Foodie Friday: Healthy Snacks!

Happy Friday, and welcome once again to Foodie Friday!! I am once again am linking up once again with my Favorite Foodie Friday ladies, Farrah from Fairyburger, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING! Today our theme is Healthy Snacks!

If you are anything like me, you are always on the go!  This week was even more nutty than normal!  Along with my normal work schedule, I had some extra tutoring sessions, date night at the Rockets game, a massage and some errands!  Each day was different and on-the-go more than usual, so I had to plan my meals a little more than carefully.  That also meant planning some snacks to bring along!  I love to have healthy snacks ready to go at a moments notice!  Usually they involve nuts, fruit, chopped veggies or a protein bar (like Luna, KIND, or Larabars).  I wanted to branch out a little and my recipe from last week (Chocolate Almond Butter Pie) inspired me!

Chocolate Almond butter
Ingredients
1. 2 cups raw almonds
2. 1/2-3/4 c organic coconut oil
3. 1/4 c Chocolate Chips (I used Enjoy Life semi sweet mini chips)

Directions
*This works best in a food processor, but a high quality blender would also work!*
1. Place the almonds in the food processor, place on high speed 1-2 minutes

2. Add the coconut oil, about 1/4c at a time till it is the desired consistency. Blend on high speed for another 2-3 minutes

3. Add in chocolate chips.  Almond butter should be warm and chocolate chips will melt easily.  Pulse on high speed until all chips are mixed in.

4. Place in an airtight storage container.

*You can keep in the refrigerator, but it is not necessary.  It will make the almond butter more firm.*
I LOVE to eat mine with fruit.  Apples, pears and bananas are my favorite!

Foodie Friday: Comfort Foods!

Hello and happy happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Comfort Foods!!

It has been a chilly week!  Much chillier than normal for this time of year in Houston!  Last year it was in the 80s and this past week it has been in the 30s and 40s.  Not as cold as some of my friends and family up north, but cold for here! With it being so chilly, I brought out some recipes that are wonderful on a cold night.  A new one that I have been experimenting with is a chicken pot pie!
I happened upon a gluten free crust a few weeks ago when I was at Whole Foods and decided to try it out!
Since I am allergic to onions and I am not a big fan of celery, I used a different mix of veggies than most pot pies!

Chicken Pot Pie

Ingredients
2 boneless/skinless chicken breast
1 TBS coconut oil
1 red pepper chopped
3 large carrots chopped into coins
1 cup green beans
1.5 cups broccoli chopped
3 cups chicken broth
2 TBS butter
3 TBS flour
1/3 cup milk
Salt and pepper
1 pie crust (If you are brave, you can make from scratch!!)
1 pie crust top
Aluminum foil or a pie crust shield.

Directions
1. Preheat oven to 375*
2. Pour 1.5 cups chicken broth into a pan. Add the carrots, green beans and broccoli. Bring to a boil and simmer for 10 min.

3. Chop chicken into small cubes. Cook in a frying pan with coconut oil. Add the red pepper and cook till the chicken is no longer pink on the inside, about 10 minutes.IMG_3211
4. Strain the vegetables out of the broth and add to the chicken/red pepper mixture.

5. Melt the butter in a large saucepan. Add the flour and wisk together. Slowly add the milk and wisk as the sauce thickens.

6. Add the remaining chicken broth slowly as the sauce continues to thicken.
7. Add the chicken and veggie mixture to the sauce and let simmer for 5-10 min.  Add salt and pepper to taste.

8. Pour mixture into the pie crust. (I used the extra as a little soup for another meal)IMG_3224
9. Slowly unroll the top crust. Place it gently on top of the pie. Trim off the edges. Pinch the top and bottom crust together. Make several small slits on the top crust. IMG_3225IMG_3226
10. Cover the edges of the pie with aluminum foil strips or a pie crust shield. IMG_3227
11. Place pie on a cookie sheet and place in the oven. Bake for 30-40 min.
12. Take the foil or shield off and cook for 10 more min till the top is golden brown.

