Triple chocolate zucchini muffins {gluten free}

Happy Friday friends!
I am so thankful it is Friday! It has been a bit of a busy week in every area of my life! There are some things brewing that I can not wait to share with you all, and I hope I can share within the next week or so 🙂

Last week began with a fun and crazy event at my gym.  The fitness instructors put on a showcase of many of the Les Mills classes and the members who participated were able to vote to see what new classes they will bring to the gym! It was so much fun to try new classes and get out of my comfort zone!  I was a bit wiped out from that, but it didn’t stop me from picking up the bed for our guest room! It is coming along and I hope it will be all finished soon! Amazing how this last room in the house is taking SO long! Hah
img_4631I joined a CSA last week, and I received my first batch of fruits and veggies! They are so delicious and fresh! I love how different they taste and how I know I am supporting a local organic farmer!
With all the veggies I received plus a few things I had gotten at Costco I had 2 items that were overtaking my kitchen! It worked out perfect to use many of them up for our Foodie Friday theme today!

I LOVE zucchini, and I have been making zucchini recipes all week but I still had some left.  I love adding them to so many dishes to add an extra dose of veggies! They go so well with so many recipes!



  • 5 extra ripe bananas
  • 2/3 cup melted coconut oil
  • 1/2-1 cup coconut sugar depending on the level of sweetness you enjoy
  • 2 teaspoons baking soda
  • 1/4 tsp pink salt
  • 1/2 cup raw cacao powder
  • 1 Tbsp ground cinnamon
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 3 cups gluten free flour
  • 1 large zucchini, shredded and chopped into small peices
  • 1/2 cup enjoy life chocolate chips
  • 1/2 enjoy life dark chocolate chips



  1. Preheat oven to 350*. Line 2 muffin pans with silicon cups (you can also use paper wrappers)
  2. Peel bananas and place in a large mixing bowl (I used my kitchen aid, but you can also mix these by hand). Mash bananas fully.
  3. Add in the coconut oil, mix well.
  4. Add in the coconut sugar, mix well.
  5. Add in the sprinkle of salt, baking soda, cacao powder & cinnamon, mix well.
  6. In a separate bowl, beat the eggs together and blend in the vanilla.  Add those to the banana mixture, mix well.
  7. Add in the flour until just incorporated.
  8. Gently fold in the zucchini and chocolate chips
  9. Fill the muffin cups about 3/4 full
  10. Bake for 20 min or until a toothpick comes out clean.
  11. You may have leftover batter, and if so, make additional muffins or you can use a small bread pan and make a loaf, bake about 20 min also.
  12. Enjoy

Spicy Avocado Eggs

So here is a short and sweet (or actually spicy) recipe to get your weekend off on a kick!
I also have a fun tip to share with you about how I make the perfect hard boiled egg!

Spicy Avocado Eggs


  • 4 eggs
  • water (to boil eggs)
  • 1/2 avocado
  • 1/4 tsp pink salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp (plus more to top finished eggs) paprika
  • 1 tsp sriracha sauce
  • ice cubes


  1. Place eggs in a sauce pan, cover with water.
  2. Bring water to a boil and cook eggs for 8 minutes.
  3. Remove pan from heat and fill pan with cold water for 1-2 min or until the water in the pan remains cool.
  4. Place ice cubes in the pan and let them melt. (This helps the eggs peel really easily!)
  5. Peel eggs.
  6. Slice eggs lengthwise.
  7. Pop out the yolks and put in a med size bowl.
  8. Add in avocado and spices and sriracha sauce, mix together well. 
  9. Place yolk mixture in a ziplock bag. Trim a small hole in one of the corners. 
  10. Squeeze even amounts of the yolk mixture into the egg whites.
  11. Sprinkle additional paprika and/or sriracha sauce on top. 
  12. Enjoy!

The Q & As from Julie:

1. Road, trail, or mud?
I am a road runner.  I have done a few trail races and they just aren’t for me.

2. What is your preferred distance?
Lately I have been on a 5k kick.  My favorite distance is a 10k. When I am up for the challenge I love the feeling of finishing a half marathon. 🙂

3. What is your “dream” race?
The Maui Marathon! This is the race that I first saw advertised many years ago and began my interest in running races! 

4. What fitness app do you use the most?
RunKeeper, My Fitness Pal, Pact App, & Rock My Run.

5. What do you do for cross training?
My favorite way to cross train is Body Pump.  I also like to ride my bike and swim!

