Creamy Veggie Soup

Hello friends!
It has been a little quiet over her on the blog for the start of 2019.  I have been slowly easing into the year.  I have had a lot of things going on with health and just life, so I will be giving more of an update soon!

This week is national soup month! I don’t think there could be a more perfect food for these colder winter months than soup! I LOVE soup, but have always had a hard time finding soups I can eat with my food allergies.  I can hardly ever order soup when I am eating out, so a few years ago I began to make my own at home!

A few of my favorites over the past few years are taco soup, black bean soup, broccoli cheese soup, roasted red pepper soup, and chicken veggie & rice soup!

This week we started out in the 70s and then the temps dropped into the 30s! Needless to say, with the colder weather I was def all about making some yummy soup!  I have been on a zucchini kick lately and had a ton in my fridge and decided to make that the star of the soup!




  • 1/4 c ghee
  • 4 cups shredded zucchini
  • 2 cups shredded carrots
  • 2 cups broccoli slaw
  • 1/4 cup gluten free flour
  • 1 1/2 cups chicken broth
  • 1 cup organic half & half
  • Spices: Pink salt, pepper, garlic, paprika, turmeric & red pepper flakes to taste


  1. Melt ghee in large pot. Add in all veggies, sauté till soft.
  2. Sift flour over veggies and stir gently till coated.
  3. Add in liquids and gently stir.
  4. Bring to a simmer and let the liquids thicken for about 10-15 min.
  5. Add in spices to taste.
  6. Enjoy on a chilly winter day

16 in 16 & a training update

It has been a crazy few weeks in my real life.  If you missed some of the news, you can see it here & here.

We are only in month 2 of 2016, but I feel I have already learned a lot.  My goal the rest of the year is to take what I have learned and make changes, accept the facts, and continue to be the best me I can be.

So 16 things I have learned (or rediscovered) in 2016 (so far)…

  1. My need for things to be organized.  I have always been more of a neat person, but when life happens, my organization seems to be put on the back burner.  I was invited by some friends to participate in a 30 day cleaning/organizing challenge.  Even though I have not been able to participate each day, I have made some major headway on several areas of my life/home!  My heart feels happy when things are clean and organized! Plus I discovered a bunch of clothes I forgot about 😉
  2. I feel I am reminded of this each year…but really hits home during challenging times, who my true friends are. Friends who don’t care what I look like, but who care about and for my heart!  I am forever grateful for these friends, and it is my goal to be this kind of friend too!
  3. A greater appreciation for my husband and how he loves & cares for me.
  4. I left part of my heart in Costa Rica. {This is not a new discovery, but just a reminder to myself that I can be 2 places at once…at least in my heart}
  5. I am learning to love yoga…and to not be so scared to try new moves!  {But I am still trying to find a REALLY good mat that won’t fall apart after a few weeks and also won’t cost a ton! Any tips appreciated!!}
  6.  Pinterest hair designs for little kiddos…I really don’t know why I am late to the party on this one, but I have been having fun with all the little girl hair designs I get to do!
  7. After struggling with insomnia for YEARS, I finally found something that works for me!  A friend suggested this recipe to me! I was missing one ingredient, and I added one of my own, but this little gem is AMAZING!  I literally can be asleep in 5 min after putting this on! img_7684
  8. I have really been enjoying eating some all fruit/veggie meals lately, especially when it is go-go-go!
  9.  I might have put all the Christmas decorations away on Dec 26th in 2015 (to make room for a new couch), but this message just has to stay up year round! {And props to my hubby who thought I made it…I wish.}
  10. I have never been a fan of plastic bags at the grocery store.  My sweet friend Candace introduced me to THESE, and they are a lifesaver! Plus they look really cute 😉
  11. Trying new recipes from other awesome bloggers after I pin them…It has been turning out rather deliciously!
  12. My elephant collection keeps growing…thanks to my husband!
  13.  I still am not that great with grief.  I am working on facing that better this year as I remember several sweet friends I lost in 2015.
  14. Lifting weights and working on my form has caused me to get stronger {logical, yet I was missing the beat before}
  15. As this is National Eating Disorder Awareness Week, I feel it is my opportunity to share!  I am a survivor! I have been in solid recovery for the past 8 years(!!) after battling for more than 20! If you have any concerns or are struggling, or know someone who struggles, please reach out. You are WORTH fighting for, and for getting any help needed! NEDA has a great website with tools, and although I am not an expert, I am willing to share with you what I have learned from my experience!
  16. One wonderful point that I have rediscovered yet again is the amazing blogging community!  I am so thankful to be a part of such a wonderful group of people! You all make my heart smile and I love reading about your life adventures!  Thank you for including me on your journeys!

