Creamy Veggie Soup

Hello friends!
It has been a little quiet over her on the blog for the start of 2019.  I have been slowly easing into the year.  I have had a lot of things going on with health and just life, so I will be giving more of an update soon!

This week is national soup month! I don’t think there could be a more perfect food for these colder winter months than soup! I LOVE soup, but have always had a hard time finding soups I can eat with my food allergies.  I can hardly ever order soup when I am eating out, so a few years ago I began to make my own at home!

A few of my favorites over the past few years are taco soup, black bean soup, broccoli cheese soup, roasted red pepper soup, and chicken veggie & rice soup!

This week we started out in the 70s and then the temps dropped into the 30s! Needless to say, with the colder weather I was def all about making some yummy soup!  I have been on a zucchini kick lately and had a ton in my fridge and decided to make that the star of the soup!

Ingredients

  • 1/4 c ghee
  • 4 cups shredded zucchini
  • 2 cups shredded carrots
  • 2 cups broccoli slaw
  • 1/4 cup gluten free flour
  • 1 1/2 cups chicken broth
  • 1 cup organic half & half
  • Spices: Pink salt, pepper, garlic, paprika, turmeric & red pepper flakes to taste

Directions

  1. Melt ghee in large pot. Add in all veggies, sauté till soft.
  2. Sift flour over veggies and stir gently till coated.
  3. Add in liquids and gently stir.
  4. Bring to a simmer and let the liquids thicken for about 10-15 min.
  5. Add in spices to taste.
  6. Enjoy on a chilly winter day

Healthy Pear Crisp

Hello friends! Happy 1st Friday in December! This is my favorite time of year! Something magical and special and all the twinkling lights make my heart so happy.  Over the past few days the Hubs and I set up 2 trees and sprinkled other decorations all around the house.  I found the AMAZING sign at my local Hobby Lobby and it brings joy to my heart each time we light it up!

This time of year brings me into the kitchen even more than normal!  Can I just say how wonderful it has been to be able to cook and bake in a real kitchen!  I am so thankful for our new kitchen and the space it has to allow me to bring joy to others through delicious food!
I have been craving pears lately and earlier this week had a hinkering for a crisp.  I decided to put my 2 cravings together and whip up a healthier version of the apple crisp I grew up making.  The coconut sugar helps to bring out the natural sugars in the pears without being overly sweet. I really feel I could eat some of this for breakfast in place of my overnight oats and feel good about it 🙂

Healthy Pear Crisp {Gluten Free}

Ingredients

Directions
  1. Pre-heat oven to 375* F.
  2. Grease, with coconut oil, a med size baking dish, I used 9 x 7.
  3. In a medium mixing bowl mix the oats, brown sugar, gf flour, and 1/2 cinnamon together. Add the coconut oil until the mixture is crumbly.
  4. In a separate mixing bowl, add together the coconut sugar, almond flour, and remaining cinnamon.  Add the pear slices and mix till coated.
  5. Spread pears in the baking dish and cover evenly with the oat mixture.
  6. Bake for 30-35 min or until the pears are soft.
  7. Let the crisp cool slightly and serve with or without ice cream.

Spicy Avocado Eggs

So here is a short and sweet (or actually spicy) recipe to get your weekend off on a kick!
I also have a fun tip to share with you about how I make the perfect hard boiled egg!

Spicy Avocado Eggs

Ingredients

  • 4 eggs
  • water (to boil eggs)
  • 1/2 avocado
  • 1/4 tsp pink salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp (plus more to top finished eggs) paprika
  • 1 tsp sriracha sauce
  • ice cubes

Directions

  1. Place eggs in a sauce pan, cover with water.
  2. Bring water to a boil and cook eggs for 8 minutes.
  3. Remove pan from heat and fill pan with cold water for 1-2 min or until the water in the pan remains cool.
  4. Place ice cubes in the pan and let them melt. (This helps the eggs peel really easily!)
  5. Peel eggs.
  6. Slice eggs lengthwise.
  7. Pop out the yolks and put in a med size bowl.
  8. Add in avocado and spices and sriracha sauce, mix together well. 
  9. Place yolk mixture in a ziplock bag. Trim a small hole in one of the corners. 
  10. Squeeze even amounts of the yolk mixture into the egg whites.
  11. Sprinkle additional paprika and/or sriracha sauce on top. 
  12. Enjoy!

Chocolate Pumpkin Trifle 

Happy Friday friends!
Another week is coming to a close! We have ventured into a new month, and the beginning of several of my favorite holidays! This time of year seems to be filled non-stop with sweets, desserts, drinks and food galore!  Do not fret, this time of year can be enjoyed even with so many indulgences staring you in the face. This week we have designed some yummy treats to keep you on track this holiday season while still enjoying some treats!

I also have to say that I have been really enjoying working on some new recipes for you all! And it gets a little messy at times, but that is part of the fun!

