Blackberry & Avocado Salad 

Hello all!  I am slowly getting back to blogging. My sweet friend Emily passed away 2 weeks ago and it really threw me for a loop.  I miss her so much, but I am so glad she is no longer in pain and suffering from the cancer that had taken over parts of her body.  She will live on in the legacy of her amazing husband and sweet kiddos.

On top of dealing with the grief of losing Emily, Houston (and other parts of TX) have been getting so much rain and the flooding has been terrible.  Thankfully we have not had any issues at either of our houses, but not everyone has been as fortunate.  I usually LOVE water, but I am at the point where I would be happy to not see rain for the rest of the summer! Sadly we have more and more of it in the forecast 😦

In the midst of the rainy weather I decided to get creative with some of the raw fruits and veggies I had laying around.

Blackberry and Avocado salad

Ingredients

  • 2 cups of lettuce (I prefer romaine and spinach)
  • 1/4 cup cucumber, cut into cubes
  • 1/2 red pepper, cut into cubes
  • 1/2 grilled chicken, cut into cubes
  • 1/2 tomato, cut into cubes
  • 1/4 cup blackberries
  • 1/2 avocado
  • 1 TBS red pepper hummus

Directions

  1. Place lettuce on a large plate.
  2. Add fruits and veggies.
  3. Add avocado and/or hummus in place of a dressing.
  4. Enjoy and be refreshed!

Pinterest Interest: Taco Soup

Happy Friday friends!  I am keeping this short as I am still on the mend from a nasty cold.  This week consisted of LOTS of rest, some Netflix and many bowls of soup for myself, the Hubs and my nanny kiddos!

I have had this taco soup recipe floating around in my mind the past few weeks, and this week ended up being perfect for making it due to being sick and it fit in our theme perfectly!  I did make a few changes to accommodate my allergies, but I think it still turned out really great!

Taco Soup

Ingredients

  • 1 lb. Ground turkey, browned and drained
  • 1 container Chicken Broth {14.5 oz.}
  • 1 can Kidney Beans {16 oz.}, drained
  • 1 can Black Beans {15 oz.}, rinsed and drained
  • 1 can Petite Diced Tomatoes + 1/2 liquid from can {14.5 oz.}
  • 1 can Corn + 1/2 liquid from can {15 oz.}
  • 1 can Original Rotel – Diced Tomatoes & Green Chilies {10 oz.}
  • 3 tbsp. Homemade Taco Seasoning (equal parts, about 1/4 tsp each): black pepper, cumin, smoked  paprika, garlic, chili powder, oregano, crushed red pepper)
  • ½ tsp. Himalayan Salt
  • Toppings: Chips, avocado, Sour Cream, Shredded Cheddar & chopped olives (or really anything else you usually put on a taco

Directions

  1. Brown ground turkey into small pieces in a large pot.
  2. Add remaining ingredients {except garnish ingredients} to crockpot or large stove top pot and stir well.
  3. Crockpot- Cook on HIGH for 2 hours, or LOW for 4 hours.
    Stove top- Cook on med heat for 60-90 min (this was my lazy version since I really had zero energy to dig out my crockpot this week.
  4. Top with the toppings of your choice!
  5. Enjoy this cozy meal!

Foodie Friday: Healthy Snacks!

Happy Friday, and welcome once again to Foodie Friday!! I am once again am linking up once again with my Favorite Foodie Friday ladies, Farrah from Fairyburger, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING! Today our theme is Healthy Snacks!

If you are anything like me, you are always on the go!  This week was even more nutty than normal!  Along with my normal work schedule, I had some extra tutoring sessions, date night at the Rockets game, a massage and some errands!  Each day was different and on-the-go more than usual, so I had to plan my meals a little more than carefully.  That also meant planning some snacks to bring along!  I love to have healthy snacks ready to go at a moments notice!  Usually they involve nuts, fruit, chopped veggies or a protein bar (like Luna, KIND, or Larabars).  I wanted to branch out a little and my recipe from last week (Chocolate Almond Butter Pie) inspired me!