My next race is in 10 days!  Eek! I officially changed from the half marathon to the 5k.  I know that pushing myself would have only done harm to my hip and now foot, and it would not have been the PR I am seeking this year! So even though I am still somewhat disappointed, I am thankful that I can still race! And my dr is happy with my choice, so I guess there is that 😉
I had a REALLY great workout week last week! I would say it was probably the best week of workouts I have had in a long time.

Monday- Piyo and Zumba
Tuesday- Zumba and 6 mile bike recovery
Wednesday- Body pump and yoga
Thursday- Body pump
Friday- Piyo
Saturday- Full REST! I even got a 2 hour nap!
Sunday- 3.5 elliptical recovery miles

I have been able to do Body Pump 2-3 times a week as well as a yoga class 2-3 times a week and I have been able to see a difference in my strength, confidence and stamina!

Change in plans…

Happy Wednesday friends!  I hope you are doing well and enjoying your week!  I feel like I am still recovering from our little trip to San Antonio over the weekend.  I love to travel, but I am not a fan of the unpacking and recovery time.

Thank you for all the kind words last week about changing up my distance for my upcoming race.  I talked to the race director and I am pretty sure that is what I will be doing.  My hip has just not been really happy with me plus running has just not happened the way I have planned.  I have been discovering that I kind of stink at following a training plan…I really don’t know why.  So I will be dropping from the half marathon to the 5k, and then working on getting this hip back in shape before I pick another half to run.  I am disappointed in myself a bit, and in my body, but I am trying to stay focused on the positives.

My plan from last week:
Thursday- Body pump and hopefully 2-3 miles.
Friday- Piyo and a run outside
Saturday- Walk/jog outside- 5-6 miles
Sunday- Walk/rest day
Monday- Body Pump & maybe piyo and zumba.  Depends how I am feeling
Tuesday- 2-3 miles and Zumba
Wednesday- Body pump and yoga

What went down:
Thursday- Body pump
Friday- A walk with the kiddos.  A dr appt threw the plans a little, but that happens sometimes.
Saturday- Pretty much a rest day. I was worn out from traveling.  I did walk some before we watched the Spurs play, so I did get some steps in.
Sunday- Short walk and more rest
Monday- Body Pump! When I arrived at Zumba the gym lost power so they closed and there was not class 😦
Tuesday- Biked 6.45 miles and Zumba.
Wednesday- Body pump and yoga (This was all for you Andrea!!)
img_7259Overall it was not a terrible week.  I def feel like my glutes, shoulders and triceps are getting stronger.  I was able to up my weights a bit in body pump for a few muscle groups, and the ones where I stayed the same I felt challenged but not like I was going to pass out!
I joined a little 5 day healthy heart challenge this week and getting points for workouts, sweaty selfies and eating fruits and veggies….so pretty much what I already do 😉

I am out of town again for a few days so we shall see how that works out with my training.  I hope I will stick to it better than last weekend.  Hehe

Thursday- 2-3 miles
Friday- 2-3 miles and 30 min of stretching
Saturday- Elliptical recovery 45 min
Sunday- 3-4 miles
Monday- Body Pump & maybe piyo and zumba- Gonna try this again!
Tuesday- Elliptical or bike recovery and Zumba

Texas 10 Series, Katy race recap!

Happy November y’all!
October ended and November began with rain! And lots of it!  At least we didn’t have a hurricane this weekend like we did last weekend!
Anyways, I actually took advantage of daylight savings time and I went to bed early.  Well really early so I could get up at 4:15am on Sunday!
I first woke up at 2 and was all ready to wake up! I mean, it was 5 solid hours of sleep! More than I usually get.  I was able to fall back asleep for almost 2 hours.  Now we are talking! 7 hours of sleep! Yahoo!!!  I got all ready and waited for my ride!

I was doing the race with 2 awesome ladies I met through MRTT.  Kala was so sweet and offered to pick me up and drive!  She arrived a little after 5 and we headed to pick up Charissa.  It was a little bit of a hike down to to the race and we also needed to hit up a Starbucks on the way.  We did a little detour to get some coffee and made it to the race site at 6:15.  It was perfect timing! Right after we parked tons of cars came pouring in!  Kala quickly went and picked up our race packets!

When it was close to race time we headed for one last bathroom break and then the start line.  The sky was NOT looking good!  This pic doesn’t really do justice!  It was sprinkling at the time but it looked like the sky was about to open up and POUR!

