Plantain Chips with Guacamole

Happy Friday!

If you have known me for any period of time, you most likely know my most favorite place on earth, Costa Rica!  The country is beautiful, the people are the most friendly I have met in all my travels, and the food, oh the food!  Since my first trip in 2000, I have been there a total of 10 times.  My last trip was Dec 2015 where I took my husband for the first time! It was so fun to experience a country I loved through his eyes!

Like I said, the food is so amazing! I have loved learning to cook typical Costa Rican food on my different trips! My BFF who lives there and his mom have taught me many things over the years!

Since we are celebrating international food day today for Foodie Friday, I will share with you one of the most simple things I made that is inspired by my times in Costa Rica!

Plantains Chips with Guacamole


  • Large plantain
  • Avocado oil- to coat pan and plantain chips
  • Himalayan Salt- to taste


  1. Peel plantains and slice into thin chips (I used my food processor, but you can use a sharp knife too).  Place them in a bowl.
  2. Drizzle avocado oil on the chips and season with salt to taste.
  3. Coat a frying pan with avocado oil and bring to medium heat.
  4. Place a layer of the chips in the pan and cook for 3-5 min.  Flip the chips and cook for another 3-5 min, or until golden brown on both sides.
  5. Serve with guacamole or enjoy plain!

Costa Rica, part 4!

Another little throwback to Costa Rica.
I have to say that although I loved each day and all the activities we did on the first few days in Costa Rica (pt 1, pt 2, pt 3), this day was probably the most relaxing day I have had in my entire life!  The pictures really do NOT do justice, and I will totally be doing this tour again one day!  I highly recommend it!

We woke up early, snagged some breakfast and were ready to get picked up at 6:30am!

We took a mini bus ride to meet up with the larger tour bus.  We had another nice tour guide.  Only issue on the bus was the poor guy behind us was motion sick.  Use your imagination…I am just glad he was ok!


After a 90 min ride we made it to Puntarenas, and then to the boat!  It was a lovely 2 hour ride across the water out to Tortuga Island!

The boat ride was really relaxing and gorgeous!

Once we got to the island they told us about some of the activity options available.  Snorkeling, canoeing, jet skiing, and volleyball.  As exciting as all those sounded, I was really just needing a day to CHILL on the beach!

So for several hours, that is exactly what we did!  We did enjoy an awesome lunch on the beach, splashed in the water a bit, but mostly just relaxed!  I think I took 4 mini naps! It was pure bliss!

I was a little sad when it was time to leave.  I felt for the first time in a LONG time, I really was able to really relax and not think about all of what was going on in my life.  It was just what I needed.
The boat ride home was beautiful! I spent some time in the pool on the boat, ate some yummy fruit and read a little.

Costa Rica, Pt 2!

Hello friends and Happy New Year!  Is it already day 6 of 2016?  I am so behind on what I wanted to post the first few days of January, but I decided to finally buckle down and I cleaned out my office this past weekend!  It was a job for sure!  I will post some pics soon of the office progress, but first, more Costa Rica pics!

On our 3rd day we took a trip up the Arenal Volcano!  I have been here a few times with my friends during past trips, so it was really fun to have the ‘tourist’ experience.  After another delightful breakfast, we were picked up and headed to La Fortuna.
It was a bit of a drive and we also stopped a few times to see some touristy things. We did a little souvenir shopping and also visited the largest ox cart in the world as well as a beautiful church.  Our tour guide was amazing! I learned a lot about Costa Rica that I had never heard before.

When we arrived in La Fortuna, we had lunch.  We were given some choices before we arrived and both the Hubs and I decided on the traditional lunch.

The weather was gorgeous!  I had never been up to this area before without it being super cloudy and misty.  It was a nice change! And we were able to see bits of the top of the volcano.
Arenal is an active volcano.  It last erupted in 1968 but still has sulfur pouring out of it daily.
We went around the backside of the volcano and did a short hike up to a beautiful view.

After the awesome views we headed back to the bus and drove to the Tabacon Hot Springs.
They were really wonderful!  It was a gorgeous resort with awesome little hot pools all over.  I hung out in a waterfall for a while.  We then had a delicious dinner!

After our dinner we got back in the bus and headed back to San Jose.  It was another long drive, but thankfully I was able to sleep for a bit.
If you ever get the chance to go to the Arenal Volcano & hot springs I recommend the other hot springs, Baldi.  Both are very beautiful, but the layout and the feel of the springs in Baldi better than I did at Tabacon.  Don’t get me wrong, it was still beautiful and relaxing, but I would pick Baldi first.

Flash Back to Costa Rica Pt. 1

Happy New Year!!
I am back, sort of.
December was a roller coaster of a month.  It was a mix of work, traveling and grieving the loss of a dear friend.  I have to admit that I have been running away from my feelings a bit.  I have never really been that good at dealing with loss.  Externally I seem to do ok, hold things together and support others who are also dealing with the same loss, but on the inside I am a bit of a mess.
So our trip to Costa Rica came at the perfect time for me to escape a little and process what has happened this month a little better.
I don’t want to make this post all down and depressing even though those feelings have haunted me the past month.  Our trip was also really fun and relaxing.
Costa Rica has always been a place where I have always felt utter peace.  No matter what my life was throwing at me, my trips down there were always wonderful.  I am so happy that I was finally able to share Costa Rica with the Hubs.  This was my 10th trip and his first!  It did not disappoint one bit. Well only that we wish it was a longer trip!  I took over 1000 pics on the trip, and while I want to share many of them with you, my computer has decided it wants to be cranky so I only have some of them.  I will share our first 2 days with you and the rest ASAP!

