Blackberry & Avocado Salad 

Hello all!  I am slowly getting back to blogging. My sweet friend Emily passed away 2 weeks ago and it really threw me for a loop.  I miss her so much, but I am so glad she is no longer in pain and suffering from the cancer that had taken over parts of her body.  She will live on in the legacy of her amazing husband and sweet kiddos.

On top of dealing with the grief of losing Emily, Houston (and other parts of TX) have been getting so much rain and the flooding has been terrible.  Thankfully we have not had any issues at either of our houses, but not everyone has been as fortunate.  I usually LOVE water, but I am at the point where I would be happy to not see rain for the rest of the summer! Sadly we have more and more of it in the forecast 😦

In the midst of the rainy weather I decided to get creative with some of the raw fruits and veggies I had laying around.

Blackberry and Avocado salad

Ingredients

  • 2 cups of lettuce (I prefer romaine and spinach)
  • 1/4 cup cucumber, cut into cubes
  • 1/2 red pepper, cut into cubes
  • 1/2 grilled chicken, cut into cubes
  • 1/2 tomato, cut into cubes
  • 1/4 cup blackberries
  • 1/2 avocado
  • 1 TBS red pepper hummus

Directions

  1. Place lettuce on a large plate.
  2. Add fruits and veggies.
  3. Add avocado and/or hummus in place of a dressing.
  4. Enjoy and be refreshed!

Gluten Free Roasted Veggie & Bacon Quiche! 

Hello friends! Happy Friday! The sun is finally out in full force after this week of rain and flooding!  With all this rainy weather I had been craving some comfort food.  I saw this recipe on pinterest and it sparked an idea in me.  So I took some of the recipe but also modified to to add in some delicious roasted veggies!

 Gluten Free Roasted Veggie & Bacon Quiche!
Ingredients

  • 1 (9-inch) deep dish frozen pie shell
  • 5 large eggs
  • 1 cup heavy cream
  • ¼ cup mayonnaise
  • 1½ tsp of each spice: garlic, black pepper, paprika, Himalayan
  • 1 cup roasted veggies (I used broccoli, butternut squash & red pepper)
  • 3 slices of turkey bacon, chopped into cubes
  • 1½ cup shredded cheese (I used goat gouda)
  • 1 TBS avocado oil

Directions

  1. Pre-heat oven to 425*
  2. Line a baking sheet with foil and enough oil to cover the bottom of the pan.
  3. Place fresh/raw veggies & bacon on the pan and lightly cover them in oil and spices to taste.
  4. Cook for 15-20 min.
  5. Also pre-cook the pie shell for about 12 min while the veggies roast.
  6. While that roasts, mix together the eggs, cream, mayonnaise, and spices, set aside.
  7. Let the veggies/bacon cool then pulse lightly in a food processor until everything is in small pieces.

  8. Readjust the oven temp to 350*
  9. Fold the veggie/bacon mixture & 1 cup of cheese into the liquid mixture.
  10. Pour into the pie shell.
  11. Cover the rim of the pie shell with aluminum foil or a pie shield.
  12. Sprinkle the remaining 1/2 cup of cheese on top.
  13. Bake for 50-60 minutes or until the center is set when gently shaken. Cover the edges of the crust with aluminum foil, if needed to prevent over browning.
  14. Allow to cool to warm before cutting.
  15. Enjoy!

This recipe is more complex than my normal recipes.
I actually doubled it and made some crust-less quiches in muffin tins.  Perfect for breakfast on the go!
I would also recommend if you are going to make this to pre-roast the veggies and even prep everything the night before and then cook it closer to the time the meal due to its long prep time!

Change in plans…

Happy Wednesday friends!  I hope you are doing well and enjoying your week!  I feel like I am still recovering from our little trip to San Antonio over the weekend.  I love to travel, but I am not a fan of the unpacking and recovery time.

Thank you for all the kind words last week about changing up my distance for my upcoming race.  I talked to the race director and I am pretty sure that is what I will be doing.  My hip has just not been really happy with me plus running has just not happened the way I have planned.  I have been discovering that I kind of stink at following a training plan…I really don’t know why.  So I will be dropping from the half marathon to the 5k, and then working on getting this hip back in shape before I pick another half to run.  I am disappointed in myself a bit, and in my body, but I am trying to stay focused on the positives.

