Creamy Veggie Soup

Hello friends!
It has been a little quiet over her on the blog for the start of 2019.  I have been slowly easing into the year.  I have had a lot of things going on with health and just life, so I will be giving more of an update soon!

This week is national soup month! I don’t think there could be a more perfect food for these colder winter months than soup! I LOVE soup, but have always had a hard time finding soups I can eat with my food allergies.  I can hardly ever order soup when I am eating out, so a few years ago I began to make my own at home!

A few of my favorites over the past few years are taco soup, black bean soup, broccoli cheese soup, roasted red pepper soup, and chicken veggie & rice soup!

This week we started out in the 70s and then the temps dropped into the 30s! Needless to say, with the colder weather I was def all about making some yummy soup!  I have been on a zucchini kick lately and had a ton in my fridge and decided to make that the star of the soup!

Ingredients

  • 1/4 c ghee
  • 4 cups shredded zucchini
  • 2 cups shredded carrots
  • 2 cups broccoli slaw
  • 1/4 cup gluten free flour
  • 1 1/2 cups chicken broth
  • 1 cup organic half & half
  • Spices: Pink salt, pepper, garlic, paprika, turmeric & red pepper flakes to taste

Directions

  1. Melt ghee in large pot. Add in all veggies, sauté till soft.
  2. Sift flour over veggies and stir gently till coated.
  3. Add in liquids and gently stir.
  4. Bring to a simmer and let the liquids thicken for about 10-15 min.
  5. Add in spices to taste.
  6. Enjoy on a chilly winter day

Roast Away

Hi friends!
Happy Friday!
Opps, I just realized I never filled you in on my fun Sweat Pink sister time last weekend and some of the other good things happening.  Last weekends shenanigans will have to wait just a bit, but here are a few fun things that went on this week!

Enjoyed a little Thanksgiving feast at the kiddos school 🙂
img_7705Finally got in a few workouts after begin sick all last week.

Made some homemade bird feeders for the back yard! Kids had a blast and ate more peanut butter than we used for the feeders! Haha

Speaking of fruit, it is national vegan month.  Despite so much focus being on turkey recipes, I have seen a lot of yummy vegan recipes from some of my fellow blogger friends!  (Will post a few soon)
For my meat loving friends, this recipe really was filling, flavorful, and added lots of color to the plate!

Roasted butternut Squash with Red Pepper and Apple

Ingredients

  • 1 Med butternut squash, peeled, chopped into cubes
  • 1 Red pepper, cored and chopped
  • 1 Apple, cored and chopped
  • 2 Tbsp Avocado oil
  • Spices- Thyme and rosemary for taste

Dirctions

  1. Pre-heat oven to 425* F.
  2. Spread oil on a baking sheet covered in parchment paper or baking mat.
  3. Place chopped squash, pepper & apple on baking sheet.
  4. Add spices and mix to ensure even coating.
  5. Bake for 25-30 min or until all food is tender.
  6. Enjoy on a salad, with quinoa or just by itself!

A Little Recipe Recap!

Hello Friends!
What a week it has been!  December! How is it the last month of 2015?
It has been another super packed week!  I {slowly} began my training for my next half marathon.  After taking some days off around Thanksgiving last week, it was a bit of a rude awakening! Oh my muscles are more sore than they have been a while!  I guess that is not always a bad thing though!

It was such a packed week that I am so thankful our Foodie Friday theme this week is a Recipe Recap! I am linking up once again with Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit!!

Before I share a few of my favorite recipes from the past year, I first have a confession.  I somewhat dislike recipes!  Since I started cooking as a child, I have never really been fond of them.  I like gathering ideas and just going for it! I like to keep things really simple, and rarely make anything that has more than a few directions.  I am better about using recipes if I am baking, but that is about it. Being a part of Foodie Friday has really forced me to shift a little bit with my cooking with actually making recipes and being able to share them!  In the past I would post a fun meal I had made, but when someone would ask for the recipe I was usually lost with what to tell them.  I know that not everyone likes to cook without exact recipes.  So thank you Foodie Friday ladies for helping me to grow more in this area!

Foodie Friday: Sweet Salmon

Hello and happy happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is seafood!!

I have to admit that I am not much of a seafood person.  Over the past year I have eaten a little more fish here and there, but still am not that great at cooking it.  I came across a few recipes that looked good to me and made my own up that turned out pretty darn well!

Ingredients
1 lb of fresh caught salmon (can be cooked as a whole piece of cut into sections of 2-4)
1/3 cup of olive oil
2 cloves of garlic, minced
4-5 TBS of Bragg liquid amino (or soy sauce)
1/4 c brown sugar and a few pinches for the top
2 TBS lemon juice
2 TBS water
Salt and pepper

Directions
1. Pre-heat the oven to 425*
2. Cover a cookie sheet with foil (to prevent sticking) (Oops, I forgot this step, but it turned out ok!!)
3. Wash and dry salmon
4. Place skin side down on foil and sprinkle on salt and pepper
5. In a mixing bowl, combine the olive oil, water, lemon juice, Bragg amino, minced garlic, and brown sugar.
6. Pour the mixture over the fish and let sit for 20 min.  Make sure all the fish is covered
7. Bake for 15 minutes and then broil for 5-7 min till the top is golden and the inside is flaky and light pink.