We left Houston in a nasty thunderstorm.  Thankfully we had zero issues with our flight out!  We even landed early in San Jose.  My BFF picked us up at the airport and took us to our hotel in the city.  Boy it felt good to be back!

We both were super hungry when we finally were settled in our room and room service was available 24/7 and it was yummy!
We got a little sleep and woke up to the birds chirping and a delicious breakfast!

My BFF Jeffrey came and picked us up and we headed out to the La Paz Waterfall Gardens. I have been to the main waterfall several times before, but I had NO idea there was a huge wildlife park there also!  It was so peaceful and beautiful.  The animals were simply amazing! The weather was a little cloudy and misty, but it felt great!
We did a lot of walking and hiking up and down the trails, but the views were so worth it!

Seeing amazing animals in their natural habitat was so beautiful!  Many different types of snakes (in glass enclosures!!!), butteries, insects, humming birds, frogs, monkeys, and jaguars.  All the plants and flowers were also so stunning! The pictures really don’t do justice of the beauty!


There was a gorgeous aviary filled with toucans, wild turkeys, scarlet macaws, grosbeaks, tanagers.  Both the Hubs and I were able to have a toucan land on us.  They were really gentle…and then one pooped on my head.  That gave everyone a good laugh!

It was an amazing way to start off the trip!

Weekend Recap!

Happy Monday y’all!   I am linking up today with HoHo Runs and MissSippiPiddin for Weekly Wrap!
Well, fall weather has finally settled in.  This morning it was in the 50s! The humidity was gone and it was gorgeous out!  I love this kind of weather.  Cool mornings warming up to a pleasant mid-70 degree day!  I really can’t say I miss the northern weather.
IMG_2306It has a fun filled weekend like normal!  Ha
Friday night I had a *tough* babysitting job.  It is rough when the kids are already in bed and I have to do it chill 😉  It was a nice end to a bit of a nutty week!

I woke up early Sat morning to news that my nephew had arrived!! Yahoo!  I got to meet him over FaceTime. He is so sweet!
Saturday I had big plans to going to the gym for a class or so, but I slept really cruddy Friday night so I ended up resting some before doing housework and my own home workout.
The hubs went out of town for a memorial service for one of his nephews.  Not the best reason to see family, but he had a nice time with his sister and some other relatives.
I was able to get some work done at our house and rearranged some furniture in anticipation of some new items!!
Later in the day I had the privilege of taking care of 2 of my favorites overnight!  We of course had a blast!  Made tacos, had movie night and a huge cuddle fest!
IMG_2217Sunday we all woke up and the kids wanted biscuits, so biscuits I made, along with some eggs, fruit and some gravy with ground bison!
Mid afternoon the Hubs came back into town and we got our new to us couch loaded into his truck.  Plodded back to our house and got the couch in the house.  Then headed off to pick up our new-to-us TVs.  It was a bit of a production getting them home.  For some reason, the 3 main roads that head south were all backed up!  Instead of it taking 10-15 min to get home it took almost an hour.  It was an annoyance but I kept reminding myself that we were safe, not in an accident and a-ok.  We sat in traffic and belted out Natalie Grant’s new single!
When we got home the Hubs warmed up some dinner while I got things ready to move furniture!  It was a bit messy but ended up turning out pretty well!

The new set up is homey and we have tons of space for anyone who wants to come over 🙂

That is about it for the weekend!  I still have lots of work to do on the rest of the house, and especially my office….for being an organizing queen, the disarray is driving me batty!  My goal is to have it mostly finished by tomorrow night! I would like the housekeepers to actually be able to clean when they come!  😉

To end the weekend on a fabulous note, I finally booked our last trip of the year!  I am taking the Hubs to Costa Rica!  He has never been and I have not been down for 7 years!!!  This will be my 10th time and I can not wait!  I was able to find an awesome deal.  It is like Christmas came early!

Seven Things About Me:

1. Ever since I was in third grade, my passion for sports was volleyball!  I loved it so much that it became my dream to play for the Olympic team.  Unfortunately that dream crumbled when I found out I had several tumors in my back/on my scapula and they had to remove them along with other bone and muscle.  I still enjoy a good pick-up game, and my serve is still pretty great if I do say so myself 🙂  Now I focus on my running instead!

2. I have lived in 13 states! Minnesota, Colorado, North Dakota, South Dakota, Michigan, Wisconsin, Illinois (2 times), New York, Pennsylvania (4 times), Louisiana, Maryland, Virginia, and Texas.
I always did really well in geography classes!  Haha

3. My favorite place to visit is Costa Rica!  I have been there 9 times, but it has been a while now!  I must plan a trip ASAP!

4.  I used to HATE salads!  As in, I would have one small lettuce leaf, and then pile on all the other ingredients.  I am sure they were not really super healthy when I used to eat this this way (circa 2000).  I am so glad I realized that I actually DO like salads, but only when the ingredients are amazing!

5.  We used to have a dog! But sadly he ran away…Once we have a better yard/fence/house, I want another dog.  And one that I can run with would be ideal!
Any advice about running with dogs and which breed is the best is welcome!!!

6. My goal for my 40th birthday is to have completed a half marathon in each state!  5 states down, 45 to go in the next 7 years!  And I am thinking Hawaii for the big 4-0!!

7. If I could have any animals as pets and they would live in harmony in my back yard, I would have an elephant, and a zebra!