Chocolate Pumpkin Trifle

{This recipe can be made into a single serving or for a group.  The ingredients are for 1 serving, so just increase accordingly for additional servings!}

Ingredients

Layer 1
1 pumpkin spice Chobani yogurt

Layer 2
1/4 cup quick oats, ground up
1/4 cup almond milk
1 Tbsp pumpkin
1 medjool date, pit removed
1 scoop Vital Proteins collagen peptides (optional for extra protein)

Layer 3
2 tbsp Organic pumpkin purée
1/2 TBS Cocoa powder
1 Medjool date, pit removed

Layer 4
EnjoyLife chocolate chips

Directions

  1. Mix ingredients for layer 2 in a blender, till smooth. Let sit about 5 min for ground oats to soak and become soft.
  2. Mix ingredients for layer 3 in a blender, till smooth.
  3. Layer 1/2 the ingredients in a cup or bowl, layer 1, layer 2, layer 3, layer 4, then repeat.
  4. May be stored in the fridge or served immediately.

Spotlight Blog Hop Day- Chocolate Chip Pumpkin Protein Bar

Welcome to the last weekend in October! Time sure is a-flying!

I’m so glad you decided to stop by!  This is my third blog hop, and I have loved getting to read new blogs and get to know some new bloggers! I am heading to the pumpkin patch this morning now the the weather has cooled down a bit.  And by that I mean, the high has only been in the mid 80s vs 90-100+ degrees!
Speaking of pumpkin, I have an abundance of it right now! I apparently had several cans of it in my pantry from a few weeks ago that I forgot about and grabbed a few more on sale last week. With so much pumpkin it gave me a great opportunity to work on my pumpkin protein brownie bar recipe.  I’m not really sure if I would call them a brownie exactly, they are almost a mix between cake and a pie. So I settled on brownie 🙂
This week I had plenty of extra pumpkin to work with for our Foodie Friday theme!

Chocolate Chip Pumpkin Protein Bar

Ingredients

  • 1/2 cup gluten free flour
  • 1/2 cup almond flour
  • 3 scoops unflavored collagen peptides
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp Himalayan salt
  • 1 Tbsp cinnamon
  • 1 Tbsp pumpkin pie spice
  • 1/3 -1/2 cup coconut sugar
  • 3 organic eggs
  • 1 can Organic pumpkin purée
  • 1 tsp vanilla extract
  • 1/2 – 3/4 cup Enjoy life dark chocolate chips
  • Coconut oil for greasing baking dish or parchment paper

Directions

  1. Pre-heat oven to 375*
  2. Lightly grease a 9″ x 13″ glass baking dish with coconut oil, or line with parchment paper.
  3. Mix all dry ingredients together in a bowl, set aside.
  4. In a separate bowl, mix the eggs, pumpkin and vanilla till fully blended.
  5. Add the dry ingredients to the wet and gently mix until just blended.
  6. Add in most of the chocolate chips, gently fold into the batter.
  7. Scoop batter into greased pan and spread evenly. Sprinkle remaining chocolate chips on top.
  8. Bake for 20-25 min or until toothpick comes out clean from the center of the brownie bar
  9. Enjoy

Peppermint Protein Hot Chocolate 

Happy Friday friends!
Been a little quiet this week over here. It was a pretty busy week and I have focusing on some other areas of life. Had a girls night, went to my Bible study group, worked on finding curtains for our master bath (and was successful!) as well as spending quality time with the hubs, some evening kick butt workouts and cooking a LOT!

Plus getting ready for another weekend away so yep, it’s been a busy week!

Fall weather decided to grace us with its presence a few mornings this week and even yesterday afternoon! The humidity has dropped to around 50% and it has been feeling glorious! Makes me miss the cool northern fall weather and I even put on our little firepace (minus the heat element for now…hehe)
SO of course this weeks recipe theme was perfect with the change of weather!

Peppermint Protein Hot Chocolate

Ingredients

  • 2 cups water
  • 1/2 cup carob chips plus a few to sprinkle on top
  • 1/2 TBSP raw cacao powder
  • 2 scoop unflavored Collagen Peptides
  • 1/4 tsp vanilla extract
  • 1/4 tsp peppermint extract
  • 1/4 cup unsweetened almond milk
  • 4 oz homemade whipped cream

Directions 

  1. Boil water in a med saucepan then remove from heat
  2. Add in carob chips and whisk till melted/blended.
  3. Add in remaining ingredients (minus the whipped cream) and whisk well together.
  4. Pour into 2 mugs (I love using the mugs we made on our anniversary date last year!)
  5. Add a dollop of whipped cream and a sprinkle of carob chips on top