Foodie Friday: Quick and easy 30 min meals

Happy Happy Friday!!  I am linking up again with my girls: Farrah from Fairyburger, Montana from Pretty Lil Mudder, Emily from Whatever Floats Your Oats and Annmarie from the Fit Foodie Mama and Cassandra from Powered by BLING!!  Today’s theme is Quick and Easy, 30 min meals!! The past few weeks have been even more busy than usual, so pretty much every meal I have been making has been close to 30 min.  Some even less since time has been so sparse.  This recipe has been one that I can whip together in about 20 min.  You can mix and match different ingredients, and just have fun with it  🙂

 

Turkey Taco Salad

Ingredients
1 TBS coconut oil
1- lb ground turkey (can use ground beef if that is what you prefer)
1 small can green chilies
1 Red pepper chopped
2-3 cups your choice of lettuce, chopped;  I use a combo of spinach and romaine
2 Roma tomatoes chopped
1 can black beans, drained and rinsed
1/2 cup shredded cheese
1 avocado
1/2 cup plain yogurt
Spices for flavor.  I use my homemade taco and guacamole spice mixes.

Directions
1. Melt coconut oil in pan, add ground meat with chilies, red pepper and spices.  Brown together.

2. While meat cooks, chop up lettuce and tomato, shred cheese, prep beans.

3. Remove avocado from skin and mash in a bowl.  Mix in yogurt and spices.

4. Add all ingredients into a large bowl and mix (or individual bowls and each person builds their own salad.

5. Can pair with some chips and salsa

Foodie Pen Pals August!

For the past 2ish years I have been participating in the Foodie Pen Pal program set up by Lindsay over at The Lean Green Bean!

This month I was matched up with the amazing Debbie from Accidentally Delish! It was great to be paired up with a fellow blogger.  As we emailed back and forth we found out we have some things in common, which is always a bonus!!
Debbie sent me a wonderful package and it came on my birthday which was another added bonus!
When I opened the box this is what I found!

Ice tea mix which is PERFECT for these HOT summer days here in Houston!

These toasted coconut chips were amazing!  I crushed some up and added them to my latest batch of energy balls, and they added amazing flavor and texture!  Will have to get more of these soon for sure 🙂

You can never go wrong with Justin’s Almond butter in a package for me!  Love it!

I mentioned that I want to do more Thai cooking, and Debbie sent me this amazing looking curry powder.  I can not wait to try it!

I have never heard of moon cheese before.  I added it to a salad and it was like a yummy cheese crouton!

Debbie was recently having a giveaway on her blog for some Energems.  She saw that I entered the contest and sent me some to sample!  Will be trying them out this weekend on one of my long bike rides!  Thank you Debbie!!

And chocolate!  Having a blog with the word ‘chocolate’ in the title, I LOVE that I get all sorts of chocolate items to try!  This was super yummy and I love that it was organic too!

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
– Foodie Penpals is open to US, Canadian residents & European residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

Foodie Pen Pals May!

This is the first time I am able to share the amazing Foodie Pen Pal program here on this blog!!! I have been part of this amazing program for almost a year now, and I have to say it just keeps getting better and better!
This month Laurel was my FPP match!  She sent an amazing package and it fit my dietary restrictions/needs perfectly 🙂

These berries were really yummy!  I am thinking of adding the rest to the trail mix for my many upcoming flights!

I made this the other night, and then decided to throw it in the blender with some ice and made a frosty like drink! The hubs and I both enjoyed it!

IMG_0916 I had this for breakfast this morning! YUM YUM YUM!  I added a little almond butter and the almonds pictured below! What a great breakfast!

The day my box arrived I had been working on my office re-do for HOURS, and so I broke into this right away! I love me some dark chocolate 🙂

I have used GU before.  Probably for ALL of my half marathons, some training sessions, and other random events.  I am a fan of this flavor! I will be using it soon on a long run in prep for my half in July 🙂

These little chips are pretty tasty.  I had to laugh because I received my Kona Kase the same day as this package, and it had the same Pop Corners in it! (Review coming soon!)IMG_0919This soda pop bottle made me laugh.  I have never seen a bottle like this in my life! Hehe.  I don’t really drink soda, but I did give this a try before I gave the rest to the hubs.  It had a nice fruity flavor.  The hubs really did enjoy it too!!