6. What is your funniest running or race story!
This is only funny now that it has been a few years.  Back in 2010 a dear friend of mine, Elizabeth, and I decided to run the Nashville marathon. About 6 weeks before the race I injured my foot and was unable to run, so I decided to walk the half.  Race day came and started out beautifully.  Then the storms hit!  Thunder, lightning, torrential rain and TORNADOES! (ok, this part was NOT funny, it was a little scary at times).  I am not really sure what we were thinking at the time, but both Elizabeth and I gave our phone to another friend (Kim) who was going to cheer us on. Due to the storms we all got separated and had no way to communicate! After Elizabeth finished the race she looked around for Kim and I and could not find us.  She managed to get back to our hotel where she was safe.  After I finished the race I walked around in the rain for what seemed like hours.  After a while (and a lot of praying), I ran into Kim!  We had NO idea how we were going to find Elizabeth.  I was getting ready to call her parents in VA to see if they had heard from her when I saw a message on twitter from her! She was able to log onto twitter from her computer at the hotel to tell us she was safe!  In that moment I was never more thankful for social media!
After we knew she was safe we decided to find my rental car!  I had looked around for it in the rain but was unsuccessful.  Thankfully Kim knew where she had parked so we headed to her car.  Then we drove around the race parking lots and finally found the rental car!
After all the craziness the sun came out and we enjoyed the rest of the day with a yummy meal at the Cheesecake Factory and a local fro-yo place called Sweet Cece’s!


7.  If you have one, who is your favorite running partner? If you don’t have one, what celebrity would you most like to join you on a run?
I have a few friends I run with on occasion, which I love, but my normal running buddies are the twins I nanny for! They really enjoy going in the jogging stroller with me a few times a week.  My FAV runner, who I would love to run with is the 2014 winner of the Boston Marathon, Meb!

8. How many pairs of exercise-related shoes do you own?
I only have 3 right now.  My feet are challenging to find shoes for 😉

9. What is your favorite snack?
Healthy- Almonds and an apple.  Junky- Chocolate, specifically, Endangered Species Sea Salt & Lime Créme Filled Dark Chocolate

10. What is one thing that you can do today that you never thought you would be able to accomplish?
Complete half marathons.  I have finished 8 now! Several years ago I would never have thought that I would be able to run/walk that far!

The Q & As from Lis and Steph

1. What is your preferred sport, and why do you love it so much?
Although I love running, my FAV sport is volleyball!  I have played volleyball since I was 8 and it has always been my life long love!

2. Tell me about your worst running/fitness related injury.
The summer after my sophomore year of college (2002) I fell while running and fractured my foot.  I was in and out of a boot cast for the next 18 months as the bone was not healing correctly.  Then I had surgery to remove the bone fragment so it would not cause any more damage to my foot or the rest of my body.  Post-surgery I was on crutches till I fell and injured my shoulder.  Then it was a wheelchair for 10 weeks, a walking cast for 4 more and back to the boot as I did physical therapy.  It was about 2 full years from the original break till I was able to start to run again!

3. What type of running/workout shoes do you wear? Would you ever try something else?
I have unique feet, and the only brand that really fits me well is New Balance! I would love to find another brand that works for me, but so far I have not found any. 

4. How long have you been pursuing a healthy lifestyle for?
I have always been active, but not always healthy.  After 20 years fighting an eating disorder, I have been free from behaviors and living a healthy lifestyle the past 6 years 🙂

5. Currently, what are your short term goals vs long term goals?
Short term- Run a 5k(+) everyday in May, lose 20 more lbs, get better sleep.
Long term- Run a full marathon, run a half marathon in each state (5 down, 45 to go), lose 100 lbs.

6. Favorite running/workout gear (not including sneakers)?
I love my yoga pants, my zebra yoga mat, my polar heart rate monitor, Energybits (discount code: runchocolate) & my TuneBelt phone holder.

7. Finish this sentence: when I’m not running/working out, I’m…
Working, experimenting in the kitchen or trying to sleep.

8. What was the last great book you read?
God Loves Ugly by Christa Black

9. What’s your favorite healthy food/meal?
I love a salad with lots of veggies, nuts, seeds, chicken, fruit & avocado.

10. And your favorite non-healthy food?
Mac and cheese!
