Year Recipe Recap

Hello friends and happy Friday!
I hope you all enjoyed your Thanksgiving.  I know we had some delicious food and have so much to be thankful for this year.

Life has been pretty crazy lately between some travels, getting over bronchitis, pet sitting, getting things settled with the hubs new job & car, making plans for an upcoming market I will be selling my homemade beauty products at, settling travel plans for the holidays, studying, and attempting to get rest and workouts in! And I decided last night to have a small holiday party before all the craziness begins!
I have been doing lots of cooking, but not a whole lot of recipe creation (unless you count my first attempt at stuffing that turned out awesome), so I want to bring back some recipes today from earlier this year!

Spicy Avocado Eggs

Hi there friends!

So here is a short and sweet (or actually spicy) recipe to get your weekend off on a kick!
I also have a fun tip to share with you about how I make the perfect hard boiled egg!

Spicy Avocado Eggs

Ingredients

  • 4 eggs
  • water (to boil eggs)
  • 1/2 avocado
  • 1/4 tsp pink salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp (plus more to top finished eggs) paprika
  • 1 tsp sriracha sauce
  • ice cubes

Directions

  1. Place eggs in a sauce pan, cover with water.
  2. Bring water to a boil and cook eggs for 8 minutes.
  3. Remove pan from heat and fill pan with cold water for 1-2 min or until the water in the pan remains cool.
  4. Place ice cubes in the pan and let them melt. (This helps the eggs peel really easily!)
  5. Peel eggs.
  6. Slice eggs lengthwise.
  7. Pop out the yolks and put in a med size bowl.
  8. Add in avocado and spices and sriracha sauce, mix together well. 
  9. Place yolk mixture in a ziplock bag. Trim a small hole in one of the corners. 
  10. Squeeze even amounts of the yolk mixture into the egg whites.
  11. Sprinkle additional paprika and/or sriracha sauce on top. 
  12. Enjoy!

Gluten Free Roasted Veggie & Bacon Quiche! 

Hello friends! Happy Friday! The sun is finally out in full force after this week of rain and flooding!  With all this rainy weather I had been craving some comfort food.  I saw this recipe on pinterest and it sparked an idea in me.  So I took some of the recipe but also modified to to add in some delicious roasted veggies!

 Gluten Free Roasted Veggie & Bacon Quiche!
Ingredients

  • 1 (9-inch) deep dish frozen pie shell
  • 5 large eggs
  • 1 cup heavy cream
  • ¼ cup mayonnaise
  • 1½ tsp of each spice: garlic, black pepper, paprika, Himalayan
  • 1 cup roasted veggies (I used broccoli, butternut squash & red pepper)
  • 3 slices of turkey bacon, chopped into cubes
  • 1½ cup shredded cheese (I used goat gouda)
  • 1 TBS avocado oil

Directions

  1. Pre-heat oven to 425*
  2. Line a baking sheet with foil and enough oil to cover the bottom of the pan.
  3. Place fresh/raw veggies & bacon on the pan and lightly cover them in oil and spices to taste.
  4. Cook for 15-20 min.
  5. Also pre-cook the pie shell for about 12 min while the veggies roast.
  6. While that roasts, mix together the eggs, cream, mayonnaise, and spices, set aside.
  7. Let the veggies/bacon cool then pulse lightly in a food processor until everything is in small pieces.

  8. Readjust the oven temp to 350*
  9. Fold the veggie/bacon mixture & 1 cup of cheese into the liquid mixture.
  10. Pour into the pie shell.
  11. Cover the rim of the pie shell with aluminum foil or a pie shield.
  12. Sprinkle the remaining 1/2 cup of cheese on top.
  13. Bake for 50-60 minutes or until the center is set when gently shaken. Cover the edges of the crust with aluminum foil, if needed to prevent over browning.
  14. Allow to cool to warm before cutting.
  15. Enjoy!

This recipe is more complex than my normal recipes.
I actually doubled it and made some crust-less quiches in muffin tins.  Perfect for breakfast on the go!
I would also recommend if you are going to make this to pre-roast the veggies and even prep everything the night before and then cook it closer to the time the meal due to its long prep time!