My favorite lifestyle apps

Hello friends!  Happy Wednesday 🙂
I am slowly getting back into my workouts after a few weeks off due to back issues and getting a nasty summer cold/flu. Last week I managed to make it to the gym a few times and I also went to a self defense class which was pretty interesting and intense and I learned a lot.  I wish I had taken some pics or videos of the night.  The next time I attend a session I will for sure take some!
img_4544I wanted to share with you all a few things that help me stay on track with my fitness goals.  Many years ago I hardly forgot anything.  Then I had a brain injury and my memory does not behave the same.  So I am really thankful I have some tools I can rely on to help me stay focused and on the right path for me.  I pretty much use these apps everyday. Between logging meals, water, sleep and my fitness, I can get a sense of what I need to focus on.  Some weeks I notice my hydration is down so I pick up the intensity and set some alarms on my phone to remind me to drink more water!  I hope I am not alone in the area of needing some friendly reminders once in a while!  I also actually make money living healthy! Say what? Yep, it is true!  See below for more info 🙂
In no particular order, here are my fav healthy living apps! {I was not asked to talk about any of these apps, nor am I being compensated in anyway, I am just sharing from my experiences!}

1. Runkeeper- This is an app where I can log just what type of workout I do.  It used to just be a running/walking app, but it is so much more now! You can pretty much log any type of workout.  I really like that I can play my music through the app and I shares with my my stats when I am running outside.  I also enjoy connecting with other friends who have RunKeeper- {Let me know if you want to connect here}

2. My-24- This is an app for my gym, 24 hour fitness.  Previously I only used the app to look at the class schedule.  They recently re-did the app, and I like it even better.  I still used it for the class schedules, but I also use it to look at my own personal data.  The app is also aligned with a rewards program, and I get points for checking in, working out, connecting on social media, and reading valuable articles.

3. MyFitnessPal- Man, I have had this app for YEARS! My first log in was actually over 6 years ago!  I think that may be the app I have used the longest since apps became a thing! Ha.  I have seen the app improve so much over the past few years, and I really like that they have partnered with Under Armor.  I am not always super strict about my food logging, but it does help me know how on track I am.  Some days I feel like I did really well, just to see that I am short on a certain macro or nutrient.  I use that information to help myself stay balanced.  I also like that I can encourage my friends who are also on the app, and stay accountable if I am in a season where I feel I need it.  {If you want to connect with here, I am Chocolaterunnergirl 🙂 }

4. Connect- This is a Garmin app that I use with my VivoFit2.  I had it with my first VivoFit and I have again, seen changes and improvements over the past 2+ years.  Although the Garmin may not be as popular as the fit bit, I still love mine.  I love that I don’t have to sync it everyday (although I normally do to check my sleep), no charging needed, and it is waterpoof, so I don’t have to worry about taking it off to shower or swim.  I like that the app gives me different step challenges each week and that it tracks my sleep pretty well.

5. ithlete- I received the ithlete monitoring system for my birthday last year, and I really enjoyed using it.  It gives me information about how my body is doing and how I should handle the training for the day.  I def need to be using the data I collect more to work smarter, not harder.

6. Waterlogged- Like I mentioned above, I have times when I struggle to get all my water in during the day.  Depending on the water bottle I have with me each day, I know how many times I need to fill it up to reach my quota.  I like this app because you can personalize it with pictures of your own beverage containers, and it also gives you rewards for simply logging in.  I like to see where I am during the day and how many more ounces I need.

7. Pact App- This is literally one of my favorite apps!  It is so simple, and so rewarding.  Since I joined almost 3 years ago, I have earned several hundred dollars, and never had to pay a single cent.  The app began as a motivational app with exercise.  Log your workouts, earn cash.  Miss your pre-set workouts and pay.  They then added in fruit/veggie logs and food logging.  The beauty of the app is that you can change each week what you want to do. You can change how many workout days you want to do (up to 7), how many days you want to log food (also up to 7) and how many fruits/veggies (up to 5 per day, and 35 overall). Some weeks I know will be crazy and I might only commit to logging 3-4 workouts, and other weeks I know I need to push myself and log a workout of some sort each day.  You can log workouts at the gym, outside, through other apps (runkeeper, mapmyrun, jawbone, moves & fitbit) or even at home.  They are pretty versatile about it.
When it comes to logging meals, you do have to have myfitnesspal to get credit for the logs.  You have to log at least 3 meals for the day and be over 1200 calories.  Not very hard.  And there are times I forget to sync it before midnight, and I just sync it the next day and it counts 🙂
The veggie (fruits and veggies count) part is the most interesting. The community has to vote on the pictures you submit and sometimes they vote no! People used to vote ‘no’ to my smoothies and it was so annoying.  Then I realized that if I post each ingredient in my blender, they usually say yes!  You also get to vote and decide someones fate for their pic.  One thing I do like about the app is when you vote you can see the other pics they have submitted, and you can tell if someone just took 5 pics of the same thing and tried to say they reached their quota for the day.  When you deny a pic you tell why (from per-determined options).
The app does have glitches from time to time, but they always fix it, and they don’t charge you if they are having issues.

So those are my basic healthy living apps.  I have used others over time, but these are the ones I have stuck to over time.
