Enchilada Lasagna

Hi Friends! Happy Friday!

Whew this week was a long one! Filled with some great adventures and not nearly enough sleep.  I did get a 4 hour nap on Easter Sunday, and I wasn’t too sad about that!
This week I had to get my computer fixed (battery died) and they get a new charger cord too! I was really happy to find an Apple cord for $25 vs $80!
Some sort of insect bit my ring finger and it swelled so much I thought I might have to get my rings cut off! I was FINALLY able to get my rings off yesterday, and it is beginning to heal but I am not putting my rings back on till it is 100%! Man my hand feels naked!

I have been working on perfecting a new blueberry pancake recipe! My little guinea pigs have been eating them happily! I even managed to make one look like a bunny! I def need to tweak a few things and get some much better pics! LOL

Did anyone else get to watch the Boston marathon documentary?? Wow, so so good! The Hubs and I went to see it for a mini date night.  We were both laughing and crying the entire time.  It was so well put together! What an incredible night it was!
No onto this weeks recipe! I enjoy cooking for my lovely nanny family, friends & family and I love getting to try out new recipes! I always poke around Pinterest and get new ideas.  I hardly follow the recipes to the T, cause I like to change up some of the ingredients or use things that I am not allergic too.  I have been so into zucchini lately.  Making zucchini lasagna, zoodles, zucchini taco boats, zucchini pizza and the old standby, roasted zucchini.
I have seen pics for a few recipes for zucchini roll ups, and I have yet to get them to work right.  I took a few different recipe ideas and turned them into my own creation 🙂

I have to say this did not photograph very well.  It was hard to see all the amazing layers of flavor!



  • 4 med sized zucchini
  • 1 tsp + 1/2 tsp pink salt
  • 2 lbs organic boneless, skinless chicken breast
  • 1 med can enchilada sauce
  • 1 med can green chilies
  • 2 cups grated Monterrey jack cheese


  1. Pre-heat oven to 350* and lightly grease a med size baking dish (I used 9×7)
  2. Wash and remove ends of zucchini.  Slice each zucchini into thin slices.  Place them on a baking sheet and lightly salt both sides of each slice. Set aside for about 20 min.
  3. Cut chicken into large chunks.  Fill a large saucepan with water & 1 tsp salt and add chicken.  Bring water to a boil and cook chicken for 7-10 min or until fully cooked with no pink in the middle.  (Time will change depending on the size and thickness of each piece of chicken.
  4. Once chicken is cooked place it in a blender or food processor and gently pulse to shred the chicken.
  5. Return the shredded chicken to the sauce pan.  Add about 1/2 can of enchilada sauce and the chilies to the chicken, mix well.
  6. Cover the bottom of the baking dish with some of the enchilada sauce.
  7. Layer the zucchini over the sauce then add a layer of the chicken mixture.  Lightly sprinkle a handful of cheese over the chicken.  Continue layering until all ingredients are used (about 3 layers).
  8. After the last layer pour the remaining enchilada sauce on top and add the renaming cheese on top of that.
  9. Bake for 25-40 min, depending on the thickness of the zucchini. It is finished when a knife slices smoothly through all the layers of the lasagna.
  10. Enjoy!

Healthy Pear Crisp

Hello friends! Happy 1st Friday in December! This is my favorite time of year! Something magical and special and all the twinkling lights make my heart so happy.  Over the past few days the Hubs and I set up 2 trees and sprinkled other decorations all around the house.  I found the AMAZING sign at my local Hobby Lobby and it brings joy to my heart each time we light it up!

This time of year brings me into the kitchen even more than normal!  Can I just say how wonderful it has been to be able to cook and bake in a real kitchen!  I am so thankful for our new kitchen and the space it has to allow me to bring joy to others through delicious food!
I have been craving pears lately and earlier this week had a hinkering for a crisp.  I decided to put my 2 cravings together and whip up a healthier version of the apple crisp I grew up making.  The coconut sugar helps to bring out the natural sugars in the pears without being overly sweet. I really feel I could eat some of this for breakfast in place of my overnight oats and feel good about it 🙂

Healthy Pear Crisp {Gluten Free}


  1. Pre-heat oven to 375* F.
  2. Grease, with coconut oil, a med size baking dish, I used 9 x 7.
  3. In a medium mixing bowl mix the oats, brown sugar, gf flour, and 1/2 cinnamon together. Add the coconut oil until the mixture is crumbly.
  4. In a separate mixing bowl, add together the coconut sugar, almond flour, and remaining cinnamon.  Add the pear slices and mix till coated.
  5. Spread pears in the baking dish and cover evenly with the oat mixture.
  6. Bake for 30-35 min or until the pears are soft.
  7. Let the crisp cool slightly and serve with or without ice cream.