We had all signed up to run the 10 mile race but I had already made a decision that I was going for the 5 mile race due my hip issues.
Everyone lined up for the start and they played the National Anthem.
Then it was go time.  Since I am a slower runner I stayed at the back of the pack.  I said bye to Charissa and Kala and we were off.
The first mile was alright.  I was trying to get my music to work correctly.  I had put my phone in my SPI belt under my shirt to help protect it from the rain. So trying to get to my phone while running and dodging people was oh so fun.  I finally got it on and tried to find my rhythm.  I could feel my hip slightly start to tighten up and I reminded myself I am here to just have fun and finish.
Mile 2 I felt like I started to find my groove a little bit.  I was running in the midst of several running groups. We were all doing run/walk intervals and would pass each other back and forth.  It was sprinkling lightly but nothing too bad.  My music was going and my intervals were pretty consistent.  I tried using my HRM for pacing but it wasn’t reading my HR correct.  It was fluttering between 70-84 BPM.  I know I have a good, strong heart, but when I am running my HR is in the 150s! So that was a bust (Note to self: Get HRM fixed ASAP)!!
When I got to the start of mile 3 I really felt my hip tighten a lot!  Ugh, I really was hoping to keep my interval pacing up for the whole race.  I slowed down a little and walked a little more.  As evidence of my pace for that mile, it was slower than I had been going.
When I saw the mile 3 sign I new I was going to make it with my intervals.  I kept putting one foot in front of the other and turned the music up just a bit.  I knew I was off for my time goal but that is ok!
As I was running a group of ladies passed me (once again) and one was encouraging the others to keep going.  A different lady slowed down and told her group that she was going to take it easy.  No one was going to care about her race time when she was gone from this earth and that she wanted to enjoy the run.  It reminded me to refocus my mind and just be grateful that I can do this!
When I broke my foot in college and had to have surgery to repair it, spend 10 weeks in a wheel chair and even longer in a cast I didn’t know this would be possible again.  And when my dr told me that I wouldn’t run again, I was pretty crushed.  So here I am, many thousands of miles later and I am running.  No matter how fast or slow I am, I am still defying the odds!
Mile 5 felt pretty good!  I knew the end was in sight and even if I had to walk, I was less than 20 min from the finish line!  I kept on trucking.  I chatted with a girl a few times when we were in the same place on our intervals.  Part of me wanted to run with her, but I was also really anxious to be finished.  The wind was picking up and I could feel the rain starting to fall harder.  I kept trucking along and I realized the finish line was just around the corner.
One thing I do well is finish races strong! And that is what I did! I was in a bit of pain, and was tired but I dug down deep and crushed the finish!!!  I am not a fast runner by ANY means, but an 8:11 min/mi pace to the finish was pretty good for me!
Overall it was a so-so race.  The course wasn’t too bad, but not very wide. I had to dodge walkers a lot when I was running.  I don’t know if others know it is common to pull off to the side when you are walking during the race.
Anyways, I found my girls who also had a rough 3rd mile! Man, something about that mile!
We headed to the car and not long after we were driving home did the rain POUR down!  We were thankful we were finished!
We did it!

After I arrived home from the race it was time for an ice bath and a nap!

Another Wild Workout Wednesday!

Hello once again!  I know, 2 posts in 1 days, that isn’t something that I get to do much these days.
It is Wednesday and time for a workout report.  I realized late last night that I never did made an official plan for this last week, but it ended up working out ok.
Since my hip has been giving me issues I have been trying to focus on stretching more and using my lovely foam roller.  The other night I was done and the Hubs came to see what I was doing.  The foam roller had turned into a pillow and I was just laying on the floor.  He asked me what in the world I was doing. “Oh, just foam rolling!” Ha, he knew better and encouraged me to get back at it!

Last week we lost another family member, so things got a little off track.  Add in the hurricane, a LONG dr appt and visiting a friend in the hospital, and I am glad I actually got in a few workouts!
Speaking of the dr appt, overall it was ok.  He asked a lot of questions and took a LOT of blood! So hopefully I will get some answers soon!  I am sure there are still issues with my thyroid, and not that I want there to be any other issues, but there needs to be something else going on as to why I can not lose weight!  It has become really frustrating! Who am I kidding, it has been a frustration for a LONG time.  I am proud of myself for keeping on the right path and working out and eating healthy meals.  Even years into recovery it is tempting to shut down and not eat.  But I KNOW that is not the right thing to do, nor will it do anything to change myself for the better!

What I have been up to!
Thursday- Walk & foam roll
Friday- Walk and stretches
Saturday- Body pump, walk and stretches.  And a free Shower! Haha


Sunday- More walk and stretches
Monday- Body pump and stretches
Tuesday- 4.5 miles on the elliptical, .5 mile walk to/from the park with the kids, an hour of zumba and some stretches.  No wonder my legs are tired and sore today!
Wednesday- Zumba tonight and 20-30 min elliptical

What I am planning for this next week!
Thursday- Try to walk/jog 3-4 miles
Friday- Piyo and 2 miles
Saturday- Body Pump or rest & LOTS of stretching and foam rolling!
Sunday- Race- was supposed to do the 10 miles, but I am sticking with the 5 for now.  If some miracle happens and I am up for it, I will do the 10. Plus LOTS of stretching and foam rolling!
Monday- Body Pump and volleyball
Tuesday- Zumba

Workout Wednesday!

