Triple chocolate zucchini muffins {gluten free}

Happy Friday friends!
I am so thankful it is Friday! It has been a bit of a busy week in every area of my life! There are some things brewing that I can not wait to share with you all, and I hope I can share within the next week or so 🙂

Last week began with a fun and crazy event at my gym.  The fitness instructors put on a showcase of many of the Les Mills classes and the members who participated were able to vote to see what new classes they will bring to the gym! It was so much fun to try new classes and get out of my comfort zone!  I was a bit wiped out from that, but it didn’t stop me from picking up the bed for our guest room! It is coming along and I hope it will be all finished soon! Amazing how this last room in the house is taking SO long! Hah
img_4631I joined a CSA last week, and I received my first batch of fruits and veggies! They are so delicious and fresh! I love how different they taste and how I know I am supporting a local organic farmer!

With all the veggies I received plus a few things I had gotten at Costco I had 2 items that were overtaking my kitchen! It worked out perfect to use many of them up for our Foodie Friday theme today!

I LOVE zucchini, and I have been making zucchini recipes all week but I still had some left.  I love adding them to so many dishes to add an extra dose of veggies! They go so well with so many recipes!

Ingredients

  • 5 extra ripe bananas
  • 2/3 cup melted coconut oil
  • 1/2-1 cup coconut sugar depending on the level of sweetness you enjoy
  • 2 teaspoons baking soda
  • 1/4 tsp pink salt
  • 1/2 cup raw cacao powder
  • 1 Tbsp ground cinnamon
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 3 cups gluten free flour
  • 1 large zucchini, shredded and chopped into small peices
  • 1/2 cup enjoy life chocolate chips
  • 1/2 enjoy life dark chocolate chips

 

Directions

  1. Preheat oven to 350*. Line 2 muffin pans with silicon cups (you can also use paper wrappers)
  2. Peel bananas and place in a large mixing bowl (I used my kitchen aid, but you can also mix these by hand). Mash bananas fully.
  3. Add in the coconut oil, mix well.
  4. Add in the coconut sugar, mix well.
  5. Add in the sprinkle of salt, baking soda, cacao powder & cinnamon, mix well.
  6. In a separate bowl, beat the eggs together and blend in the vanilla.  Add those to the banana mixture, mix well.
  7. Add in the flour until just incorporated.
  8. Gently fold in the zucchini and chocolate chips
  9. Fill the muffin cups about 3/4 full
  10. Bake for 20 min or until a toothpick comes out clean.
  11. You may have leftover batter, and if so, make additional muffins or you can use a small bread pan and make a loaf, bake about 20 min also.
  12. Enjoy

Blackberry & Avocado Salad 

Hello all!  I am slowly getting back to blogging. My sweet friend Emily passed away 2 weeks ago and it really threw me for a loop.  I miss her so much, but I am so glad she is no longer in pain and suffering from the cancer that had taken over parts of her body.  She will live on in the legacy of her amazing husband and sweet kiddos.

On top of dealing with the grief of losing Emily, Houston (and other parts of TX) have been getting so much rain and the flooding has been terrible.  Thankfully we have not had any issues at either of our houses, but not everyone has been as fortunate.  I usually LOVE water, but I am at the point where I would be happy to not see rain for the rest of the summer! Sadly we have more and more of it in the forecast 😦

In the midst of the rainy weather I decided to get creative with some of the raw fruits and veggies I had laying around.

Blackberry and Avocado salad

Ingredients

  • 2 cups of lettuce (I prefer romaine and spinach)
  • 1/4 cup cucumber, cut into cubes
  • 1/2 red pepper, cut into cubes
  • 1/2 grilled chicken, cut into cubes
  • 1/2 tomato, cut into cubes
  • 1/4 cup blackberries
  • 1/2 avocado
  • 1 TBS red pepper hummus

Directions

  1. Place lettuce on a large plate.
  2. Add fruits and veggies.
  3. Add avocado and/or hummus in place of a dressing.
  4. Enjoy and be refreshed!

Gluten Free Roasted Veggie & Bacon Quiche! 

Hello friends! Happy Friday! The sun is finally out in full force after this week of rain and flooding!  With all this rainy weather I had been craving some comfort food.  I saw this recipe on pinterest and it sparked an idea in me.  So I took some of the recipe but also modified to to add in some delicious roasted veggies!