Wild Workout & Training Update!

Hello friends!  It has been a little crazy and exhausting getting back into my workout routine!  I was still active on and off the last few weeks of 2015, but didn’t really get to the gym very much.  It felt SO good to be back last week!  I also got back into my training for the next half marathon that is on the books (March 5th)!

A little recap since last Monday

Monday- 2.75 elliptical miles
Tuesday- 3.83 elliptical miles and half a zumba class- I left a little early for date night with the Hubs
Wednesday- Body pump (hello muscles!!!), first 5k of 2016 (47:15 min….I have a LOT of work to do)
Thursday- Walking
Friday- Rest and enjoying my new running coloring book by a fellow Sweat Pink ambassador, Sarah, and book by one of my favorite and inspiration runners, Danica.
Seriously, if you love to run, want to run, or just want to learn more about running, go get these books! (I am just putting them out there because I have really enjoyed them…not benefiting in any way other than sharing the awesomeness!)


Saturday- Walking
Sunday- 4.31 miles- Wog 3.85 miles and a .46 mile cool down
Monday- Body pump (muscles are getting back into it!) plus 2 recovery elliptical miles
Tuesday- 3 miles of elliptical sprints and zumba class!  Felt good to be back!
Wednesday- Body pump, sprint workout

I have been a little sore, but really loving getting back to my training and routine!
I started using a supplement from Young Living called Ningxia Nitro, and I can totally tell a difference in my workouts!  So awesome!

Coming up:
Thursday- Zumba and 2-3 recovery miles
Friday- Piyo and 3 miles
Saturday- Body pump
Sunday- 5 miles
Monday- Body pump and 2-3 recovery miles
Tuesday- 3 miles and zumba
Wednesday- Body pump and sprint drills

#BOSU Strong Challenge!

It is a beautiful day for the start of a super fun challenge that Fit Approach is hosting!! I missed the summer challenges they did due to my schedule and preparing and going to Ethiopia!  So I am so excited to get back into a challenge!!


Today I am embarking on a 4 week challenge with BOSU and Sweat Pink to prove to the world that I am #BOSUSTRONG. Love Freekeh Review and Giveaway!

You may be asking yourself, what IS Freekeh???  Well, Freekeh is an ancient grain first discovered in the Middle East roughly 2,000 years ago!  It comes from the top of green wheat and then is roasted.  It reminds me a little of quinoa or really fluffy rice.

Freekeh Foods comes in 3 flavors.  I was able to try the original and the rosemary sage.  They also have one more flavor, Tamari, which I would love to try one of these days! Besides Freekeh tasting so great, it is packed with fiber and protein, and this brand is organic and non-GMO! So winning in many areas!

Over the past few weeks I have toyed around with Freekeh in my kitchen and made some yummy meals with both the original and the rosemary sage flavors.  Here are a few things I came up with:

Avoid overeating by eating a MealEnder!

My partnership with Fit Approach gives me some really cool opportunities.  Recently I was invited to try Mealenders.  Mealenders appealed to me for many different reasons! They combine action from the body and the brain and can be an aid used to avoid overeating!
As a strong advocate of healthy eating and eating disorder recovery, mindful eating and listening to your body are things I try to practice in my everyday life!  Of course there are times when I have treats, but on most days, those are not something my body needs, even if I feel I am craving them.

Chocolate mint, cinnamon, citrus, and mocha!  I love how there are flavors that would seem to appeal to most people.  Of course as Chocolate Runner Girl, the chocolate were my favorite, but I did enjoy the variety of flavors!

How they work!
MealEnders are a small lozenge that has 2 layers to it.  The outside layer honestly tastes like a dessert to me, and then the inside layer is a cool tingle layer that sends a signal to the brain that says meal time is over.  The inner layer is what they call the “Inner Core’s Active-Taste Layer.” It activates the trigeminal nerve.  Well what is the trigeminal nerve you ask? Don’t worry, I asked myself the same question.  Thanks to this helpful information I now know!

“Trigeminal nerve: The fifth cranial nerve; responsible for sensation in the face and certain motor functions such as biting and chewing. It sends sensory information from the face and body to the brain for processing. Chemicals from foods stimulate the trigeminal nerve endings in the mouth. Together with taste (sweet, sour, salty, bitter and umami), and smell, the trigeminal nerve contributes to the overall flavor of foods. Trigeminal nerve endings in the oral cavity and tongue are stimulated by pungent foods such as chili pepper or peppermint resulting in the sensation of hot, cool or tingle.” (From MealEnders.com)


It takes about 20 min for the lozenge to dissolve in your mouth, which is the amount of time it takes for your mind to get a clue that you are full!  How brilliant is that?  🙂
It has been the perfect little ‘treat’ after meals to keep me in check about my food choices.