For weeks…errr…months now, I have meant to have 1 day a week where I discuss my workouts and training plans.  Since December 2014 I have been recovering from a hip injury.  I toyed around with running again on and off during the spring, but each time my hip felt like it was going to fall out of the socket.  I decided to just take it easy with running and participate in other workouts that didn’t bother my hip.  That meant a lot of swimming, some weight lifting, walking, volleyball, biking and light Zumba dancing!  Plus stretching and foam rolling to keep my hip feeling ok.
A few weeks ago I decided to try to start running again and I was surprised that it felt ok!  It was SLOW, but no pain! After all my years of running (wow, just over 10 now since I decided I wanted to run vs it being forced on me), I feel like I am starting over from scratch.  And of course there is the random heel pain that I have been having that has hindered things a little bit.
Thankfully a great friend recommended me these little toe stretchers and they have been really helping tons! Just a few min a day and I have had less heel pain! Yay! (Thanks Sharon!)
It feels good to be able to get out a few times a week, even if it just a few miles.  It has felt even better to get back out on the bike!

Even some indoor biking has been back in the rotation.
Lifting weights has always been a passion of mine! I have been on the weight floor on and off since I was in high school! I love doing things on my own, but once I discovered Body Pump classes, I have only lifted weights on my own a handful of times!  I mean, for me, it is great! In 60 min I can get a full body workout and I have loads of fun with my friends!  Plus it is motivating to me to show up for my classes! 🙂
Over the summer I was only able to attend 1-2 times a week due to my schedule and the class schedules!  But now I am able to make it 3-4 times a week!  I have already seen changes in my muscles and in the amount of weight I can lift! It makes me happy to have at least one area of fitness/body changing!

And then there is the Bosu Challenge!  I have been working on getting in the daily challenges and bonuses when I can also!  Not something I normally do, so it has been kicking my booty for real!

I have a duathlon in 11 days, so I have been trying to motivate myself to get myself out there and run/bike/run! So far it has not happened.  This weekend I am getting some aero bars for my bike (thanks to a gift cert I won from my MRTT group!!), and I know that will motivate me even more to get out there!  I was really hoping to be in better shape for this race, but alas, life has gotten in the way and thrown be for a loop a lot the last few weeks.  So my new goal is to finish and have fun 🙂

For my birthday I received an ithlete finger sensor.  It has been helping me to evaluate how my body is doing and how hard I should train each day!
Some days are better than others!  My main issue is needing more quality sleep!  So I am also working on that along with my regular training!

Goals for the next week:
Thursday- Body Pump + 2-3 mile walk/run
Friday- Probably a run depending on how long my tire replacement goes…If not a run, then elliptical for 45-60 min.
Saturday- Practice duathlon
Sunday- Speed drills on bike and running
Monday- Body Pump & 3 miles + 90 min beach volleyball
Tuesday- 10 miles on bike & Zumba
Wednesday- Body Pump + 3 miles running
Plus the Bosu Challenge each day!

So let’s see how this goes!



Bouncing back to normal life after our trip to Africa has taken a little longer than anticipated.  Almost 2 weeks later I still feel a little foggy.  I am not sure if it is just jet lag, or a combo of the allergic reaction I had in Ethiopia along with a cold I picked up at the end of the trip added to the jet lag.  I have been trying to go to bed early most evenings, and yet unable to fall asleep for hours.  That does not bode well when I have to get up for work.  I don’t have too much planned this coming weekend and NOTHING planned for my birthday weekend, so I sure hope that helps!


My bed and I need some major quality time together ASAP!

Our first weekend back I tried to jump back into life…maybe not my best move.  Ran around town doing errands and getting our house back to normal with oil change/car wash/groceries/toilet-trees and laundry.  I went to body pump for the first time in a few weeks, and boy were my muscles in for a rude awakening!!! I have been back to a few of my normal workout classes AND purchased some new running shoes (for $35, WIN!!!).


Of course I had to put in some #sweatpink shoelaces!

I have was reunited with a few of my favorite baby-sitting kids and my workout girls!

And I can finally say I ran again…it was NOT pretty…and I am SO out of shape, but I managed a few miles of intervals with ZERO hip pain!!! So that is the good news.  I guess all that time off helped my hip to heal better, but I can not wait to really start training again and running longer and then work on my speed…


Even after my indoor run I am drenched due to this Houston HEAT!