 Gluten Free Roasted Veggie & Bacon Quiche!
Ingredients

  • 1 (9-inch) deep dish frozen pie shell
  • 5 large eggs
  • 1 cup heavy cream
  • ¼ cup mayonnaise
  • 1½ tsp of each spice: garlic, black pepper, paprika, Himalayan
  • 1 cup roasted veggies (I used broccoli, butternut squash & red pepper)
  • 3 slices of turkey bacon, chopped into cubes
  • 1½ cup shredded cheese (I used goat gouda)
  • 1 TBS avocado oil

Directions

  1. Pre-heat oven to 425*
  2. Line a baking sheet with foil and enough oil to cover the bottom of the pan.
  3. Place fresh/raw veggies & bacon on the pan and lightly cover them in oil and spices to taste.
  4. Cook for 15-20 min.
  5. Also pre-cook the pie shell for about 12 min while the veggies roast.
  6. While that roasts, mix together the eggs, cream, mayonnaise, and spices, set aside.
  7. Let the veggies/bacon cool then pulse lightly in a food processor until everything is in small pieces.

  8. Readjust the oven temp to 350*
  9. Fold the veggie/bacon mixture & 1 cup of cheese into the liquid mixture.
  10. Pour into the pie shell.
  11. Cover the rim of the pie shell with aluminum foil or a pie shield.
  12. Sprinkle the remaining 1/2 cup of cheese on top.
  13. Bake for 50-60 minutes or until the center is set when gently shaken. Cover the edges of the crust with aluminum foil, if needed to prevent over browning.
  14. Allow to cool to warm before cutting.
  15. Enjoy!

This recipe is more complex than my normal recipes.
I actually doubled it and made some crust-less quiches in muffin tins.  Perfect for breakfast on the go!
I would also recommend if you are going to make this to pre-roast the veggies and even prep everything the night before and then cook it closer to the time the meal due to its long prep time!

Baked Apple Smoothie 

Happy Friday my friends!
Today is April Fool’s day, and honestly I have never really been a big fan of the day.  Most of the jokes I have experienced have not been that funny.  So today I have something a little different for y’all today!  A delicious recipe with a surprise ingredient that until this week I would have never thought to use in a recipe.
Thanks to my partnership with Fit Approach I have been able to try several different Manitoba Hemp Hearts.  This time I received a few of their new Hemp Heart Bars to try! Can we say yes please!!  I have been a fan of Manitoba Harvest products since I first tried them a few years ago!  These bars are no exception! The bars come in 3 flavors: vanilla, chocolate and apple cinnamon. The bars contains 10 grams of plant-based protein and 10 grams of omegas.  Sounds pretty good right?  On top of that, they taste really great too!  I was able to taste the chocolate and apple cinnamon one, but I am sure the vanilla one is equally yummy!

I enjoyed the chocolate one on a super busy day, and it kept me fueled up and going!  The apple cinnamon one I used as my secret ingredient for the recipe I am sharing today!  I really don’t know how I got the idea, because I have never thought about using a bar in a smoothie before, but it seemed to work well 🙂  It even came out tasting like a dessert, but with a healthy vibe to it 🙂

Baked Apple Smoothie
Ingredients

Baked Apple

  • 3 organic apples, washed, peeled and cut into semi-this slices
  • 2 TBS clarified butter
  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 TBS organic brown sugar

Smoothie

  • 1 baked apple
  • 1 cup unsweetened vanilla milk
  • 1/2 apple cinnamon Hemp Heart bar
  • 1 scoop vanilla protein powder
  • Sprinkle of cinnamon
  • dollop of whipped cream (optional)

Directions

Baked Apples

  1. Pre-heat oven to 350* & line a baking sheet with foil
  2. Place prepped apples in a large bowl
  3. Add in butter and spices
  4. Spread evenly on baking sheet
  5. Bake for 40ish min, or until apples are soft
  6. Enjoy in a smoothie (or in oatmeal or alone 😉 )

Smoothie

  1. Place apple and milk in blender and mix very well.
  2. Add in Hemp Heart bar and blend again very well.
  3. Mix in protein powder.
  4. Enjoy with a dollop of whipped cream and/or cinnamon sprinkled on top!

Pinterest Interest: Taco Soup

Happy Friday friends!  I am keeping this short as I am still on the mend from a nasty cold.  This week consisted of LOTS of rest, some Netflix and many bowls of soup for myself, the Hubs and my nanny kiddos!