Five Things Friday: Favorite Fall Activities!!

1. Visit a pumpkin patch and also pick apples!

2. Run. I love running pretty much any time of the year, but fall is my FAVORITE!  It was so great to have fun my first ever half marathon in the fall!  I can not wait for the next few weeks where I will tackle 15 races!

3. Bake and cook yummy holiday food 🙂

4. Have options for cute toes in sandals and getting to wear my boots!

Happy New Year!

I am a little late in getting this posted…I have been dealing with some sick toddlers who were kind enough to share their cold with me…so the past week has been lots of cuddles, naps and fluids! I finally was feeling a bit better on Saturday and went a little overboard. Went to the gym, a birthday party and lots of errands. Also did my food prep for the week. That pretty much wore me out and I was exhausted most of Sunday. So more rest for me. And a baby shower and some babysitting. I am not really that good at resting…I guess I should add that to my list of goals for this coming year…

Speaking of goals, I have a few in mind. I have never really one to make ‘resolutions’ exactly. I know that I always had some areas I want to work on each year, but for many many years it was always to lose more weight, be in better shape, eat less junk….etc etc…As I though about my goals for this year, I really wanted to focus less on the areas I usually focus on, and set my goals as something more tangible! Right now I have a few health/fitness goals in mind, and other goals that are related to non-health/fitness areas of my life.


Here are my health/fitness goals for 2014

  1. Run 33 races
    This year I will be turning 33. I was inspired by my second elf from the Elf4Health challenge as she completed 30 races in 2013 for her 30th birthday! The more I thought about what she did, the more inspired I became! So THANK you Lauren for your inspiration!
    I am already signed up for a few races. It is going to be a mix of official races and virtual races! I know that with my sometimes crazy schedule this will be the best for me. I want to make at 20 of them official races! I will be doing 5ks, 10ks, and at least one half. I would really like to do 4 half marathons, so I am looking into that right now. It is hard to plan some of the races past April since I don’t know my entire schedule for the year yet. I will post my race plans as soon as the become official! One race that I am REALLY excited (and REALLY nervous) about is the DC Cherry Blossom 10 miler. I was really surprised to get an email saying that I was picked for the lottery!

  2. Improve my speed and endurance with running
    I have never been a fast runner. I have my moments sometimes when I run faster than a 10 min mile pace…but it only lasts for 30-60 seconds. I am working on getting my workout plan together to improve on my speed and my endurance.

  3. To become a Les Mills Body Pump instructor
    I have had this desire for the last 9 months or so. I have really enjoyed the classes I have taken over the past year. My instructor has been telling me since day 1 that I need to get certified. So lets make this the year!

  4. Learn more about nutrition and what MY body needs
    Over the past few years I feel I have learned more about the types of foods that are better for the body, and I feel I eat clean and healthy 80% of the time. There are times when I have struggled with certain foods, or seeing other ‘healthy’ people and what they eat, and I have realized that it might not be the best for ME just because someone else might eat it. So more self discovery, and not feeling guilty or bad about taking care of myself better.

  5. Sleep more
    It is not a surprise that this is an area in which I KNOW I need to work on. I have struggled on and off with insomnia for YEARS. Over this past year it has been more of a challenge for me to get the proper amount of sleep that I need. I really don’t even think I know what that is. I am setting myself boundaries with TV watching, phone usage, computer time, and focusing on getting myself to bed. I am really hoping that more regular sleep is only going to help me in ALL the other areas in my life that I want to improve on!

  6. New recipes
    I want to try at least 2 new recipes a month and also post 1 recipe a week on here.

  7. The Blog
    Hello, I need to be more consistent! I want to post 2-3 times a week on top of a new recipe that I have created or have tried.
    I also want to have more guests on my blog. I love hearing what other people have to share about. (So if you have a topic you want to share about, let me know!)
    Learn MORE about how my blog even works and the tools that are available to me! (Any experts out there???)

  8. Learn how to do my hair
    This might sound a little silly, but I am a 32 yr old who doesn’t exactly know what to do with a curling iron! My hair is SUPER long, and if it isn’t straightened, in a messy bun or a braid I am at a loss. I have tried you-tube and Pinterest, but I need to try again and really get serious about it. I don’t need to do my hair every day, but once a week I would love to know what to do with it!

  9. Write more letters
    I love a good text or phone call, but I really miss the days of letter writing! I grew up writing letters to relatives and some pen-pals.

  10. Get my card company on Etsy
    I need to learn more about Etsy and get my product out there 🙂

  11. Read more
    I would like to get through one book a month.  I had this goal last year and it was a bit of a failure.  So I want to try again!
  12. Become an even better and more supportive wife to my dashing husband
    We have had some chats about what we would like to accomplish as a couple and I am excited for this year together!

There are a few other goals that I have in mind, but I need to work through some of the details before I share them!