Foodie Friday: Gluten Free Crustless Quiches

Happy Friday y’all!  Is it just me, or is this month FLYING BY!  I can not believe it is almost November!  I have a feeling that the rest of the year is going to FLY by!
This weeks theme of kitchen cleanse came at a great time!  As I have been working more on getting better with food prepping it was time to clean out the fridge!

Ingredients

  • 3 cups veggies (I used pre-roasted eggplant, squash, peppers, zucchini and spinach)
  • Salt, pepper, garlic, paprika to taste
  • 8 eggs, beaten
  • 1/3 cup shredded cheese

  

Directions

  1. Pre-heat oven to 350* F
  2. Mix all the veggies together in a large bowl with the spices
  3. Divide and coop veggies into a well greased muffin tin (should loosely fill each cup)
  4. Sprinkle a pinch of cheese onto each veggie cup
  5. pour 1/4-1/3 of egg into each cup, covering the veggies
  6. Bake for 20-25 min
  7. Enjoy

Foodie Friday: Hot & Spicy Egg Nest

 

Hello and happy happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Hot & Spicy.

Today I will be sharing with you one of the staples I make in my house.  It is super simple and you can mix and match the ingredients to tailor to what you like and have on hand!

Hot & Spicy Egg Nest
Ingredients (for 2 people, increase for more ;0 )
1 TBS coconut oil
1 large chicken sasuage
1/2 c frozen spinach
1/2 c chopped peppers
1/2 c chopped asparagas
2-3 eggs
Spices: Red pepper flakes, garlic, paprika, cayenne pepper, black pepper
about 1 tsp each, but add more if you like it super spicy!

Directions
1. Melt coconut oil in frying pan. Chop veggies and meat.

2. Add in sausage and veggies and spices. Cooked thoroughly.

3. Break eggs into a separate bowl, try to keep the yolk intact.

4. Add eggs on top of the veggies.  Cook for 2-3 minutes.

5. Carefully flip the eggs.  Cook for another 2-3 minutes.  Add more time if you do not like a runny yolk.

Foodie Friday: Healthy Breakfast Makeover

Happy Friday!  Something about a holiday during the week seems to throw everything off.  Anyone else feel this?  All week I could not remember what day it was.  Yesterday I was able to pull it together and remember since it was garbage day!

Anyways, on to a more exciting topic, FOOD! Ever since I was a child I have loved eggs.  I have tried all different types of eggs, and one of my most favorite ways to have eggs are in an omelette.  However, as a child I was not super healthy in the choices I put in my omelettes.  Today I will share a new recipe that I have been making on and off for the past 2 years. It is simple, delicious, and can be tailored for any palate!

Mini Egg Muffins

Ingredients
1. 4 eggs
2.  2 TBS coconut oil (1 for cooking, 1 for greasing)
3. 2 cups spinach
4.  1 small can green chilies
5. 1 cup broccoli slaw
6. 1 chopped red pepper
7. 10 cherry tomatoes sliced into quadrants
8. 3-4 slices of turkey bacon (nitrate and nitrite free), chopped into small peices
9. 1/2 cup grated cheese (I use Gouda goat cheese)
10. 1/3 cup milk (I use unsweetened almond milk
11. Spices of choice.  I used 1 tsp of my EGG spice mixture.

Directions
1. Pre-heat oven to 350 degrees.  Grease a 12 cup muffin tin with coconut oil.
2. Saute all veggies/meats in 1 TBS coconut oil for about 10 min.
3. scoop about 1/3 cup of mixture into each muffin tin.

4. Place a small sprinkle of cheese on top each veggie/meat scoop.

5. Wisk together eggs, milk and spices.  Scoop a little less than 1/4 c into each muffin cup. IMG_0136
6. Place in oven and bake for 15-20 min depending on your oven.  IMG_0137
7. Enjoy.

The beauty of these little muffins is that you can add whatever ingredients float your boat!  They can also be reheated pretty easily for a breakfast on the go!
