German cucumber & tomato salad

Welcome back to Foodie Friday with  Annmarie and Farrah for our heritage themed week!

It is a GORGEOUS day here in Texas, which is super nice considering the week of rain and random chilly days! On Wednesday it dropped from 70-50 in a matter of an hour…that was not very fun and I am glad I had a spare long sleeve shirt in my car!

It is GO TEXAN day here in Texas, and the cowboys & cowgirls are out in full swing.  The hubs and I went to the BBQ cookoff last night and so a lot of fun outfits.

It is fun to celebrate all things Texas, especially this week that also celebrated National Heritage day.  It is fun to make foods that embrace where you came from! My grandmother and uncle on my mom’s side put together a pretty lengthy family tree a few years ago! You can read more about that and who I am related to here.

I am a mix of many different cultures, but I am 50% German, and that is my go to for recipes.  Signs of spring are all around and I wanted to make something that was light, simple and tasted of spring.  One herb that always brings that out for me is dill.  It def has a unique taste and you either love it or dislike it!

It was fun to make and eat this recipe! It was super simple and was ready to go in a matter of minutes!

  • 1/2 English cucumber (yes I see the irony here for a German recipe…lol)
  • 2 roma tomatoes
  • 1/2 cup plain Greek yogurt
  • 2 1/2 tsp fresh lemon juice
  • 1 tsp fresh dill (or more if you love it like me)
  • a pinch of Himalayan salt

Direcions

  1. Mix the yogurt, lemon juice, dill and salt in a med size bowl.
  2. Chop the cucumber and tomatoes into med size chunks.
  3. Add the cucumber and tomato to the yogurt mixture.
  4. Gently incorporate all the ingredients together.
  5. Top with more fresh dill if desired.
  6. Enjoy or store in a air tight container in the fridge.

    This looks super good, and I love that it’s so simple to make! (haha on the English cucumber bit :P!) I need to go get some cucumbers and tomatos! <3!!