I have had this taco soup recipe floating around in my mind the past few weeks, and this week ended up being perfect for making it due to being sick and it fit in our theme perfectly!  I did make a few changes to accommodate my allergies, but I think it still turned out really great!

Taco Soup

Ingredients

  • 1 lb. Ground turkey, browned and drained
  • 1 container Chicken Broth {14.5 oz.}
  • 1 can Kidney Beans {16 oz.}, drained
  • 1 can Black Beans {15 oz.}, rinsed and drained
  • 1 can Petite Diced Tomatoes + 1/2 liquid from can {14.5 oz.}
  • 1 can Corn + 1/2 liquid from can {15 oz.}
  • 1 can Original Rotel – Diced Tomatoes & Green Chilies {10 oz.}
  • 3 tbsp. Homemade Taco Seasoning (equal parts, about 1/4 tsp each): black pepper, cumin, smoked  paprika, garlic, chili powder, oregano, crushed red pepper)
  • ½ tsp. Himalayan Salt
  • Toppings: Chips, avocado, Sour Cream, Shredded Cheddar & chopped olives (or really anything else you usually put on a taco

Directions

  1. Brown ground turkey into small pieces in a large pot.
  2. Add remaining ingredients {except garnish ingredients} to crockpot or large stove top pot and stir well.
  3. Crockpot- Cook on HIGH for 2 hours, or LOW for 4 hours.
    Stove top- Cook on med heat for 60-90 min (this was my lazy version since I really had zero energy to dig out my crockpot this week.
  4. Top with the toppings of your choice!
  5. Enjoy this cozy meal!

Foodie Friday: Copycat Recipe, Honey Seared Chicken

Hello all!

I am back from the cold north and am finally recovering from being super sick as well!  The last 2 weeks def threw me for a loop and off schedule in pretty much every area of life.  As I look to get back on track I figured one great place to start is here!
It is Friday again!  Yay!  Time to link up with my girls to bring another round of fabulous recipes!

We all probably have a favorite dish we go out for, yet don’t make at home!  As I was thinking about some of the things I like to eat out, one of my favorite Pei Wei meals sprung to mind!  I did a little editing to a recipe I found on Pinterest, and I hope you all enjoy! You can find the original recipe here!

Honey Seared Chicken (with rice noodles and veggies)
Ingredients
1/3 cup honey
1/4 cup orange juice
1 clove garlic, minced
1/2 teaspoon salt
1 tablespoon crushed red pepper flakes
3 boneless, skinless chicken breast
1 tablespoon butter
1/2 teaspoon coconut oil
1 tablespoon sesame seeds

Directions
1. In small bowl, combine honey, garlic, salt and red pepper flakes. Rinse chicken with cold water and pat dry.

2. Season lightly with salt. In large non-stick skillet, heat butter and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared. (I also added my red pepper at this point)

3. Turn chicken, cook another 4 minutes until just cooked through. Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 min.

4. Sprinkle with Sesame seeds.
5. Serve with rice noodles and sauteed veggies.

Thankful Thursday

Day 2 of the October blogging challenge!  I have been working on finding more things to be thankful for lately.  I have seen many of my Facebook friends take on little thankful challenges and it makes my heart so happy.  I know there is a lot of junk that happens in all of our lives, but I have really learned that no matter what, there is ALWAYS something to be thankful for!
So here are a few things I am really thankful for today!

1. My husband! We have been together for almost 5 years and married a little over 3.  He puts up with a lot from me, and he is a saint for all the love and support he gives me!
2. My job!  Some people have asked me why I do what I do even with having my master’s degree, and it is easy, I LOVE it!  I get to work with amazing families, and each day is an adventure!
3. My bed!  We saved and got a new mattress/box spring and bed frame last year, and I have been in bed heaven ever since!  I LOVE my bed, and I am so thankful that I have a beautiful and comfortable bed! (Now to just get more sleep….)
4. Ability to exercise!  Over the years I have dealt with several different medical/health issues and each time the doctors told me I would not be able to do certain things any more (run, do pushups, lift heavy weights, etc).  I took that advice and threw it out the window (with some caution), and since then I have finished over 50 races, I lift like a beast, and I can do a push-up (well sort of…haha).  Staying active is a privilege that I do NOT take lightly! 5. I have consistent access to the basics of life! Food in the fridge, roof over my head, clothes to wear, clean water to drink, and even luxuries like 2 cars, $ in the bank, all the bills paid, and the opportunity to travel.

I have so so much to be THANKFUL for!!!
