Hello & happy Friday friends!
Welcome back to Foodie Friday with Annmarie and Farrah for our heart themed week!
As you know this week many people celebrated Valentine’s Day! I know it is a gushy holiday but I do love how excited the kids get. And I am that nanny who makes fun lunches for holidays 😉
This week I focused on loving those around me as well as loving myself. I got a massage over the weekend. I took a nap instead of my normal workout one day when I was super exhausted. I still got in my workouts, but in a few different classes this week. I sent some little notes in the mail to those I love. I showed kindness to some strangers. I smiled a lot. Sometimes we just need to focus on showing love to others instead of focusing on all the hate and tragedy in the world.
I know there are a TON of ways to show love to people in your everyday life. One of those ways for me involves cooking. I love to bring meals to people who are in need as well as pour love into the meals I make for my families 🙂 I tend to get a little happy when it comes to making things heart shaped! {I was also really impressed to see so many other fun heart shaped food items in my feed this week!}
Needless to say, I had fun making fun shaped food this week!
Ingredients
- 6 Bell peppers- any color
- 1.5 lb ground turkey
- 12 oz tomato sauce
- 2 oz tomato paste
- 1/2 tsp Himalayan salt
- 2 Tbsp Italian seasoning
- 2 Tbsp parmesan
- 1 clove chopped garlic
- 1 Tbsp avocado oil
- 1 med shaped heart cookie cutter
Directions
- Pre-heat oven to 425*
- Brown ground turkey in a large frying pan. When completely cooked, drain in a strainer.
- Add avocado oil to the pan along with the garlic.
- Return the turkey to the pan.
- Add sauce, paste, parmesan and spices to the turkey. Stir well (test taste and add more spices if desired).
- Let sauce and turkey simmer while you prepare the peppers.
- Wash the peppers. Slice the top off, about 1 inch thick.
- Remove the seeds from the top and the inside.
- Using the cookie cutter, make a heart shape in the top of the pepper by cutting out the stem.
- Scoop the turkey mixture into each pepper. (There may be extra mixture depending on the size of your peppers)
- Add the top back on each pepper.
- Place in the oven and bake for 25-30 minutes.
- Enjoy with one(s) you love!