My plan from last week:
Thursday- Body pump and hopefully 2-3 miles.
Friday- Piyo and a run outside
Saturday- Walk/jog outside- 5-6 miles
Sunday- Walk/rest day
Monday- Body Pump & maybe piyo and zumba.  Depends how I am feeling
Tuesday- 2-3 miles and Zumba
Wednesday- Body pump and yoga

What went down:
Thursday- Body pump

Friday- A walk with the kiddos.  A dr appt threw the plans a little, but that happens sometimes.
Saturday- Pretty much a rest day. I was worn out from traveling.  I did walk some before we watched the Spurs play, so I did get some steps in.

Sunday- Short walk and more rest
Monday- Body Pump! When I arrived at Zumba the gym lost power so they closed and there was not class 😦

Tuesday- Biked 6.45 miles and Zumba.

Wednesday- Body pump and yoga (This was all for you Andrea!!)
img_7259Overall it was not a terrible week.  I def feel like my glutes, shoulders and triceps are getting stronger.  I was able to up my weights a bit in body pump for a few muscle groups, and the ones where I stayed the same I felt challenged but not like I was going to pass out!
I joined a little 5 day healthy heart challenge this week and getting points for workouts, sweaty selfies and eating fruits and veggies….so pretty much what I already do 😉

I am out of town again for a few days so we shall see how that works out with my training.  I hope I will stick to it better than last weekend.  Hehe

Thursday- 2-3 miles
Friday- 2-3 miles and 30 min of stretching
Saturday- Elliptical recovery 45 min
Sunday- 3-4 miles
Monday- Body Pump & maybe piyo and zumba- Gonna try this again!
Tuesday- Elliptical or bike recovery and Zumba
Wednesday- Body pump and yoga (maybe

Wild Workout & Training Update!

Hello friends!  It has been a little crazy and exhausting getting back into my workout routine!  I was still active on and off the last few weeks of 2015, but didn’t really get to the gym very much.  It felt SO good to be back last week!  I also got back into my training for the next half marathon that is on the books (March 5th)!

A little recap since last Monday

Monday- 2.75 elliptical miles
Tuesday- 3.83 elliptical miles and half a zumba class- I left a little early for date night with the Hubs
Wednesday- Body pump (hello muscles!!!), first 5k of 2016 (47:15 min….I have a LOT of work to do)

Friday- Rest and enjoying my new running coloring book by a fellow Sweat Pink ambassador, Sarah, and book by one of my favorite and inspiration runners, Danica.
Seriously, if you love to run, want to run, or just want to learn more about running, go get these books! (I am just putting them out there because I have really enjoyed them…not benefiting in any way other than sharing the awesomeness!)

Sunday- 4.31 miles- Wog 3.85 miles and a .46 mile cool down
Monday- Body pump (muscles are getting back into it!) plus 2 recovery elliptical miles

I have been a little sore, but really loving getting back to my training and routine!
I started using a supplement from Young Living called Ningxia Nitro, and I can totally tell a difference in my workouts!  So awesome!

Cauliflower: The not so green veggie

Happy Friday Y’all!
Man, another week has flown by!  It has been filled with workouts, fun with an awesome blog hop I am participating in, and some fun in the kitchen!
The weather has been AMAZING this week and I am so thankful after all the rain we received from hurricane Patricia!  It actually dropped below 70 degrees a few mornings and I was even able to wear my Uggs! Hehefoodiefriday

Anywhoo, this week I am linking up once again with Farrah from Fairyburger, Annmarie from the Fit Foodie Mama, and Jess from Hello to Fit!! Our theme this week is cauliflower!
I have this random side story: So when I was growing up Cabbage Patch dolls were all the rage.  I really wanted one but it was not in the budget for my parents with 4 little kids and my dad going to school.  I really don’t know where it came from, but that Christmas I got a Cauliflower Kid!  It came in a big green plastic leafy container.  I remember using the container to store my other doll clothes.  Maybe that sparked in me a love for cauliflower!  I still have my doll but it is in storage, but I was able to find a pic online!

I feel like cauliflower gets a bit of a bad rep.  It isn’t really super pretty, and it for sure has no color (other than the leaves). Several weeks ago I was talking to a friend about how much I love cauliflower (I was that weird kid at birthday parties who actually ate the raw veggies…Ha) and all the awesome stuff you can do with it.  I did a little more research and found out some cool stuff about cauliflower!

  • Fights against cancer
  • Helps heart health
  • It is anti-inflammatory
  • Has many vitamins and minerals
  • Helps brain health
  • Great source of fiber
  • Full of antioxidants and phytonutrients

So as you can see, I have no problem devouring cauliflower when I can!  I have made it into pizza crust, used it like rice, had it raw, and my 2 favorite ways I am going to share with you today!

