.  Even as a child I was more of a night owl.  I have to leave for work at 6:45 am, and while that may not sound early, I am always dragging.  Forget breakfast, I am just glad to leave the house on time with all that I need for the day (computer bag, gym bag, change of clothes, water bottle, lunch, and often times something more).

Enter a breakfast I can make in less than 5 min while I am getting ready.  So simple yet SO perfect for me.  And it is something I can prep on the weekends so I don’t even have to think about it- Even better!!

Ingredients (multiply each ingredient for how many packs you are making)

  • 2 handfuls of some greens (spinach, kale, mixed greens, etc)
  • 2/3 cup choice of frozen fruit (cherries, strawberries, pineapple, mango, blueberries, raspberries, etc)
  • 1/2 banana
  • 1 cup milk of choice when making the smoothie
  • protein powder or other ingredients if desired ( I pre-mix my fav add ins in a container with a lid, then scoop the amount into the smoothie all at once- collagen peptides, flax and chia seeds, maca root powder, cinnamon and turmeric)

Directions

  1. Place selection of frozen fruit in a freezer proof container
  2. Add in the frozen banana
  3. Add 2 scoops of greens of choice on top
  4. Seal and place in the freezer until use
  1. When making the smoothie place greens and milk in a blender.  Place on high for 1 min or until greens are completely blended in with no chunks.
  2. Add in the frozen fruit and banana, blend well for 15-30 seconds
  3. Add in any remaining ingredients and blend for 15-30 seconds
  4. Enjoy!
