Foodie Friday: Veggie & chicken pad thai

Hello lovely friends, it is Friday again!  And it is officially my last weekend at home till January!  Talk about a fun but crazy end to the year!  I am super excited to have some fabulous company this weekend!  And I just might be making some of this sweet recipe for us to eat!
It is that time of the week where I link up with a few of my favorite foodies! Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit!! Our theme this week is veggie surplus!
I don’t think I even have an issue running out of veggies!  But having too many that start to go bad is something I have had happen way to many times.  I need to find a better balance with my produce purchases! I don’t think the strange weather has been helping my purchasing issues.  Ha

Since I had SO many extra veggies this week, I wanted to make something that used up as many as possible at one time! Enter the good old standby of pad thai!

Pad Thai with chicken and veggies
Ingredients

  • 1 lb chicken, cubed
  • 1 large red pepper
  • 1 large orange pepper
  • 2 cups broccoli, chopped into small peices
  • 1 cup raw broccoli slaw
  • 2-4 TBS coconut oil
  • Tamari to taste
  • Brown rice noodes

Directions

  1. Put 1-2 TBS oil in a large pan, add the chicken and cook till it is no longer pink in the middle.  Add Tamari to taste.
  2. In a seperate pan, cook all the veggies the same as the chicken.
  3. Cook the noodles as directed on the box.  Add some coconut oil and tamari when they are finished.
  4. Once everything is cooked, mix it all together and enjoy!

Foodie Pen Pals, October

Well, it is that time of month again to reveal the Foodie Pen Pal package I received this past month.  Normally, I am super excited about posting…however, this package was very different from what I normally receive!!

Again, this is not typical of what I have received in the past.  I hate to be a Negative Nancy, but I was a little disappointed with this package.  Oh well, I guess I will be drinking a lot more tea over the next few weeks.

If you want to get involved with the Foodie Pen Pals here’s a detailed explanation of the program:

-On the 5th of the month, you will receive your pen pal pairing via email. It will be your responsibility to contact your pen pal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Pen pals is open to blog readers as well as bloggers. Foodie Pen Pals: September

It is that time of the month when it is time to reveal all the amazing things I received in the months Foodie Pen Pal box!  I have been so lucky to get such great FPP partners pretty much every month!  This month my FPP was Sarah.

We had some lovely email chats and then the box arrived!!
It is almost like Christmas morning when I get a FPP (or Naturebox) box in the mail!
I love everything about the box! From the food, to the sweet little notes, to the zebra tissue paper and the stickers she included for the twins I nanny!  So so sweet! (and they LOVED the stickers! )

Foodie Pen Pals August!

For the past 2ish years I have been participating in the Foodie Pen Pal program set up by Lindsay over at The Lean Green Bean!

This month I was matched up with the amazing Debbie from Accidentally Delish! It was great to be paired up with a fellow blogger.  As we emailed back and forth we found out we have some things in common, which is always a bonus!!
Debbie sent me a wonderful package and it came on my birthday which was another added bonus!
When I opened the box this is what I found!

Ice tea mix which is PERFECT for these HOT summer days here in Houston!

These toasted coconut chips were amazing!  I crushed some up and added them to my latest batch of energy balls, and they added amazing flavor and texture!  Will have to get more of these soon for sure 🙂

You can never go wrong with Justin’s Almond butter in a package for me!  Love it!

I mentioned that I want to do more Thai cooking, and Debbie sent me this amazing looking curry powder.  I can not wait to try it!

I have never heard of moon cheese before.  I added it to a salad and it was like a yummy cheese crouton!

Debbie was recently having a giveaway on her blog for some Energems.  She saw that I entered the contest and sent me some to sample!  Will be trying them out this weekend on one of my long bike rides!  Thank you Debbie!!

And chocolate!  Having a blog with the word ‘chocolate’ in the title, I LOVE that I get all sorts of chocolate items to try!  This was super yummy and I love that it was organic too!

Foodie Pen Pals March

I guess my brain is still stuck in March even though it is already April 3rd!  I woke up in the middle of the night and realized I never posted about my amazing Foodie Pen Pal package from March!  (So sorry Melissa!)
Anyways…

For the March edition of Foodie Pen Pals I was paired up with Melissa from My {Simply} Delicious Life. She is a gem and I was so happy to paired up with her!  This was her first Foodie Pen Pal exchange and she did so great!

Everything Melissa sent from the note to the awesome food choices were just perfect!

This preserve has already been used on toast, waffles and pancakes!! It has a lovely flavor combination and it simply wonderful!

This honey came right at the perfect time as I was out and needed some for my morning tea! It is pretty cool to actually have some of the bee comb inside the jar!

I am not sure who had more, the hubs or myself!  It was a yummy little treat to snack on while prepping dinner for a few nights!

I have never had pecan butter before, but this was awesome!  I used it in one of my smoothies in place of almond butter and it added amazing flavor!

Foodie Pen Pals February!

Foodie Pen Pals are back for 2014!  I failed to sign up in January, but I did remember to sign up in February!  I am SO glad I did!!
This month I was paired up with Arlette from New Orleans!! She is such a sweetheart!  When I got the package I opened it and was so thrilled! She followed all my food guidelines (which I know is not always easy), and she even through in a few surprises!!

I have never seen chocolate like this before!  Not only did it taste amazing, but the wrappers had cool literature on them, and the chocolate had hearts on it!! So cool! XOXO

This nut and fruit mix is AWESOME!  I am surprised I have any left! I have paired a handful with my breakfasts and snacks the last few days and WOW!  I love the simplicity of the ingredients too!

Um WOW! How have I never had cacao lip balm before!! It smells good enough to eat!!!! It was a bonus for sure on top of all the other amazing stuff I received from Arlette!!!!

Foodie Pen Pal Reveal day September!!!

So today is FPP reveal day!!! Yay 😉
I missed it in August because I forgot to sign up..oops.
This month the FPP program celebrated 2 years!! Congrats to Lindsay on creating such a wonderful program that as grown so much and is so much fun 🙂  In honor of the 2 years, we did something a little different.  We sent a package to the same person who sent one to us.  It was different and a unique way to celebrate!

So my FPP this month was Ariel who helps to admin her sister’s (Nicole) blog over at Www.hapatite.com.
I have looked over their site and it is filled with some really amazing recipes that I can not wait to try!!!

The next part of the package made me feel like I was back in England!! Tons of new teas and cookies (biscuits) to try!  I am really stoked to try some of the new teas that represent different cultures!  I am a big fan of Chai, so those are going fast! I have never tried honey crystals before, so I am really excited to pair that with one of my new teas!!!

I have never tried a milk tea before.  I am going in search of some Boba in the next few weeks so I can really enjoy these teas the proper way!