IMG_1508Roasted & Mashed Cauliflower

Ingredients

  • Whole cauliflower, cored and chopped into bite size pieces
  • about 1/2 cup olive or coconut oil
  • Pepper, paprika, garlic, Himalayan salt, garlic
  • 1/2 TBS butter
  • 1/8 cup chicken broth

Directions

  1. Preheat oven to 425* F
  2. Cover the bottom of a cookie sheet with olive oil.
  3. Place chopped cauliflower on the pan.
  4. Lightly sprinkle on spices
  5. Even mix the oil and spices on the cauliflower with your hands.
  6. Roast for 20-25 min.

If you so desired, turn roasted cauliflower into mashed cauliflower (a mashed potato substitute)

  1. Let roasted cauliflower cool slightly.
  2. Add cauliflower to a food processor.
  3. Pulse till cauliflower is mashed well.
  4. Add butter and chicken broth for taste and thickness.

It might not look so inviting, but it was AWESOME tasting! You could hardly tell the difference!

Foodie Friday: Healthy Halloween Treats!

Hello and happy happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Healthy Halloween Treats!!

Well, I am not really much of a Halloween person.  We never really participated growing up, and the one time I remember trick-or-treating, it was a let down at the end of the night.
Anyways, I DO love the fall, and this week I found some cute snacks to make with the twins that I thought were cute!

Ice Ring Pops!

Ingredients:
1/3 cup apple juice
1 cup water
Ice cube tray
fake spiders or rings

Directions:
1. Mix apple juice and water
2. Pour into ice cube trays
3. Add fake spiders or rings
4. Freeze overnight

Candy Corn Treats

Ingredients:
1 whole pineapple
2 peeled oranges
Whipped cream
Candy corn

Directions:
1. Cut pineapple and oranges into small peices
2. Place a layer of pineapple in the bottom of a clear cup, about 1/3 cup.
3. Place a layer of orange on top of the pineapple, about 1/3 cup.
4. squirt a small layer of whipped cream on top
5. Add a piece of candy corn on top
(If pre-making these, save the whipped cream and candy corn till it is time to eat them)

Monster Mouths

Ingredients:
Apples
Almond butter (you can really use any type of nut butter, or sun butter)
Small Marshmallows

Directions:
1. Slice apples into 10-12 wedges
2. Cover the top of each apple with almond butter
3. Place 4-6 marshmallows on half of the apple wedges ( kids LOVE this part)
4. Add the other apple wedges on top of the marshmallows, almond butter side down
Munch, munch, munch

Spider Web Treats

Ingredients:
Stick pretzels
Chocolate Chips
Candy eyes (optional)
Parchment paper
sandwich bag (or piping bag if you have one)

Directions:
1. Place a layer of parchment paper on a cookie sheet
2. Lay 8 pretzels in a star-burst shape on the parchment paper (8 for each web)
3. Heat about 1/2 chocolate chips in a microwave safe dish for 35-45 seconds till melted and smooth.
4. Clip a small corner of a sandwich bag and fill with the melted chocolate.
5. Drizzle the chocolate in a swirl starting from the center and working your way towards the outer edge of the pretzel circle. Place candy eyes in the middle if you desire.
6. Place pan in the fridge or freezer until eating time.

Foodie Friday: Quick and easy 30 min meals

Happy Happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Quick and Easy, 30 min meals!! The past few weeks have been even more busy than usual, so pretty much every meal I have been making has been close to 30 min.  Some even less since time has been so sparse.  This recipe has been one that I can whip together in about 20 min.  You can mix and match different ingredients, and just have fun with it  🙂

 

Turkey Taco Salad

Ingredients
1 TBS coconut oil
1- lb ground turkey (can use ground beef if that is what you prefer)
1 small can green chilies
1 Red pepper chopped
2-3 cups your choice of lettuce, chopped;  I use a combo of spinach and romaine
2 Roma tomatoes chopped
1 can black beans, drained and rinsed
1/2 cup shredded cheese
1 avocado
1/2 cup plain yogurt
Spices for flavor.  I use my homemade taco and guacamole spice mixes.

Directions
1. Melt coconut oil in pan, add ground meat with chilies, red pepper and spices.  Brown together.

2. While meat cooks, chop up lettuce and tomato, shred cheese, prep beans.

3. Remove avocado from skin and mash in a bowl.  Mix in yogurt and spices.

4. Add all ingredients into a large bowl and mix (or individual bowls and each person builds their own salad.

5. Can pair with some chips and salsa
6. Enjoy