Chocolate Almond butter
Ingredients
1. 2 cups raw almonds
2. 1/2-3/4 c organic coconut oil
3. 1/4 c Chocolate Chips (I used Enjoy Life semi sweet mini chips)

Directions
*This works best in a food processor, but a high quality blender would also work!*
1. Place the almonds in the food processor, place on high speed 1-2 minutes

2. Add the coconut oil, about 1/4c at a time till it is the desired consistency. Blend on high speed for another 2-3 minutes

3. Add in chocolate chips.  Almond butter should be warm and chocolate chips will melt easily.  Pulse on high speed until all chips are mixed in.

4. Place in an airtight storage container.

*You can keep in the refrigerator, but it is not necessary.  It will make the almond butter more firm.*
I LOVE to eat mine with fruit.  Apples, pears and bananas are my favorite!

Foodie Friday: Chicken Noodle Soup

Hello and happy happy Friday (again)!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is One-Pot-Meals.

One of my go-to meals in the winter time is a bog pot of chicken noodle soup!  It is simple to make, and can feed many people, or be saved and pulled out on those chilly nights!  I know it is not as cold here in TX as many parts of the country, but for Houston, it has been a little CHILLY!  I hope that everyone is staying warm and filling up with delicious warm food! So this is a one-pot-meal for the most part, once the chicken is cooked.

Chicken Noodle Soup
Ingredients
1 – package boneless, skinless chicken breast
2 – 16 oz cartons of chicken broth
16oz – water
2 – 8 oz bag of mixed veggies
1 – 16 oz container of pasta (I used gluten free)
Spices to taste- Salt, pepper, paprika, garlic, etc

Directions
1. Cut chicken into bit size chunks, brown with garlic in butter or oil.
2. Pour broth and water into a large pot.  Bring to a boil.
3. Add frozen veggies and noodles.  Boil for time it takes to cook noodles.
4. Add in the chicken.
5. Add more spices to taste.
6. Enjoy 🙂

Foodie Pen Pals, October

Well, it is that time of month again to reveal the Foodie Pen Pal package I received this past month.  Normally, I am super excited about posting…however, this package was very different from what I normally receive!!

Again, this is not typical of what I have received in the past.  I hate to be a Negative Nancy, but I was a little disappointed with this package.  Oh well, I guess I will be drinking a lot more tea over the next few weeks.

If you want to get involved with the Foodie Pen Pals here’s a detailed explanation of the program:

-On the 5th of the month, you will receive your pen pal pairing via email. It will be your responsibility to contact your pen pal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Pen pals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your pen pal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
– Foodie Pen pals is open to US, Canadian residents & European residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

Five Things Friday: Five Favorite Fuels

Welcome to another Five Things Friday!  Today we are chatting about Five Favorite Fuels (for running or other fitness activities)!

There are many things that I used to fuel myself these days for my workouts, training and races!

3. Real food!  Smoothies, fruits/veggies, salads. These are a part of my daily intake, and I know they fuel me to have the best workouts possible!

4. 5. This is more of a recovery drink, but tart cherry juice has been helping me SO much with soreness and inflammation after hard workouts and runs!!

Foodie Friday: Quick and easy 30 min meals

Happy Happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Quick and Easy, 30 min meals!! The past few weeks have been even more busy than usual, so pretty much every meal I have been making has been close to 30 min.  Some even less since time has been so sparse.  This recipe has been one that I can whip together in about 20 min.  You can mix and match different ingredients, and just have fun with it  🙂

 

Turkey Taco Salad

Ingredients
1 TBS coconut oil
1- lb ground turkey (can use ground beef if that is what you prefer)
1 small can green chilies
1 Red pepper chopped
2-3 cups your choice of lettuce, chopped;  I use a combo of spinach and romaine
2 Roma tomatoes chopped
1 can black beans, drained and rinsed
1/2 cup shredded cheese
1 avocado
1/2 cup plain yogurt
Spices for flavor.  I use my homemade taco and guacamole spice mixes.

Directions
1. Melt coconut oil in pan, add ground meat with chilies, red pepper and spices.  Brown together.

2. While meat cooks, chop up lettuce and tomato, shred cheese, prep beans.

3. Remove avocado from skin and mash in a bowl.  Mix in yogurt and spices.

4. Add all ingredients into a large bowl and mix (or individual bowls and each person builds their own salad.

5. Can pair with some chips and salsa
6. Enjoy
